You use SAP Dairy Management by msg for SAP S/4HANA to:

● Optimize your core processes.● Implement the digital transformation.● Support structural changes and ensure the sustainability of these structural changes.● Plan your products and resources.● Manage planning and optimize the raw material input.● Create ratios for yield, gain and loss.● Perform activity-based costing.● Handle aging products.

3.1 Dairy Basic

3.1.1 Business Background

The Basic module provides functionalities that are relevant for the whole SAP Dairy Management by msg for SAP S/4HANA solution. The merging of ERP master data with Dairy-specific master data enables an industry-driven detailed view on various information. By enriching existing document information with the possibilities from the Dairy solution, the complexity specific to the food industry can be mapped in end-to-end processes, evaluated and comprehensively traced.

3.1.2 Key Features

Key Feature Use

Calculate Actual Quantity You use this feature to calculate the actual quantities of any production.

You can precisely determine the consumption of materials and their components, as well as the quantity of products produced and the share of components they contain.

Postprocess Documents You use this feature to re-classify material documents and change or enhance specific information manually.

The app displays both the SAP MM document information and the SAP Dairy Management document information.

Post Components You use this feature to post material documents of the actual component quantity, calculated in SAP Dairy Management, to SAP MM.

Enter Closing Stocks You use this feature to get a quick overview of the existing closing stocks for raw materials and their components. You can adjust the values of the raw materials and components.

Update Stocks You use this feature to update the stock in ERP with the stock which is maintained in the Enter Closing Stocks app.

The feature is used to create an inventory document, enter the stock count and post the differences.

Manage Production Quantities – Plan You use this feature to plan output quantities for the Run Activity-Based Costing – Production app.

The planning screen is based on SAP Analysis for Office.

Manage Process Frequencies You use this feature to plan process frequencies for non-pro­portional processes, such as day-dependent or batch-de­pendent processes, on resource and period level.

You use the frequencies to calculate the process element quantities and their detailed planned costs in the Run Activity-Based Costing – Production app.

The app runs in the environment of SAP Analysis for Office and enables user-specific settings.

Assign Cost Center Group to Plant You use this feature to determine which cost centers are in­cluded in a plant for the Run Activity-Based Costing – Production app.

All cost centers that are members of an assigned cost center group are taken into account in the costing run if the group is assigned to a plant.

Key Feature Use

Assign Internal Order Group to Plant You use this feature to determine which internal orders are included in a plant for the Run Activity-Based Costing – Production app.

All internal orders that are members of an assigned internal order group are taken into account in the costing run if the group is assigned to a plant.

Assign Cost Element Group to Company Code You use this feature to define which cost elements in a com­pany code are handled in a special way during the execution of the Activity-Based Costing run.

Balance Vendor Quantities – Raw Material Receipts You use this feature to get an overview of raw material deliv­eries and monitor each delivery. You can compare the mani­fest data of your vendor with your lab values and maintain a settled quantity in case of deviations.

Raw Material Where-Used List You use this feature to monitor the component consumption of products.

The app compares the actual consumption of two compo­nent types with the target value from the BOM.

3.2 Dairy Raw Material Planning

3.2.1 Business Background

Raw material planning covers the process of planning inbound raw material quantities and balancing them with the quantities required for production.

A big focus is put on the planning of components, which is the decisive criterion for a successful mid- to long-term raw material plan.

SAP Dairy Management by msg for SAP S/4HANA provides support in finding the adequate quantity to plan raw material quantities, to determine the available delivery days or to post the goods receipt directly to the given raw material delivery. Besides raw material quantities, component values too can be planned automatically.

3.2.2 Key Features

Key Feature Use

Plan Raw Material Deliveries You use this feature to plan incoming raw material quantities for each raw material delivery on the basis of the delivery’s historical data.

To balance excesses or shortages of raw material within in­ternal plants, you change the delivery plant of a raw material delivery (redirection).

You plan the share of a component within a raw material for each raw material delivery per day. You can use historical values or the bill of material for your plannings.

Plan Delivery Schedule You use this feature to plan the inbound raw material deliver­ies on a more detailed level. Besides quantities and delivery times per vendor, it is also possible to break down the plan­nings to haulers or single vehicles.

Plan Balance You use this feature to identify mismatches between in­bound and outbound raw material flows.

The plan balance is available in the following versions:

● Plan Balance – Raw Material● Plan Balance – Component● Short-Term Plan Balance – Raw Material

Plan/Actual Comparison – Raw Material Deliveries You use this feature to optimize your planning accuracy by comparing the planned raw material delivery quantities with the actual delivered quantities.

Minimum/Maximum Quantities per Vendor – Raw Material Deliveries

You use this feature to harmonize your planning with the agreements of your vendor.

3.3 Dairy Labor and Activity Efficiency

3.3.1 Business Background

The SAP Dairy Management by msg for SAP S/4HANA solution for Labor and Activity Efficiency enables a detailed personnel and machine analysis in the production environment.

Labor Efficiency comprehensively analyzes the efficiency of equipment and equipment processes. Based on Labor Efficiency, the solution provides Activity Efficiency, which analyzes the effectiveness of the deployed personnel.

Labor and Activity Efficiency is particularly valuable for internal cost controlling and enterprise cost planning and costing:

● With the ongoing monitoring and analysis of target and actual values, deviations can be identified and the corresponding processes optimized to achieve cost leadership in all process steps.

● Target performances can be stored for cost planning on the basis of actual data to obtain accurate and realistic cost planning.

● Costings can be based on valid actual performances and are therefore extremely accurate in this area. Across the entire food industry, it is often precisely this accurate costing that decides between success and failure on the market.

3.3.2 Key Features

Key Feature Use

Control Performance You use this feature to analyze the performance of any de­partment and resource, as well as to edit existing data.

Target values of resource hours and labor hours (display only) can be compared to actual values that may come from different systems.

You analyze target and actual times for each order or proc­ess.

The application runs in the environment of SAP Analysis for Office and enables user-specific settings

Manage Working Times You use this feature to analyze and edit the hours of any re­source.

You compare target values calculated on the basis of the manufacturing method with actual values imported from an external system.

Actual labor hours per cost center are distributed according to target labor hours per resource.

If incorrect data has been imported, you can adjust it man­ually.

The application runs in the environment of SAP Analysis for Office and enables user-specific settings.

Overall Equipment Efficiency (OEE) You use this feature to analyze the performance of any re­source.

It is possible to configure individual reports to examine the actual OEE and OEE factors. All data necessary to calculate the actual OEE can be shown.

Downtimes You use this feature to analyze downtimes of any resource.

Information about the reason for the downtime, frequency and duration of every downtime can be examined.

Key Feature Use

Facility Performance You use this feature to monitor the performance and effi-ciency of a work center or resource at a glance. Therefore, the key figures downtime rate and line performance are cal­culated for every occupancy category and process that was executed.

3.4 Dairy Yield, Gain & Loss

3.4.1 Business Background

The SAP Dairy Management by msg for SAP S/4HANA solution for Yield, Gain & Loss permits raw material and material controlling.

The quantity determination carried out here and the resulting reconciled quantity structure are the basis for the processes described below. They also provide the basis for the profitability analysis in the enhancement for product and distribution cost calculation.

Based on industry-specific factors, the following information is always mapped or supported:

● End-to-end mapping of the raw material flow, component calculation from receipt to finished product across all production stages.

● Component balancing, extended component calculation.● Provision of controlling key figures (loss factors, target/actual comparison and so on).● Raw material evaluations on weekly and monthly basis for authorities.● Department evaluation for target and actual data for raw material and components.

3.4.2 Key Features

Key Feature Use

Raw Material Balance – Analytics You use this feature to map the material flows in terms of quantities of raw material and components.

Raw material documents are managed to describe the mate­rial flows within the plant or between plants. You can identify direct raw material losses.

Key Feature Use

Raw Material Analysis – Without Stocks You use this function to obtain a detailed insight into the posted raw material documents according to their classifica-tion.

Incoming and outgoing raw materials are displayed grouped together so that you can analyze differences in the raw ma­terials and their components.

3.5 Dairy Activity-Based Costing

3.5.1 Business Background

You use this module to perform activity-based costing for all products manufactured in a plant.

Based on period-oriented finished product planning, typical quantities for the dairy industry are determined by exploding BOMs and manufacturing methods. Valuation by plan prices is possible in a highly flexible planning environment. All objects linked in this way automatically determine allocation tariffs that are allocated to materials at all levels.

Among other options, it is possible to differentiate between proportional and fixed costs, as well as activity-induced and activity-neutral process costs.

Based on actual production quantities, a unified calculation procedure allows the reassessment of actual overhead costs.

The Activity-Based Costing module accesses various standard data structures and data structures specific to the dairy industry. For example, a maintained costing variant and certain condition types are used as fully integrated standard elements. In plan calculation mode, the production version is determined in order to explode all material BOMs that have a manufacturing method. All dependent requirements are determined and calculated down to component level.

After all primary materials have been valuated, the materials produced in-house are valuated and allocated using a cost rollup across all levels. In actual manufacturing calculation mode, the system utilizes data on actual production quantities and actual overhead costs to provide a reassessment of actual performance.

3.5.2 Key Features

Key Feature Use

Run Activity-Based Costing You use this feature to execute Activity-Based Costing runs.

These consider all materials needed for the planned produc­tion quantities. They also take into account a detailed config-uration of industry-specific factor consumptions along the production processes in order to establish highly accurate product cost estimates.

Moreover, it is possible to execute Activity-Based Costing runs that utilize data on actual production quantities and ac­tual overhead costs to provide a reassessment of actual per­formance.

The explanatory power of the Activity-Based Costing results becomes visible in various highly dynamic reports.

Activity-Based Costing Reports You use this feature to analyze the results from Activity-Based Costing in highly dynamic reports that provide infor­mation on cost objects and cost allocations.

Transfer Product Cost Estimates You use this feature to transfer product cost estimates from a final Activity-Based Costing run to SAP CO-PC.

The app automatically transforms the product cost esti­mates into the standardized layout of a cost estimate with­out quantity structure.

Transfer Prices for Activity Types – Cost Centers You use this feature to transfer process cost rates from the results of Activity-Based Costing to activity type planning.

The app automatically transforms the process cost rates into the standardized layout of an activity type price plan­ning.

Post Manufacturing Costs – Actuals You use this feature to enrich and adjust actual cost of goods manufactured at process order level.

All actual overhead costs are allocated to process orders and cost centers or internal orders involved are credited.

It is efficiently possible to reverse previous postings.

3.6 Dairy Affinage

3.6.1 Business Background

Affinage is a toolset to manage products in stock with specific characteristic qualities for which there is no SAP standard functionality available or the provided functionality is not sufficient.

The production of cheese is a particular challenge in the dairy industry. Many types of cheese have to undergo an aging process before they can be sold as finished products. During this aging process, the cheese continuously loses weight, but at the same time gains value.

As the cheese is not weighed during affinage, the aging losses through dehydration are posted based on a target value in the master data. This leads to a stock (in kg) that is as realistic as possible. Aging losses are posted based on an inventory difference posting.

The costs of the maintenance processes incurred during affinage are stored as master data in the SAP Dairy Management by msg for SAP S/4HANA solution. As a result of this specification of when and how often a maintenance process should be carried out (target value), the costs are offset against the batch-dependent material price.

The posting of aging losses and the maintenance processes provide you with a realistic material price and stock in kilograms.

3.6.2 Key Features

Key Feature Use

Manage Aging Information You use this feature to define the parameters for the aging functions. The information is defined for each storage loca­tion of a product separately.

Aging Run You use this feature to start a program that handles periodi­cally aging materials in stock. Three options enables you to calculate the target loss for aging materials, restore their previous valuation price and clear remaining stocks for catch weigh materials in the parallel unit of measure. It is also pos­sible to choose a condition type, which keeps process costs tariffs.

Aging Reports You use this feature to get detailed information on your cur­rent aging batches.

With the Aging Stock Overview, you monitor the current stock of your aging products by age.

With the Aging Details Gain/Loss report, you see the current gain/loss of your aging batches and use this information to optimize your default values of aging loss, for example.

Key Feature Use

Aging Cockpit You use this feature to handle all tasks relating to aging in a cockpit. This overview provides access to all the jobs and re­ports concerning aging material. You can call the Master Data app and run the aging function from this overview page. At a minimum, you can get a detailed view on the results by using reports and KPIs.
