We travel far up North for this issue! The perfect weather and friendly locals from the sitios of Stonehill, Botiw-tiw, and Sadjap (also known as

Stobosa) made Barangay Balili in La Trinindad, Benguet a perfect destination for this last quarter of the year. The postcard-worthy view of the Cordillera mountain range, balmy breeze and vast forests afforded us the comfort of both home and vacation.

Also featured is the sixth Lakbay Norte media tour that brought us to the rice granary center that is Nueva Ecija and the island hopping destinations of Cagayan Valley. Both places opened windows of exciting agricultural landscapes, rich history and culture and unparalleled peace that only the North offers. Truly, this experiential farm tour made us appreciate North Luzon’s bounty even more.

We hope that you will have as much pleasure reading this issue as we enjoyed putting all the B.E.S.T. (Buys, Eats, Stays, Tries) together, from this part of the North to you, our dear readers.

Happy trip up north!

A guide to an epic journey to the Philippines’ Northeast

Words by GRETCHEN FILART DUBLIN / Images by MARTIN SAN DIEGO

CAGAYAN

A trip to Cagayan is not for the fainthearted. Located roughly 500 kilometers from the Philippine capital, this massive coastal province in Northeastern Luzon entails a butt-numbing 10 to

12-bus ride, plus an additional hour or two to reach its islands off coast - a journey that is no less nerve-wracking.

Travelers sometimes choose not to visit the province due to distance, but for the brave, coming here proves to be one epic adventure filled with gastronomical delights, natural and man-made wonders and a rich history that make the long travel time truly worth it.

Experience

MAPURAO BEACH Located in San Vicente, Jerolynda’s White Beach Resort and Restaurant can be visited on the way to Anguib Beach and Palaui Island or vice-versa. It offers white sand and clear, kid-friendly water. Boats pass by a lush mangrove forest to and from the beach. On site, you will be served toothsome seafood dishes that are cooked straight from sea to table.

ANGUIB BEACH Anguib Beach’s cream-colored, agoho-lined shores span around two kilometers long, with one tip ending in a forested hill. Guests can enjoy glamping, swimming, or just lazing around in a hammock by the trees. The beach is accessible after a one-hour boat ride from the port, depending on water conditions.

PUNTA VERDEAddress: Palaui Island, Sta. Ana, CagayanResting on Palaui Island’s southeastern tip, Punta Verde serves as a boat dock and camping ground for visitors who would like to stay the night. From Punta Verde, the nearly six-kilometer hike to Cape Engano takes around three to four hours. There is also a waterfall nearby.

PALAUI ISLAND Palaui Island is arguably the most famous of Cagayan’s attractions - and for good reason. Entailing a two-hour boat ride through the Philippine Sea’s tempestuous waters, this remote 7,145-hectare island in the Philippines’ extreme northeast boasts several hiking trails through rich forests, including one that leads to an 18th -century lighthouse on a hill. Considered a National Marine Reserve, the water surrounding the island is home to 21 fish species and 50 hectares of unspoiled coral reef.

It is also home to several species of wood, shrubs and other endemic flora and migratory birds. Because of its raw beauty, the island has served as a location for the TV series Survivor and is one of CNN’s 100 Best Beaches Around the World.

CAPE ENGANO LIGHTHOUSEAddress: Cape Engano, Palaui Island, Sta. Ana, CagayanOpposite Punta Verde, Cape Engaño Lighthouse - or Faro de Cabo Engaño - sits on the southwest tip of Palaui Island, accessible after a scenic 15-minute hike up a 229-step hill. Built in 1892, the lighthouse is an acclaimed National Cultural Treasure. From the lighthouse, guests enjoy a bird’s eye view of the island’s westerly cove, Dos Hermanas Islands and Babuyan Island north of the cove.

LYCEUM OF APARRI Lyceum of Aparri is considered one of the most competitive institutions in the entire Cagayan Valley.

CAGAYAN STATE UNIVERSITY FARMApart from being the “largest station institution of higher learning in the Cagayan Valley Region”, Cagayan State University (CSU) is also recognized for its extensive farm in Piat. At the CSU Farm, visitors can mingle with friendly sheep and goats and learn how to milk cows firsthand.

CAGAYAN PROVINCIAL CAPITOL Cagayan’s provincial capitol is home to the provincial museum, capitol building and administrative seat.

BUNTUN BRIDGEThe Philippines’ second longest bridge (after San Juanico Bridge), Buntun Bridge spans 1.1 kilometers and serves as the gateway to Tuguegarao. Made of 240-foot Japanese steel, it connects Tuguegarao to Apayao. Built in the 60s over the mighty Cagayan River, the bridge offers an unobstructed vista of the country’s largest river basin.

MAGAPIT BRIDGELike Buntun Bridge, the Magapit Suspension Bridge runs across the Cagayan River. Also called the Golden Gate of Cagayan, it links the river’s eastern and western side.

POTTERY MAKING VILLAGEBarangay Atulu in Iguig is known for its beautiful churches and pottery crafted by local artisans, the Itawis. They barehandedly shape vases, garden wares and ornate pieces using clay from the Cagayan River and simple implements such as wood blocks, kilns, carabao dung (for fuel), and makeshift stoves.

CAGAYAN MUSEUMTake a trip back into time at the Cagayan Provincial Museum and Historical Research Center. Situated within the provincial capitol and about five kilometers from the city center, the museum houses local artifacts, heirloom pieces and wares from the valley, as well as fossils of animals that once inhabited the region. It also details the discovery of the Callao Man, whose 67,000-year old remains were discovered in Callao Cave in Peñablanca.

BASILICA MINORE DE NUESTRA SENORA DE PIAT (OUR LADY OF PIAT CHURCH)Named the “Pilgrimage Center of the North”, Piat Church is one of 12 minor basilicas in the country and features a beautiful four-level belfry. It houses a 407-year old Black Virgin Mary that is said to be miraculous. Also called Yena Tam Ngamin (The Mother of Us All) and Apo Baket (The Venerable Matriarch), the church’s icon was transported in the 1600s from Macau.

ST. PETER METROPOLITAN CATHEDRAL PARISH (TUGUEGARAO CATHEDRAL)Dating back to the 18th century, the Tuguegarao Cathedral is known for its “Cagayan-style” pediment, which is distinctly crested like many other churches in Cagayan Valley. This baroque church is one of the largest in the region and serves as the seat of the Roman Catholic Archdiocese of Tuguegarao.

ST. PHILOMENE CHURCHAddress: Maharlika Highway, Alcala, CagayanContact number: (078) 848 1917Twenty meters long and 12.5 meters high, St. Philomene Church is Tuguegarao’s biggest brick church and the Philippines’ widest. NUEVA ECIJAMore than rice fields

I will be dead honest. Prior to the Lakbay Norte 6 trip, whenever someone mentioned Nueva Ecija as a weekend destination, the first thing that came to mind was, “Nueva Ecija? Isn't it just rice

fields and nothing else?”

During our two-day exploration of the province, I learned that one really shouldn't judge from what is often heard, but keep an open eye for new discoveries. Here are some for starters.

PMP PARADISE FARM AND RESORTFancy lean, all-organic fare? Head to PMP Paradise Farm and Resort in General Tinio. A passion project from a retired major, this sprawling farm offers healthy, homemade dishes created with fresh herbs and poultry raised in the farm itself. Among its most notable dishes are sinigang salad, sliced fruits and vegetables topped with salted egg. Guests also get to witness how soups are made using homegrown alibangbang.

CLSU-CHS-’S DAERRY’S TILAPIA ICE CREAMThink tilapia for dessert is weird? Think again. At Central Luzon State University, a professor in the College of Home Science and Industry Department has found a way to transform this popular fish into something novel: ice cream. Tilapia flakes are mixed with carabao milk, all-purpose cream, walnut tidbits, condensed milk, and cubed cheese, then sandwiched between two crackers.

THEA’S CATERINGChicken just became more interesting as we chowed down a local cuisine called tiniim na manok at Minalungao National Park. This unique dish, cooked by renowned Novo Ecijano caterer Thea’s Catering, is slow-cooked in a thick pineapple sauce with herbs. Other specialty items worth noting are ensaladang labanos, and papaitan, which uses goat innards and alibangbang.

MILKA KREMJust a few minutes away from CLSU, along Maharlika Highway, you will find Milka Krem. This massive milk hub sells milk and bath products (such as kala soap) developed by the Philippine Carabao Institute. The most famous of Milka Krem’s creations is its bottled carabao milk, which is used in rice milk, fruit-flavored yogurt drinks, coffee, and chocolate milk. Take some home, along with pastillas and silvanas or enjoy them with tea, smoothies and coffee at Milka Krem’s in-house cafe.

CHANOS CHANOSLove fish? Then you’ll surely love Chanos chanos. Inspired by the scientific name of milkfish – one of Nueva Ecija’s top produce - this modest, enterpreneur-run stall in Muñoz sells affordable and hearty dishes with milkfish as the main ingredient. Among its top sellers are rellenong bangus and sweet Pinoy-style spaghetti with milkfish meat, a healthy alternative if you are cutting down on red meat.

CAFFE LA TEAFor the young (and the young at heart), there’s Caffe La Tea at the ground floor of Robinson’s Townville Cabanatuan. Students and yuppies flock to this artsy cafe for its delicious frappes and hot brews. Other notable menu items include mozzarella sticks and yummy tofu swathed in sinful sauce. If you’re feeling a little more adventurous, try Caffe La Tea’s Chiz Buco Lumpia – a deep-fried roll of shredded coconuts, ham, vegetables, and cheese.

PUNO’S ICE CREAM AND SHERBETAddress: Various branches in Cabanat-uan CityContact number: (044) 4648694

Puno’s Ice Cream is available in fruit salad, strawberry, corn queso, cookies and cream, ube cheese, chocolate with cashew, and langka cheese cashew flavors – all of which are worth dipping into. It’s light and milky in taste. A family-owned business since the 60s, Puno’s has transformed into a household name, delivering products to 24 stores across the province. If you’re from Manila, you can take home a pint or gallon. Puno’s ice cream can last for hours without melting when stored inside a cooler.

culture that Nueva Ecija offers. Savor Novo Ecijano culinary wonders with these eight food purveyors.

MALIGCONGRICE TERRACES

A Walk in the Clouds

Words by KARA SANTOS / Images by MARTIN SAN DIEGO

The trek to Maligcong Rice Terraces starts before the break of dawn. The rest of the town still sleeps as we make our way up Mt. Kupapey with our guide Tina and a pack of friendly guide dogs. Maku and Kunig,

named after the area “Makunig” belong to Suzette, who runs a homestay where we bunked for the night. Her neighbors dogs Misty, Friday and Tiny join the party.

The hike is made more fun by the company of our canine guides, as they weave in between our legs, jostling to overtake humans on the trails and the narrow paths between terraces. They stop whenever our group stops to rest or take photos. When we resume hiking, they shake off the morning mist from their fur and happily run ahead.

18 NorthBound

Maligcong is a small town with less than 500 households in Bontoc, Mountain Province. Since 2014, hikers have started trickling in to hike up Mt. Kupapey, to see the well-preserved and unspoiled mountain and its rice terraces firsthand. The hike up takes 45 minutes or so, depending on one’s skill level. Traversing through the terraces on the way back down takes a little longer, but provides a different perspective and spectacular view. The guide dogs make it look easy as they go on ahead.

The hike is the easy part. Getting there is a different story. It takes about six hours to get from Manila to Baguio and another five hours from Baguio to Bontoc. The last stretch to Maligcong passes a steep winding mountain roads best left to expert drivers familiar with the terrain. But for those looking for a place that’s raw, pure and uncommercialized, Maligcong is paradise.

It’s hard not to fall in love with the place. A part of you wants to keep the place a secret getaway for you to keep coming back to. Another part of you wants to share its beauty with the world. It’s a place where you can disconnect with technology and reconnect with the beauty of the world around you.

While sipping a cup of mountain tea in the veranda overlooking the terraces, I chat with Suzette. Like other residents, she is wary of the dangers of mass tourism seen in other areas which quickly rose to popularity.

The number of hikers per day is currently limited by the accommodations the town has to offer. At present, Suzette is one of three households offering rooms for rent. Camping is not allowed

on the grounds.

In her homestay, a sign reminds all guests of lights out at 9:00 pm. But she tells me there have already been some tourists who arrive with more people than expected, and ignore the rules. They now get an average of 30 hikers during weekends in the peak season of November to April. Since we visited on a weekday, we have the whole place to ourselves.

It’s quiet and peaceful as we reach the summit. The dogs curl up by a tree in the clearing and take a nap by our feet, satisfied with their duty of escorting us to their playground.

A sea of clouds hovers above the mountains. The glassy reflection of the terraces slowly reveals itself as the sun breaks through the clouds. It’s a beautiful morning.

BANAUE RICE TERRACESThe most famous of the Philippines’ rice terraces, the Banaue Rice Terraces in Ifugao are located approximately 1500 meters (5000 feet) above sea level. Contrary to popular belief, the Banaue Rice Terraces are not a UNESCO World Heritage Site. However, they have been declared by the Philippine government as a National Cultural Treasure. Look out for the traditional wooden bikes in souvenir shops near the viewdecks.

THE RICE TERRACES OF THE PHILIPPINE CORDILLERASThe first property to be included in the cultural landscape category of the UNESCO World Heritage List, the inscription includes five sites: the Batad Rice Terraces, Bangaan Rice Terraces (both in Banaue), Mayoyao Rice Terraces, Hungduan Rice Terraces, and Nagacadan Rice Terraces in Kiangan. The beautifully contoured ampitheater-like Batad Rice Terraces is recommended for strong hikers, as getting here requires a 1.5 hour hike through the mountain trails.

HIWANG NATIVE VILLAGEHiwang Native Village in Gohang provides a panoramic view of the entire region, overlooking the Banaue and Hapao valleys. The site contains a museum with a large collection of antique artifacts and several native Ifugao houses.

BAYYO RICE TERRACESBayyo Rice Terraces is located in Brgy. Bayyo, one of 16 barangays in Bontoc, Mountain Province. This is one of the more easily accessible rice terraces, located only 30 to 40 minutes from the Poblacion. There is an eleveated viewdeck right along the highway where you can get a good view of cluster of houses next to lush green terraces.

With the championship, NLEX-SCTEX has been ushered into the Hall of Fame of Baguio City’s Panagbenga Festival Grand Float Competition. Earlier, it had won the two consecutive titles since 2015. NLEX Corporation is a staunch supporter of the Panagbenga Festival since 2010. Themed as “Beauty of the Wild,” the NLEX-SCTEX float captured this year’s Panagbenga theme, ‘Inspired by Beauty, Nurtured by Nature,’ with a safari-inspired design.

NLEX-SCTEX first Ultimate Frisbee foray was a huge success as more

than 250 athletes from Metro Manila, Pampanga and nearby provinces flocked to the Clark parade grounds to join the NLEX-SCTEX Clark Ligang Amihan. The action was hot on the field as four-time National Champions UP Diliman Sunken Pleasure swept the competition en route to the taking the top plum. Tandang Sora Pleasure (TSP) from Quezon City took second place while local club Pampanga Chicks & Chongs won third place.

Ultimate Liga Pilipinas Inc (ULPI) President Coach Peng Manlapaz

said the success of the event was mainly due to the support given by the Clark Development Corporation, the City of Angeles and NLEX-SCTEX! He also said that the Philippines has had huge success with this sport in the international stage and soon, it will be included in the Olympics.

The Ultimate Frisbee teams of the Philippines cannot wait to join the next events of ULPI especially with the convenient ride through the NLEX-SCTEX. Watch out for the next NLEX-SCTEX Clark Mekeni Cup at the Clark parade grounds!

“Take a trip soon and make sure it’s off to the North.”

Mention Cordillera and most people will think of the highly urbanized city of Baguio. The “City of Pines”, which serves

as the regional center, has long been a favorite summer getaway for local and international tourists because of its cooler climate. But the Cordillera Administrative Region (CAR) comprised of six provinces - Abra, Apayao, Benguet, Ifugao, Kalinga and Mountain Province - has a lot more to offer.

As the only landlocked and least densely populated region in the Philippines, Cordillera is ripe for scenic road trips and explorations. Adventurers who like taking long drives through mountain roads can go off the grid, wake up to cooler weather and enjoy spectacular views in the highlands.

In this issue of Northbound, we take a look at some of the unique attractions in three of the region’s provinces: Benguet, Ifugao and Mountain Province, which are all conveniently accessible by land travel from Baguio City.

A new attraction that has sparked interest through social media is Stobosa, a community of colorful houses in La Trinidad. The project was inspired by Brazil’s favelas, which aims to turn public urban spaces into inspiring artwork of monumental size. Residents from 200 homes from sitios Stonehill, Botiw-tiw and Sadjap volunteered to paint their

houses following a mural design conceptualized by Tam-Awan Village artists.

If you’ve already tried strawberry picking in La Trinidad, how about walking among flower fields and vegetable gardens at King Louis Flower Farm and Atok Highland Gardens? Get a high at these farms located 1,200 meters above sea level in the La Trinidad Valley to 2,000 meters above sea level in Atok.

Learn more about the rich culture and history of the indigenous peoples of the Cordillera at the Bontoc Museum. Be sure to visit the mini-Bontoc Village with several structures inspired by traditional Ifugao homes with their peaked roofs, wood-and-stone facades and open-plan interiors.

The Cordillera Region is also associated with rice terraces, those idyllic winding fields carved into the mountainsides. The Banaue Rice Terraces, which is featured prominently in Philippine currency banknotes, is the most well-known. Beyond Banaue, there are other equally beautiful rice terraces, including the majestic Maligcong Rice Terraces in Mountain Province, our cover feature.

Wherever you choose to explore in the Philippine highlands, you will leave refreshed, rejuvenated and no doubt eager for your next trip. Onwards to the North.

Before you head home, take a memento of the Cordillera region with you. Here are some of Northbound’s best souvenir picks.

WOVEN PRODUCTS FROM EASTER WEAVINGWith over 100 years of weaving heritage, Easter Weaving in Baguio City is the place to buy woven products and textiles. These fabrics have been transformed into useful modern items like pillowcases, wall hangings and table runners and are also used as design elements in formal wear, bags and even neckties. You can see weavers in action at the lower floor of the center.

COFFEE, VEGETABLES AND FRUITSNo trip to Baguio would be complete without passing by the Baguio City market for staple souvenirs such as coffee beans, strawberries and fresh vegetables. Your entry point should be the Hangar market in the southeastern side, which gives you access to stalls selling fresh produce like romaine lettuce, kale, cherry tomatoes and shitake mushrooms, at a fraction of the cost of their prices in Manila markets.

BAGUIO CRAFT BREWERY BEERNot a fan of wine? How about some unique beer instead. Grab a 6-pack of assorted beers infused with local ingredients like Strawberry Beer from Baguio Craft Brewery. One can costs P180 while a pack of six goes for P999.

WOOD CARVINGSThe age-old wood carving industry is alive and well in Baguio, with numerous souvenir stalls selling wooden products including Baguio’s (in)famous “barrel man.” Stop by one of the family-owned stores in Woodcarver’s Village along Asin Road, en route to BenCab Museum, for wood crafts and furniture.

NATIVE WINEBugnay is a semi-sweet tasting wine made from native wild berries found in Mountain Province. Strawberry wine, which uses strawberries grown in farms in La Trinidad, are popular as souvenirs as well.

Go on an exotic culinary adventure by sampling native dishes from the Cordillera Region.

PINUNEGPinuneg are sauteed Ibaloi blood sausages. This dish is exclusive to the Benguet Kankanaey and is typically served when a pig was butchered during a ritual or ceremony. If you are a fan of dinuguan, you will like the sausage’s thick and earthy texture.

PAK-PAKO To balance out all the strong meaty flavors, be sure to order some vegetables for your side dishes. Pak-pako, river-fern salad with tomato and cucumber mized in vinaigrette, is a fiber-rich dish that will keep you feeling full and lessen your food cravings.

PINIKIPIKANThis Igorot chicken soup dish, that is often likened to tinola, is traditionally prepared by beating a live chicken with a stick to draw out the meat’s flavor prior to cooking. The preparation is rooted in native rituals of reading signals from gods to determine one’s course of action.

KINUDAYThe practice of smoking meat (kinuday) has long been practiced by Ibaloi families in the region, resulting in meats with very strong, salty flavors. Variants include kinuday jen baha (steamed smoked beef meat), kinuday jen baboy (stir-fried pork meat), and kinuday jen manok (stir-fried smoked chicken meat).

ETAGEtag is a general term for the preservation of meat in the Cordilleras. There are different variants of etag including sun-dried etag, where meat is rubbed with salt before being exposed to sunlight, and smoked etag, where it is cured and aged underground in an earthen jar.

DINAKDAKANDinakdakan is a traditional dish that makes use of charred pork ear, tongue and snout chopped into small pieces, dressed with pig’s brain and other spices like mayonnaise, onions, salt and pepper to taste. Similar to sisig, this tasty dish is usually served as an appetizer.

FARMER’S DAUGHTER RESTAURANTOpened in 2015, this homey restaurant offers Cordilleran cuisine, which is well-known for its fresh vegetables, smoked meats and native wines. Farmer’s Daughter is located just beside Tam-awan Village, a bit off from the main thoroughfare of Baguio City center, making this a dining destination away from the crowds.

Craft Beer Tasting at Baguio Craft Brewery

While most tourists heading up to the Baguio usually look forward to sipping brewed coffee or strawberry taho, beer lovers will be happy to find a craft beer haven in the City of Pines.

Baguio Craft Brewery is a microbrewery that serves a wide range of fresh, handcrafted beers on tap with some variants brewed using local ingredients like strawberries, wild honey and orange zest.

Their flagship line of Mythic Beers was inspired and named after the Five Realms of Ifugao mythology, including Pugaw India Pale Ale, Dalom Brown Ale, Daya Lager, Lagud Strawberry Beer, and Kabunyan Wheat Beer. Other beers worth trying include Zigzagger (a triple-hopped double IPA with 10% ABV), Rolling Fog (German Hefeweizen), Keywheat (kiwi beer) and RIPE (passion fruit beer), to name a few.

The Tasting Room at Baguio Craft Brewery is located at the RKC Building, 120 Marcos Highway, Km 4 (Ben Palispis Highway) Baguio City, Benguet, Philippines.

Room also serves delicious appetizers and beer parings including BCB Renowned Ribs Platter (P479 for solo; P1150 for family size) and Stout Isaw (P280), which is marinated in their signature beers.

Formally opened in 2014, this hip bar along the Baguio City highway can get quite crowded during weekends and holidays with expats and tourists all eager to sample local brews. Because of their success, they opened a second branch in Harbor Point, Subic and are set to open a third branch in Cebu.

A recent addition to their main branch is Speakeasy by BCB, a relaxed and sophisticated hidden bar reminiscent of the vintage atmosphere and clandestine glamor of the 1920s prohibition era. As the first speakeasy in Baguio City, this offers an intimate space where discerning clients can enjoy quality whiskeys and wines. Now you just have to figure out how to get in.
