I t ’s 2020 and wine is now grown across the world , in a l l c l imates .   People’s insat iable demand for fermented grapes grows every year, and where th is is more ever prevalent is in a l l parts of Asia .

Most are unaware of tonic’s or ig ins stemming from a l i t t le know addit ive ca l led ‘quin ine’ : a natura l ingredient found in the c inchona trees nat ive to Peru.   I ts pr imary use was to treat malar ia and is p laced on the WHO’s L ist of Essent ia l Medic ines .   Thus , a per fect medic ine to accompany tradesmen on long cross-ocean voyages .  

Tonic i tse l f was created in colonia l India where officers would mix sugar and soda to the quin ine, g iven i ts b i t terness , and presto – tonic water.   What d id they have as dai ly rat ion? Gin . Voi la – the g in & tonic was born.  

Ever not ice a ‘b lueish’ g low in your g in and tonic?   This is thanks to quin ine. We’ve now made you smarter.   Our creat ions pay homage to essent ia l t ropical ingredients , served in a large g in goblet (a ‘g inblet’ ! ) over ice.

Both the mule and ju lep have their fa i r share of h istory in the world of bartending , and many vary ing stor ies of how they came about .   The Moscow mule was a batt le of East and West coasts cockta i l supremacy, whi le the ju lep takes her i tage from the deep south of the US of A .   Ingredients here at smashed at incept ion re leas ing a l l essent ia l o i ls and ju ices , muddled further, and poured over with ice and spir i ts .   Here at Water Bar we grew a l i t t le t i red of the c lass ic moj i to and thought we might del ight you with our ’muleps’ offer ing instead.   And the cups… THE CUPS!   Copper and steel doing their super-conduct ive thang and keeping that dr ink oh so cold , and ice neat ly kept .
