INTRODUCTION

This photographic food atlas has been developed as an aid for evaluating the sizes of Kenyan adolescent’s portions in an urban setting. It serves as a resource for research-ers, dietitians, nutritionists and others with the estimation of adolescent’s food portion sizes. The photographic food atlas includes the most common food consumed by Ken-yan adolescents and this is based on data collected from Kenyan adolescents aged 9-14 years in Langata (Nairobi West) and Em-bakasi central (Kayole)sub counties in Nai-robi, representing a variety of low to middle socio-economic backgrounds. The portion sizes found in this photographic food atlas are based on weighed meals of these Kenyan adolescents.

A variety of foods have been included in this photographic food atlas for it to be use-ful in a variety of situations. The weights of foods that are not included in this atlas can also be estimated by comparing it to similar foods that are found in the atlas. The names of foods are in both English and Kiswahili. At the back of the book one can find a table of all foods with corresponding weights and page numbers.

This photographic food atlas has been de-veloped as a collaboration between the De-partment of Food, Nutrition and Dietetics of Kenyatta University (Kenya) and the Depart-ment of Food and Environmental Sciences of the University of Helsinki (Finland). It has been developed as part of the capacity-build-ing programme, The Kenya-Finland Educa-tion and Research Alliance (KENFIN-EDURA), funded by the Ministry for Foreign Affairs of Finland. A nutrition student from the Univer-sity of Helsinki stayed in Kenya to develop the atlas as part of her master’s thesis support-ed by several students from Kenyatta Univer-

sity also involved in the development of the atlas. Nutrition researchers in both Kenyat-ta University and the University of Helsin-ki have contributed with valuable insights and comments. The Kenyatta University Web Design Team carried out the photography and designed the layout of the atlas. The authors would like to thank the community nutritionists and community health volun-teers in Nairobi who facilitated the research that informed this photographic food atlas. Finally, the authors would also like to thank the children and their parents in Nairobi who welcomed the researchers into their homes and especially the mothers who cooked the meals seen in the pictures of this atlas.

Hii atlas ya picha ya vyakula imeandali-wa kama kifaa kinachoweza kutumiwa kwa minajili ya kutathmini ukubwa wa sehemu ya vyakula miongoni mwa vijana wa Kenya katika mazingira ya miji. Atlas hii inatarijiwa kutumikia kama rasilimali kwa watafiti,Dieti-cians ,nutritionsts na wegine kwa makadirio ya ukubwa wa sehemu ya chakula cha vijana. Hii atlas ya picha ya vyakula inajumuisha chakula cha kawaida kinachotumiwa na vija-na wa Kenya na hii inategemea data zilizoku-sanywa kutoka kwa vijana wa Kenya wenye umri wa miaka 9-14 katika kata ndogo za Kay-ole na Langata katika jiji la Nairobi, ikiwak-ilisha asili mbalimbali za kijamii na kiuchu-mi. Ukubwa wa sehemu zilizopatikana katika hii atlas ya picha ya chakula inatokana na kupimwa kwa uzito wa vyakula ya vijana hawa wa Kenya. Vyakula mbalimbali vimejumuishwa katika atlas hii ya picha ya chakula ili iwe na manufaa katika hali mbalimbali.Vipimo vya vyakula ambavyo havijumuishwa katika atlas hii pia vinaweza kulinganishwa na vyakula sawa ambavyo vinavyopatikana kwenye atlas hii. Majina ya vyakula yako katika Kiingereza na Kiswahili. Nyuma ya kitabu hiki unaweza pata meza ya vyakula vyote ikiwa na uzito wao pamoja na namba za ukurasa. Hii atlas ya picha ya chakula imeandaliwa kwa ush-irikiano kati ya Idara ya Food, Nutrition and Dietetics of Kenyatta University (Kenya) na idara ya Food and Environmental Sciences of the University of Helsinki (Finland).

Atlas hii imeandaliwa kama sehemu ya programu ya mpango wa kujenga uwezo wa elimu ya ngazi ya juu, The Kenya-Finland Ed-ucation and Research Alliance (KENFIN-EDU-RA), inayofadhiliwa na Wizara ya Mambo ya Nje ya Finland. Mwanafunzi wa Nutrition ku-toka Chuo Kikuu cha Helsinki alikaa nchini Kenya ili kuandaa atlas hii kama sehemu ya shahada ya uzamili wake akisaidiwa na wa-

nafunzi kadhaa kutoka Chuo Kikuu cha Ken-yatta walioshirikiana katika kuaanda atlas hii. Watafiti katika idara ya Nutrition katika Chuo Kikuu cha Kenyatta na katika Chuo Ki-kuu cha Helsinki wamechangia kwa ufaha-mu na maoni muhimu katika atlas hii.
