By TIFFANY MESSER, Amarillo, Texas— What an amazing cookoff we had at the 36th Annual Tri-State Open Chili Championship held March 27, 2021 in Amarillo, Texas. We had 37 cooks on Saturday to support Multiple Charites to include: Make A Wish, Amarillo Elks Lodge, Khiva Shine and Children’s Heart Lane.

Congratulations and thank you to all the cooks who came from the Tri-State

It’s May 2021!This year seems to have

picked up speed recently. Cookoffs are being scheduled across the country and it seems on the outside that we are returning to some state of normalcy. Just a couple of things about upcoming deadlines. May 31 is the

deadline for rule change proposals to me and July 1 is the deadline for Board of Director applications.

Since January, I am getting to do some things I had planned on doing last year. I have been doing a lot of traveling to cookoffs around the country and it has been great getting to put faces with names. I wanted to personally thank these members for their support over this last year, answer any questions they had, listen to their suggestions and concerns and enjoy my time with them.

I started with the Taste of Blanchard Cook-off in Shreveport, Louisiana. I have wanted to go to this for some time now and finally got the chance. Janet Nash was a wonderful hostess and the cookoff was a lot of fun. So many events going on, things to see and I ended up doing a little shopping with local vendors.

The beginning of March found Michael and I on a plane to Tampa Bay for the Florida State Championship in Homosassa. I have to tell you, if you have not been to this cookoff, PUT IT ON YOUR SCHEDULE. We arrived on Thursday and took the cruise down the river on Friday. Not sure if I like rum runners or not…the jury is still out. It was beautiful and relaxing. The Sunshine State Pod members did a great job and we have plans to return.

I traveled to Amarillo for the Tri-State Open. I got to do a few touristy things…Cadillac Ranch, Big Texas restaurant…the old helium plant. The new venue was fantastic and Tiffany Messer and Tall In Texas Pod members did an amazing job. I was lucky enough to come away with a coveted

Throughout these trips I got to visit with cooks both new and established. It was interesting to listen to these cooks and their thoughts about our organization. The biggest takeaway from all these events was the number of people they brought out to enjoy the chili. People everywhere!

The first weekend of May I am traveling to Shelbyville, Indiana for the Indiana State Championship and to visit with cooks from that state and surrounding states as well. My last trip that is booked right now is to the Virginia State Championship at the end of June. I will be traveling with TICC Champ Kathryn Cavender and I know from experience that traveling with Kathryn is an epic adventure all unto itself.

I am holding off travel in July and August at this time because those months get a little busy for me and I need to retain what little sanity I have left. But then again, I may say “whatever” and head to one more cook-off before September. I want to thank everyone that helped ease the travel burden at these events. Your generosity and hospitality have been exceptional. Except for Tiffany Messer–she tried to sabotage me. But, we got that worked out.

Traveling to these different states and areas is eye opening. These cookoffs are events. These cookoffs are amazing social gatherings. These cookoffs are the reason we do what we do. Unfortunately, with the large number of cookoffs in my home state of Texas, it seems that the excitement and ease of these cookoffs has waned. It is wonderful getting to see everyone and spend time with them, but there is something missing here that is found in these other cook-offs. I cannot put my finger on it, but it is there.

As Michael says, DING! That means we are changing subjects.

the Executive Director position open. Every year we play the waiting game wondering who will step up and support and serve our organization. The Board revised a bylaw in March that now eases some restrictions on the board members in the area of meeting attendance. The past year taught us that we have to catch up with the times. Since directors are responsible for their owns expenses, we looked at the attendance at the Summer and Winter board meetings. In the past, it was mandatory for in person attendance to these meetings. We have revised that particular section. Board members may now choose to attend in person or attend virtually via video conferencing. Mandatory in-person attendance is still required for the Great Peppers’ Meeting and TICC. By allowing flexibility in attendance, we hope that out-of-

state members that would like to support CASI at this level would now consider it knowing that the financial burden for travel has been partially removed. There is a financial responsibility for CASI to add the video conferencing, but the cost is minimal compared to the individual costs.

Each year we also wonder if we are going to have the necessary number of candidates to fulfill the bylaw obligation of the organization. At this moment, we are in discussions about this very topic.

I think I have rambled on long enough now. The countdown clock to September continues and is constantly in the back of my mind. Be safe on the Trail and look forward to seeing you.

Texas Ladies State: Winners and TICC Qualifiers

Neither threat of rain, nor actual rain nor gusty winds could keep 152 ladies from registering to cook at Texas Ladies State Chili Championship. With 150 chilis judged, 5 ladies would be automatically qualified for TICC!

Arrivals began as Max Starcke Park opened early Thursday morning. By Thursday evening, camps were set up and folks were ready for hamburgers prepared by Jessie Waguespack, Jeannette Cardenas and Connie Collier. They didn’t disappoint! Many thanks to all for the side dishes.

Friday found more arrivals and many of the ladies going for their favorite lunch spots - The Power Plant Grill, Clear Springs Cafe, Cafe Sol, Burnt Bean and numerous other favorites. Rumor has it alcohol beverages were involved.

Registration began Friday afternoon, conducted by Rolland Pate and many volunteers, followed by a great turkey dinner served by The Bottom Feeders. The desserts were plentiful and oh, so good!!! Thanks to The Bottom Feeders for taking care of the ladies once again and all those who brought desserts.

To cap off the evening (and dance off that good food), we were entertained by Nigel “Taco” Delgado. Special thanks to Nigel for his great music Friday & Saturday nights.

Saturday morning broke cloudy and windy. How would we get along without the wind at TLS?!? Five young ladies began cooking early as Little Miss turn-in was noon. Thanks to Greg Lindsey and Rick Neely for volunteering to assist in this area. Also thanks to all those who brought goodie bags items for the young ladies - they were quite impressive.

At the end of the day, the results were: 5th - Jordan Cyrus, 4th - Kobie Talaveras, 3rd - Erin Zimmerman, 2nd - Scarlett Moore and crowned as Little Miss was Kalee Moore winning a trophy, crown, roses and stove. I heard one judge remark that it was some of the best chili he had in years and the scores were very close.

At 1:00, there was a long line of ladies turning in their chilis; many cameras were in evidence recording the event. At 1:30, it was ‘show time’!

The Silent Auction, run by Clyde Rogers and Bill Cook, with collections by Kim Hiley and Cindy Pittman, was a huge success! TLS appreciates the great donations.

Thank you, Donna Conrad and Dianne Stimson, for coordinating the 50/50. Sam L’Huillier was the big winner and really appreciated their efforts.

Kris Stewart again conducted an efficient judging operation. Thanks to the monitors, runners and tally team for their hard work! Thank you, Michael Mayorga, for being Head Show Judge and Keith Karaff for refereeing.

Many thanks to Jessie Waguespack, Beverly Maricle and Randy Pittman for coordinating and assisting set-up of vendors. Good things were heard about all the vendors.

The Calcutta was efficiently run by Kent Cavender, Greg Lindsey, Bill Cook, Eddie Byrom and others! I know the top 5 ladies were pleased.

Ron Barnes, the great emcee, started the announcements with Little Miss and proceeded to the ladies and showmanship.

Big shout out to my son Rayden Lamar Skinner who was the Junior chili cook champion this weekend. I couldn’t be prouder as a Father, Mayor, and citizen of Granite Shoals Texas.”

After several rounds of judging and many tie breakers, Richard Knight, Elgin, TX was declared the champion of the 51st CASI Texas Men’s Championship. Everyone was surprised to see Richard speechless as he accepted the sought after bronzed bull

trophy. Richard has named his trophy bull, “Lone Star”.

Everyone should mark their calendars for the last weekend in March 2022 and plan to attend as cooks, judges, or just spectators. Granite Shoals has announced planned improvements to make the event better, including the inclusion of their citywide Granite Fest event for 2022.

By the Texas Men’s State Committee–Granite Shoals, TX After multiple postponements and the final cancellation of the 51st CASI Men’s State Championship in 2020, the championship event finally was able to continue in 2021 at its new home in Granite Shoals, Texas on March 27, 2021. The new site had plenty of room to accommodate the many RV’s and day cookers, along with a covered area for judging and activities. Even enough room to totally separate the chili event and the BBQ participants.

The city of Granite Shoals opened their arms and showed the cooks some great hospitality. Thursday night before the event, the rains came and early Friday morning the city’s workers were there to redirect the water, sweep off water, and then fill in the low spots with fresh gravel. The RV’s and cooks kept rolling in

Friday and Friday night the cook’s enjoyed a band and a great fish fry.

But an event this size could not have been successful without the help of a lot of people. Craig Schlicke, Event Director, was on site Tuesday and with the help of Clyde Rogers, laid out electrical

hook-ups for 40+ RVs. Craig also supervised the volunteer kitchen staff in preparing four dinners, four breakfasts, and three lunches for the cooks and city helpers. Greg Lindsey, Assistant Event

Director, and Mandy Lindsey lead the registration (92 total registered cooks) and calcutta team. Greg’s company also donated the trophy mugs for Saturday and Sunday’s winners. Connie Collier was the team leader for the Tally Team. The Head Chili Judge, Brandy Rather, all the way from Hobbs, NM, lead a great team of monitors to run an efficient judging for 78 entries turned in. Richard Knight, Chief Margarita Mixer, mixed a total of 45 gallons of frozen margaritas over a 4-day period; which were enjoyed by all. The cooks also received a very nice engraved pocket knife and sponsor goodies in their goodie bag. Thanks to Becky Allen for assisting in obtaining these items for the cooks. And a GREAT BIG THANKS to all the volunteers who stepped in to fill the necessary spots to ensure a great event.

the covid delay, it is more and more important that the event promoters get their information into the CASI Event Director as early as possible. This will assist other event promoters as they begin to plan their event and possibly keep the overlap of events to a minimum. Also, as you put your event flyer onto the many

CASI social medias, be sure that the location is listed and a name for someone to contact is also listed. Just a reminder that the cutoff is the 15th of the month prior to the next month’s issue of the Trails.

The month of April was full of chili cookoffs in Texas. The 50th Texas Ladies State Chili Cook-off is in the books and my cookoff calendar is finally filling up even through summer months. It is so good to see large turnouts at cookoffs, everyone visiting and catching up and just being together.

It takes months of planning to run a cookoff and even with that sometimes the venue throws you

a curve ball. It also takes lots of volunteers to run a cookoff and keep it running throughout the weekend. As we get back in the swing of things please step up and volunteer. Volunteering doesn’t have to get in the way of cooking chili. It can be something so simple as loaning a table, chair or stove. We all want to have fun and taking some stress of the local pod by doing a few small things can be a huge help.

Saying that; a big thank you to everyone who helped me with the Junior Division at Houston Pod Cook-off. There were 6 juniors and 4 of them had never cooked a pot of chili. We always say the juniors are the future of CASI and this weekend Keith Karaff proved

it by having his “former juniors” judge the Juniors. Kate Cavender, April McDonald, Hanna Moore and Sara Reinhardt were all cooking at Houston Pod and stepped up to the challenge. There was a three-way tie for first and it took two taste offs to pick first, second and third.

I am so excited to receive your scholarship. It will definitely help my transition to college go smoothly.

Here’s a bit about me: I am the daughter of Bryan and Nicole Robinson of Garland, TX, graduating from Lakeview Centennial High School (LCHS). At LCHS, I was a chartering member of the Future Farmers of America, a State Championship qualifier in Gymnastics, an All American Cheerleader and Varsity Cheer Co-Captain. I completed my Associate of Science through the LCHS Collegiate Academy & Dallas College in December 2020. I am working an internship at UT Southwestern’s Animal Research Center. I plan to became a Doctor of Veterinary Medicine working in a medical research environment preventing future pandemics, finding solutions to medical ailments and improving the quality of life for animals and humans. In the fall, I will

attend North Carolina Agricultural and Technical State University in Greensboro, NC where I will study Laboratory Animal Science.

My name is Easton Sherfield. I am a high school senior in Marietta, Oklahoma and I will be attending Oklahoma State University (OSU) in the fall. I am pursuing my Bachelor’s in Health Sciences, a pre-med degree. When I graduate with my Bachelor’s Degree, I am going to apply to medical school at OSU to become an anesthesiologist.

I feel very blessed to receive the CASI Scholarship Award. This scholarship will help support me tremendously over the next four years as I pursue my degree. I am extremely thankful to the CASI Organization. I would like to help bridge the gaps between charitable organizations, community, and corporations by being a part of the CASI Organization in the near future. Volunteer work is very important to me and I want to be able to support someone in their future career, just like CASI is supporting me. I am sincerely grateful.

Majoring in chemistry will give me, the possibility of creating a future that I can share with those I love. This same quest for discovery led me to pursue a bachelor’s degree in chemistry at the University of Texas at Dallas with a deep concentration in pharmaceutical research as well as teaching. This education will allow me to one day inspire my classrooms with the same desire to seek the unknown, expand its horizons, and most importantly; set aside limitations.

Not only will the CASI Scholarship offer me a means to finance my education, but also with the means to further my passion. After completing my undergraduate degree, I will become a full-time missionary for 2 years in a foreign country, then come back to further my education by obtaining a master’s degree while teaching, and finally a doctorate in chemistry.

The April edition of the Terlingua Trails provided an interesting insight as to where we (CASI) stand right now. The TallyMaster’s report yielded only three cookoff results. However, the Upcoming Events contained eight pages of cookoff listings, with only a couple of

cancellations. I see this as a positive sign that we are turning the corner and can soon resume “normal” activities. I hesitate to use the term, normal, as things will not be the same as they used to be. We have gone through too much. But I will take this as a sign to get back in my lane and concentrate on cookoff related subjects in this article.

During the past year we developed some new practices for safely conducting cookoffs. Unfortunately, just as we started to implement them, everything got shut down so we don’t have a lot of experience to draw from. Some of these new procedures will eventually go away as they will no longer be needed, but some will remain because they worked and made sense.

I had a question recently concerning the pre-registration of cooks. The question came about because the Rules Book does not say you can. But, as I pointed out, the Rules Book does not say you can’t. Now, make no mistake, this is not to say that, in all cases, because the Rules Books does not say you can’t, you can. But in the case of pre-registration it is permissible.

One of the things we sought to do during the pandemic was to reduce the contact created by people standing in line to register for a cookoff. A version of the Official Chili Cook Entrants List that permits entering cooks name electronically has existed for some time. At first, we just suggested the cooks fill out an application form and

drop it off at the registrar. The registrar would then fill out the entrants list. This does require a computer and printer at the cookoff site, and takes a little time. But it did the job. In my local situation, we found that we could get cooks to commit to the cookoff ahead of time and have that list filled out in advance. This won’t work for all situations, but it is worth trying and modifying to fit yours. Think about it; at TICC we use a pre-printed registration form, why not do it for all cookoffs?

Remember, to meet the cookoff advertising requirement, upcoming cookoffs must be publicized in the Terlingua Trails in the month prior to the event OR be approved and appear on the official calendar 30 days prior to the date of the cookoff. The website always is the most current list of events.

You may enter your information at www.casichili.net or you can complete the Upcoming Cookoff Information form found in the Trails and send it by mail to me at CASI Events, 802 Horizon Dr., Murphy, TX 75094, or by email to [email protected].

If you have any questions you can reach me at 214-802-8194. Be sure to use the form online to submit or the form located in the Trails. The older versions do not have all the necessary information. Often email addresses, telephone numbers and addresses are left off and I must have them.
