Tropical Cod With Asparagus

Ingredients• 1 tbsp olive oil• 2 pieces (170 g) fresh cod• 6-7 spears asparagus• Dash of salt and pepper• 1 cup chopped mango• 1 cup chopped cucumber

• 8 cherry tomatoes• 1 tsp lime juice• 1 tsp minced jalapeño• 1 tsp dried parsley powder• 1 cup cooked brown rice

Directions

1. Heat oven to 200 C. Line a sheet pan with aluminum foil, and lightly apply olive oil.

2. Place cod and asparagus on the prepared sheet pan, lightly apply olive oil, and season with the salt and pepper.

3. Bake for 20 minutes, or until cod is cooked through and flakes easily with a fork.

4. Meanwhile, in a mixing bowl, toss together mango, cucumber, cherry tomatoes, olive oil, lime juice, jalapeño, and parsley to create a mango salsa.

5. Serve with cooked brown rice.

Chicken Green Salad

Ingredients• 2 cups green vegetables• 5 cherry tomatoes• 1/2 avocado

• 2 tbsp olive oil• 1 tbsp balsamic vinegar

Directions

1. Heat olive oil in a skillet over medium-high heat. Add chicken breast to the skillet and cook until golden brown.

2. Wash the green vegetables and slice to desired length.

3. Cut the avocado in half, and remove the seed and skin, then slice.

4. Place green vegetables on a dish, and add baked chicken breast, avocado, and cherry tomatoes.

5. Add olive oil and balsamic vinegar.

Six Ways to Make Exercise a Priority in Your Life
