BAKED EGG CASSEROLE

1 Lb. bacon, cooked and chopped12 oz. breakfast sausage rolls1 (28 oz.) package frozen cubed hash browns with peppers and onions, thawed2 C. shredded cheddar cheese12 large eggs1/2 C. milk1-1/2 tsp. salt1 tsp. pepper1 tsp. garlic powder

Preheat oven to 375°F. But-ter a 9x13-inch baking pan.In a large skillet over medi-um heat, cook the sausage until browned, crumbling it with a spatula as it cooks.Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk un-til completely combined. Pour the egg mixture over the hash brown mixture.Bake for 35-40 minutes until a knife inserted in the center comes out clean.

Compared to last Tuesday, feeder steers under 500 lbs 4.00--8.00 lower, over 500 lbs steady to 4.00 lower. Feeder heifers under 600 lbs 2.00- 8.00 lower, over 600 lbs steady to 2,00 higher. Slaughter cows 5.00-8.00 lower. Demand uneven. Supply moderate. Very much an October feeder trade with good demand for yearlings and less demand for calves that carry a much higher health risk this time of year. The cattle outlook is very mixed at the moment with smaller harvest ready numbers allowing the market to regain some currentness and advance fed prices in the near term while the longer view is less rosy with rising corn prices and high feedlot occu-pancy overall. Supply included: 89% Feeder Cattle (51% Steers, 35% Heifers, 14% Bulls); 9% Slaughter Cattle (77% Cows, 23% Bulls); 2% Replacement Cattle (46% Bred Cows, 31% Bred Heifers, 23% Cow-Calf Pairs). Feeder cattle supply over 600 lbs was 46%.
