The year of 2016 was an exciting and an eventful year for us here in Brigade Hospitality.

We added two new properties to our inventory last year with the launch of Grand Mercure

Mysuru and Signature Club Resort at Brigade Orchards. The response has been encouraging and we are delighted with the excellent feedback that has been coming in from our guests who have stayed at these properties. It is encouraging to also see several well-known corporate houses patronising our two hotels. Signature Club Resort being just an hour away from the city, is becoming a major attraction for corporate houses, for their team building events, brain-storming sessions and even their annual sports days.

Our Signature Club Resort at Brigade Orchards played host for the first time, to a grand New Year Eve event that was very well received by our guests. We propose to make this a much bigger event from next time.

We are happy to have continued with our winning streak, with our HIGH Ultra Lounge and Sheraton Grand Bangalore winning awards at the Times Food & Nightlife Awards 2016. HIGH Ultra Lounge won the ‘Best Lounge Bar’ award and Sheraton Grand won the ‘Best Sunday Brunch’ award.

It gives us pleasure to also announce that our 202 keys, Holiday Inn Chennai, OMR IT Expressway is due to shortly open and we will look forward to seeing you there. This will soon be followed with the launch, later this year, of our 274 keys - Holiday Inn Express & Suites Bengaluru, Race Course.

The Baking Company continues to also grow, with the addition of our new TBC Lounge at Brigade Omega, Banashankari.

As we look forward to another dynamic year, we thank you for making the year 2016 a memorable one. We feel privileged to have your continued patronage.

Regent Club this year extended its festive celebration to its fans on Social Media! We asked patrons to share with us their ‘Ideal Christmas Moment’ in minimalistic way. Mr. Anil Kumar won the contest and a brunch for two at Regent Club. The winning reply that took us to the nostalgic path of traditional festive celebration with family and friends was “Cake mixing and humming the carol with Santa”

The Woodrose Club rang in the New Year with the very trendy theme of ‘Bollywood Retro’. The evening was hosted by Emcee Shabbeer along with music by DJ Mobi. The guests were taken on a nostalgic journey of Bollywood with Navarasa Natyalaya exhibiting performances from various eras of Bollywood. To add to the drama was Ram Kumar who enthralled the audience with his stunts with fire.

Galaxy Club welcomed the New Year in a grand way with an elaborate buffet and fun activities setup for the patrons and members. The event began at 8:00pm with Emcee Akshata Gururaj hosting the show and entertaining the guests with various activities accompanied by music, open dance floor and lots of fun!

MLR Convention Centre, Whitefield saw the brand ambassadors of the Indian comic world! On 17th September Kenny Sebastian, Kanan Gill, Naveen Richard, Sundeep Rao and Praveen Kumar took the stage and gave the audience two hours of laughter! Each comedian shared various stories about different scenarios that they are currently faced with. The event was to raise funds for underprivileged children and provide educational facilities. Ensuring the happy faces were not limited to the auditorium that witnessed roars of laughter.

Karthik Kumar performed his 2nd stand-up comedy special called ‘Second Decoction’ at MLR Convention Centre, JP Nagar on 21st January. His show talked about his middle class upbringing that was filled with hopes, dreams and life savings. Karthik is a talented comedian and his stand ups relate to daily life instances that are put into his style. His show has had packed houses in Chennai, Coimbatore, Mumbai, Hyderabad and Singapore. He’s also done shows in UK and America. The Bangalore crowd at MLR Convention Centre, JP Nagar was thrilled to have him.

Read on to know the story behind Dr. Priya’s unsung hero – her dad!

“It is said that -Behind every successful woman, there is a man. I would modify that slightly and quote- ‘Behind every successful moment and many unpleasant ones, since childhood, if there was a rock to lean back on; it would be my dad!’Today, I see so many men being good fathers, but back then, when men had to struggle to earn their living, there was very little time to spend at home. But Dad spent whatever precious moments he had with my brother and me. He sang - Surangani..and lulled me to sleep, comforted me when I got the slightest scratch and sided with me when my mom or brother were annoyed with me. He even sat late in the night after his shift and helped with my homework.He was a whiz at Maths and made numbers seem easy.He was a good son and is a good brother still to my aunts. He keeps in touch with his aunts and uncles who are in their 80 s and 90s.As I got older, he took great pleasure in my academic pursuits and encouraged me to become a doctor.Not only is Dad a good father, but intrinsically a good person as well.I have watched him give jobs and help countless family members and friends throughout, many of whom have long since forgotten him now that he is retired.Now that I am a doctor, I am happy that I can keep an eye on him as he gets older. Still, even today, before any major decision, I ask my dad for his advice.Dad is nearly 70, still an active member of our Brigade community. He loves playing bridge.I write this as an ode to him and all our dads who have given us unforgettable memories...some which we can pass on to our own kids. Thank you, Dad! You are my hero!”

His Holiness, Dalai Lama - the Tibetan Spiritual leader, was in Mysore to attend the 97th convocation of the University of Mysore and deliver the convocation address. For his two day visit to the city, The Dalai Lama was hosted at the Hotel Grand Mercure Mysuru on New Sayyaji Rao Road. The Tibetans dressed in their traditional attire, Chupa – were gathered in numbers to get a glimpse of their leader. The Dalai Lama, who is the recipient of the Nobel Prize for Peace (1989) was conferred with an Honorary degree along with Pramoda Devi Wadiyar during the convocation at the University of Mysore.

Signature Club Resort, a unit of BCV Developers and managed by Brigade Hospitality hosted its first ever New Year’s Eve party. The theme was ‘Back To The Future’. The décor for the venue was futuristic with neon lights setup around the Club Resort. Guests entered through a high powered laser tunnel that opened up into the Silver Oak Lawns which was where the main stage, dance floor and dinner for the evening was setup. The evening started off with Emcee Ankit Piplani who addressed the gathering. Emcee Ankit who is hailed as ‘The Big A’ by Mr. Amitabh Bachchan. He started off the festivities by interacting and having a few ice breaking sessions with the audience. To dazzle and wow the audience there were scintillating performances by Team 5678. They enthralled the audience with different types of dance performances -Indian, Samba and a Laser & LED act. DJ Goapu Da Groove with his music also kept the crowd grooving. There was a lovely buffet spread with a variety of dishes for guests to feast on. The cuisines for the night were – Indian, Continental and Oriental. The live stations served Chaats, Dosas, Hot Jalebis and Pasta. There was a well stocked bar that kept everyone in a merry mood. When the clock struck 12 there was a burst of confetti on the stage with cheers and roars of everyone wishing each other a Happy New Year!

Eggless Mango Mousse Cake

A) For the cake

• refined flour(maida)-1cup• sugar-1cup• curds-1cup• cocoa powder-3/4cup• vegetable oil-1/2cup• vanilla escence-1tsp• baking powder-1tsp • baking soda-1/2 tsp

B) For the mousse

• mango pulp-2cups• whipping cream-400ml• powdered sugar-1/2cup• gelatin/agar agar-10g

C) For garnishing

• chopped mangoes

Procedure:

A) Cake• Mix maida, cocoa powder,baking powder and soda and sift them

together.• In another bowl add curd and sugar and mix nicely until sugar

dissolves.• To this add vanilla escence and the dry ingredient mixture. Mix

it nicely.• Then add oil to it.• Grease a cake mould with oil or butter and add the batter to it.• Bake the cake in a pre heated microwave oven for 8-10minutes.

B) Mousse• In a cold bowl take chilled whipping cream and whip it till it

forms stiff peaks. Add powdered sugar and 1 cup is mango pulp and mix thoroughly.

• Add 5g of gelatin/agar agar to 1tbsp water and microwave it for 30 until it dissolves.

• Add the gelatin mixture to the cream mixture• To another 1cup of mango pulp, add another 5g of dissolved

gelatin and mix to make the glaze.

Assembly:• In a springform pan, place the cake and add the mango mousse

mixture to it.• freeze it for about 4hrs• Add the mango glaze on top of this and freeze it for another

2hrs• Decorate it with mango pieces and whipped cream.

Method:

Pour the lemon juice into a small bowl and sprinkle the gelatine over. Let soften for a couple of minutes.

Meanwhile, in a small saucepan, combine the whipping cream, sugar, honey, lemon zest, fennel powder and salt. Heat over medium heat, stirring, until the sugar is dissolved and the cream is hot. Remove from the heat and whisk in the softened gelatine; whisk until the gelatine dissolves. Set aside.

Place the yogurt in a large liquid-measuring cup. Add the lemon and vanilla extracts and whisk to combine and lighten the yogurt.

Panna cotta:

• ¼ cup fresh lemon juice• 2 ¼ tsp gelatine• 1 cup whipping cream• ½ cup fine granulated sugar• ¼ cup honey• Zest of 1 lemon• 1/8 tsp (pinch) salt• ¼ tsp fennel powder• 2 cups low-fat or no-fat

unsweetened yogurt• 1 tsp pure lemon extract• ½ tsp pure vanilla extract

Gradually, whisk in the hot cream-gelatine mixture. Divide the mixture equally between 12 4-ounce bowls, glasses or ramekins. Once cooled, cover with plastic wrap and refrigerate overnight.

Right before serving or close to the serving time, combine the jam, tablespoon of honey in a small microwave-safe bowl. Warm the mixture gently, so it’s barely warm to the touch, then put it through a fine-mesh sieve. Stir in the lemon zest. Divide the jam mixture equally between the panna cotta, gently spread the jam. Please, note that the jam should be spreadable but not hot; otherwise, it will melt the panna cotta. Serve right away or refrigerate until needed.

I have worked with various hotel chains in India as well as abroad. I was associated with Jumeriah Beach Resort in Dubai, Shangri-La Resorts in Abu Dhabi and my last assignment was with Atria Hotel – Bangalore.

As a hotelier, I enjoy to deliver the best hospitality to each and every guest who visits our resort.

Being a hotelier, our foremost responsibility is to meet every guest’s needs and provide quality service. This basic MANTRA motivates me to face any situation with positive attitude, with only customer satisfaction in mind.

I am a native of Chennai and my parents along with my younger brother & sister – in – law reside in Chennai.

Q7. What are your hobbies?

During my free time, I love to read books & Magazines and I have been planning for road trip for quite some time now. Hopefully I get time for an adventurous trip this year.

Q8. What’s your favourite food and cuisine?

I love to have Chinese, Lebanese and Indian of course. My favourite dish is Chicken shawarma with a good helping of Caesar Salad on the side.

Q9. Which is a destination that you’d love to holiday at?

I would love to go Spain for a holiday.

Q10. Lastly, one advice to future or aspiring hoteliers.

After gaining 14 years of experience in the hotel Industry, my advice to aspiring hoteliers is that you should have positive frame of mind while dealing with the guest and should be proactive in responding to any scenarios. Like any other industry, hard work and continuous learning is essential to develop your skills and progress in your career.
