CSNA - School Nutrition Hero - Sacramento 2011 3

Welcome School Nutrition Heroes!

It is my pleasure to welcome you to Sacramento for the 59th Annual California School Nutrition Association Conference. Th e Conference Committee, with expert leadership from Conference Chair Lynnelle Grumbles, promises all the very best conference experience at this year’s conference, as you meet and network with an accomplished group of fellow school nutrition professionals from across the great state of California and beyond. Th e excellent Conference program, organized by President-Elect, Margan Holloway, refl ects our theme this year, “School Nutrition Heroes.” A diverse off ering of useful, interesting, and timely sessions are available to you. We invite you to use this Conference program booklet to assist in planning and organizing your schedule to maximize your Conference experi-ence. Conference Exhibits Chair Gale Hartzell has been working to provide you with the conve-nience of meeting with representatives from 300 companies under one roof. We encourage you to experience all there is to learn and enjoy at the Exhibitor Showcase, from food to equipment. Make sure that you evaluate all the product sampling, and new product intro-ductions that our vendors have graciously provided for us. We hope you take time to visit each and every exhibit, providing: a wealth of information on menu ideas and equipment innovations; answers to all your questions; and the latest in trends likely to infl uence the school nutrition market for years to come! One of the most valuable features of the CSNA Conference experience is the opportunity to network with the other school nutrition professionals in attendance. Make new friends as you get your Zumba workout on Saturday morning, while you visit the Silent Auction and Resource areas, or as you check your email at one of the Cyber-Cafes. Th e President’s Party on Saturday night will be fun as we see Super Heroes or Beatles fans dressed to the nines. On Sunday morning, please join us in celebrating CSNA member accomplishments at the Awards Brunch, where you also may pick up a specially chosen gift as our way of say-ing thank you for being a member of CSNA, and thank you for participating in this year’s conference. Th e entire Conference Committee joins me in welcoming you to CSNA’s Annual Confer-ence, and we hope that your participation will inspire you as we work together to improve the nutrition, health, and well-being of California’s children.

Th ank you again for all you do as “School Nutrition Heroes.”

Managing the Mystery: Correcting Myths & Sharing Best Practices of Food Allergy Mngmt 310Sherry Coleman Collins, RD, LD, Marketing & Communications Mgr, National Peanut BoardManaging food allergies in the school environment is an ongoing challenge, with more students than ever registering with special dietary restrictions. While it’s tempting to simply ban offending foods – how do we do this and still meet the Dietary Guidelines for Americans when milk and eggs are top allergens? Where can foodservice professionals fi nd reliable guidelines, best practices and recommendations about food allergies? How do we separate fact from fi ction, fear from fairness and implement evidence-based recommendations to keep kids safe and nutritious foods on the menu? These and other questions will be addressed in this session.
