INGREDIENTS

5 Cups Stale Cornbread, Cubed½ Cup Onion, Finely Chopped½ Cup Celery, Finely Chopped4 Ounces Raw Breakfast Sausage, Casing Removed½ Cup Chicken or Turkey Broth1 Tablespoon Chopped Sage1 Teaspoon Thyme1 Large Egg

Instructions:

Combine the celery, onion, sausage, and broth in a microwave-safe bowl. Break up any clumps of sausage. Cover with plastic wrap and microwave on high for about 4 minutes, or until the veggies are tender and the sausage is cooked. Allow to cool slightly (about 5 minutes). Add the cornbread, sage, and thyme. Lightly beat the egg - do not over scramble. Add the lightly beaten egg to the cornbread mixture and stir to combine thoroughly. In either the same microwave-safe bowl or a microwave-safe serving dish, microwave on high for about 3 minutes or until heated through. Serve and enjoy!

On the eleventh hour of the eleventh day of the eleventh month in 1918, the fighting in what was then considered to be “the war to end all wars” between the Allies and Germany ended with an armistice. Exactly a year later, Woodrow Wilson proclaimed November 11 as the first Armistice Day. This marked the first step towards Veterans Day as we know, love, and celebrate it today.Initially, Armistice Day served as a day of remembrance for World War I soldiers, marked by celebrations and a two-minute cessation of business at 11 a.m. In 1921, the first unknown soldier was laid to rest in Arlington Cemetery on this day and the Tomb of Unknowns has been an important part of Veterans Day ever since. In 1926, Congress officially declared Armistice day as not just a day of remembrance, but also a day to celebrate peace.After World War II and the Korean War, the country began to move toward using Armistice Day to remember and celebrate all who served in combat - not just those from World War I. It wasn’t until 1945 when WWII veteran Raymond Weeks led a delegation to General Dwight Eisenhower that Veterans Day was formally established as a national celebration of all veterans. Weeks is now known as the Father of Veterans Day.
