ST. LUCIE COUNTY — As sea turtle nesting season starts in St. Lucie County, residents living on the beach are being reminded about the laws that are in place to protect the rep- tiles. “Many residents settle here from areas outside Florida and they may not be aware of their responsi- bilities,” said Ken Gioeli, the natural resource exten- sion agent for the Universi- ty of Florida’s St. Lucie County Cooperative Exten- sion. “There are federal and state laws that protect sea turtle populations.” Last year was one of the most successful years in St. Lucie for sea turtles. The 2011 nesting numbers indicated there were 3,478 loggerhead nests, 243 green turtle nests and 376 leatherback nests, a 31- year high. “We are hoping for another good year,” he said. The county has five tur- tle species that are found on the Treasure Coast: hawksbill, Kemp’s ridley, green, loggerhead and leatherback. According to Mr. Gioeli, scouts go onto the beaches every day during nesting season, which runs through Nov. 15. “The scouts look for tracks called ‘crawls,’ which the turtle makes when it comes on shore,” he said. The scouts also look for nests that have been cam- ouflaged by the mothers after they lay the eggs, 019443 www.RxToYouPharmacy.com Dr. Timothy Cheung Head Pharmacist T o our neighbors: RX To You Pharmacy is an VIP/Concierge Full-Service Pharmacy that takes most Major insurances. But part of the success ofthe season comes from thecontinued participation ofcoastal residents whoworked with the county tokeep the beaches dark.

There are three simpleguidelines to assist resi-dents in complying with seaturtle-friendly lightingrequirements.

The first is to keep thelights low. Mount fixtures aslow as possible and use thelowest amount of lightneeded.

The second is to fullyshield the light so bulbs arenot visible.

The third is to use longwavelength light sources, such as ambers and reds.

County code states exteri-or lighting sources directlyvisible from the beach mustbe turned off between sun-set and sunrise during nest-

ing season, and existingartificial light should not bevisible from the beach. Win-dow treatments are requiredon all windows with a line ofsight on the beach.

“If the beaches aren’t darkenough, not only will themother not lay her eggs, butupon hatching, the babiesmight move towards resi-dences instead of theocean,” he said. “Turtle-friendly lighting definitelyplays a role.”

He will know by the end ofMarch if the Florida sea tur-tle grants program will befunded by the sales of thesea turtle specialty licenseplates.

The money is used to pro-duce educational materialsfor coordinators in the Trea-sure Coast area, as well aslocal libraries and environ-mental centers such as theManatee Observation andEducation Center, OxbowEco-Center and the FPLEducation Encounter.

For additional informa-tion about sea-turtle friendlybeaches and proper lighting, call Mr. Gioeli at (772) 462-1660.

on March 8. The incident iscurrently being investigatedby the police department’sinternal affairs, along withanother incident that tookplace the same night thatalso resulted in the cityemployee being drivenhome.

Mr. Orr explained his rea-soning why Ms. Taylor’s ter-mination didn’t take placeright away was because hedid not receive all the infor-mation he needed. Once hereceived his information, hecalled it “a game changer”and fired Ms. Taylor imme-diately.

At the meeting, the coun-cil stepped out from behindthe dais and instead, sat alarge table in the front of theroom. Across from them satMr. Bentrott, Mr. Orr and

Maj. Scott Bartal, sitting infor Chief Reuther, who wasout of town.

Mayor Joann Faiella start-ed the meeting by saying,“I’m not happy with the waystaff has handled certain sit-uations.”

Around the table, eachcity councilperson gavetheir view of how this situa-tion, and others in the past, has been handled by Mr.Bentrott and Mr. Orr.

Mr. Bentrott explained tothe council that he took noaction concerning Ms. Tay-lor because it was still anongoing investigation.

“Some of these questionsare simple and don’t requirea full internal affairs investi-gation to answer a councilmember,” said Council-woman Berger. “I’m lookingfor leadership, and I’vereceived no indication thatthere’s a lot of leadershipgoing on in just about any

area.”Councilwoman Shannon

Martin agreed. “We have a duty and a

responsibility to make surewe are acting as professionalas we can. That’s our job,”she said.

Councilman Jack Kellysaid he waited almost aweek to have his questionsanswered.

“I’ve been here for 12years and this is the firsttime the communicationhas broken down this poor-ly,” he said.

Vice Mayor Bartz said awider view of the situationwas needed.

“We all make errors,” shesaid. “I think we need to belooking at the whole pictureand how this affects theentire city. We have to moveforward and learn fromthis.”

After a brief break in themeeting, the council dis-cussed the actions theywould take.

Mayor Faiella recom-mended demoting Mr. Ben-trott to assistant city manag-er, but other members of thecouncil disagreed.

Councilwoman Bergermade the motion to fire Mr.Bentrott, which passed 4-1.Directly afterward, thecouncil voted unanimouslyfor Gregory Oravec, assis-tant city manager, to benamed interim city manag-er.

Councilwoman Martinalso made a motion to fireMr. Orr, but it didn’t receiveany support from the coun-cil, so she agreed to supportwhatever the council decid-ed.

The council voted unani-mously that Mr. Orr be rep-rimanded with a writtencorrective action in hisemployee file. His contractis set to end July 2013.

“It’s very painful to behere to today to make thesedecisions,” said MayorFaiella. “But you’re held tohigher standard when youwork for city hall.”

Grocery basicsCashiers and baggers need to go back and watch the

videos again how to bag groceries right. I was a cashier for20 years and the way you are supposed to bag groceries iseggs and bread can go together with bread lying flat so it’snot smashed when you get home and cold foods gotogether and non-groceries go together and cleaningproducts go separate from everything.

And, when the cashier hands you your change andchange comes first then the bill.

Handicap decalsThe handicap parking (blue thing) says that if you are

not parked, remove before driving. Do not drive with ithanging on your mirror. I mean, I guess people don’t readstuff anymore and I guess they can do whatever they wantbecause they have the handicap sticker.

Enforce the lawDo the police enforce stop sign laws? If not, why not, and

if they do, they need to do a better job. It appears that rather than stopping, the common prac-

tice in our neighborhood, is to step on the gas and hope forthe best. It is especially disturbing that most of the offend-ers live in the neighborhood.

Everybody better be extra cautious while driving orwalking in the neighborhood, and don’t dare let your chil-dren out of your immediate grasp.

Observations on driving habitsI agree, drivers in the left lane are not even going the

speed limit, but they hang out in the left lane anyway. Dothey not remember what the left lane is for? It is called the“passing lane” for a reason.

I would like to ask why people leave so much room inbetween cars while stopped at red lights. Sometimes asmuch as three car lengths are between one vehicle and thenext one.

Having so much room between vehicles prohibits othersfrom getting into the left turn lane. Those in the left turnlane prohibit other left turners from getting in there andthat clogs up the passing lane for those of us in it. The left-turn lane gets lengthened, but it still is not long enoughdue to drivers allowing too much space between vehicles. The last time I checked, vehicles were not allergic to oneanother.

In my time hereI have lived here for some 19 years and in that time:1. My house has been broken into and they took $85

from my wallet while I was sleeping right next to my wallet. They were nice enough to leave my wallet.

2. Someone has taken three ceramic mushrooms thatwere in my yard.

3. Someone has taken four plastic pink flamingos.4. My mail box has been hit and damaged seven different

times.5. Now some nitwit took my four-sided, white pyramid

block of cement that was in my yard to deter the mailmanfrom driving over my grass the full length of my yard. Butthis time I got a license plate number and I will find you, sokeep your eyes open.

Waste of taxpayer moneyIt seems we taxpayers are paying people (mostly young)

to take GED classes to improve their chances of getting ajob in today’s difficult employment climate.

I found some agencies actually pay around $1,200 fortuition, plus food money, rent money, plus travel, etc.

1. The GED school only requires a certain amount ofclasswork to be done. Students can arrive and leave at will.No training about being responsible, punctual or diligent.

2. Many of these “students” arrive dressed like the lowestmembers of society. Males with pants below their buttsand underwear showing, unkempt clothes and hair. Girlsparade around like hookers with bare mid-drifts andtramp tattoos.

I spoke with the director at the adult school whoshrugged her shoulders and said, “Well what can you do?”

A seating area next to the adult education building isconstantly inhabited by pot smokers and other lowlifes. The ground is littered with cigarette butts, empty cans, foilcigar wrappers used to conceal pot, empty plastic drinkbottles and other such waste. The director stated, “theyneed somewhere to sit on their breaks.” Students who arestudying at their desks do not need a place to sit when onbreak.

3. Some of these “students” who are being paid to attendGED class are using the money for drug activities anddeviant activity at and around the school area.

I am doubtful that the “training” received at this schoolis sinking in enough to actually be a good investment fortaxpayer money. We need educators with backbones whocan teach youngsters that being perceived as a “gangster”is not a path to a productive, happy life.

Students should be required to come on time, leave ontime and dress accordingly just like in the real world. Peo-ple can’t even enter an unemployment office without“business casual clothing.”

What have they learned with our tax dollars support? It’s OK to come late. It’s OK to leave early. It’s OK to dress like a gangster or slut. It’s OK to play with drugs with 1,000 feet of a school. It’s OK to litter and sit in the middle of a debris field. It’s OK to take a GED course just to get free government

money.

Enough reasonMexicans and people from other Latin American coun-

tries are coming across our borders in droves. When they arrive, they have already broken our immi-

gration laws. Those who want to work must then break our Social

Security laws by securing and using fake identity cards. The cowardly reaction in Washington is valid reason forvoters to turn the Obama Administration out of office.

Up in armsThe military is up in arms (pun intended) by proposals

to reduce our preparedness and, rightly so. The Obamaadministration admits the Pentagon will be forced to can-cel all new aircraft, intelligence and weapons programs, leaving our troops to make do with equipment from the1950s, worn out in Iraq and Afghanistan.

This is not the path to take for this brave country.

In the past few months, Ihave written about acouple of free downloads

that can enhance yourcomputer experience. Ihave begun to see a patternin the responses.

The first issue I would liketo address is a message toeveryone who asked whatcomes with these down-loads. When I write acolumn telling peopleabout a piece of softwareand provide a link, 99.9percent of the time, thepage that the link bringsyou to will tell you every-thing you need to know.Usually you will find a linkto the frequently askedquestions, as well.

I have also noticed manypeople think that I amassociated with the soft-ware that I write about. Please understand, I findsoftware on the Internetthat I think people may findhelpful, I download andinstall it, and then put itthrough its paces. If it'ssomething I feel is well-written and free of viruses, spyware or other "gotchas,"then I write a column aboutit to let people know it's outthere. The softwareproviders have no idea I'mwriting about them. I justtell people that I’ve foundsomething that works forme and where they can geta copy.

One more issue that Ineed to address is theconcept of "free." When asoftware provider providesa "free version" along with aversion that you have to payfor, you are on your own ifyou decide to get the freeversion. That typicallymeans no support if youhave issues. This concept, while reasonable to me,seems to annoy somepeople. I'll use Avast

antivirus as an example.Let's say you are running

the free version and you geta message that it has founda virus or some critical errorthat it cannot automaticallyfix. If you attempt to goback to the Avast websiteand get them to help you, they are going to want youto pay for their helpbecause you are using thefree version. This shouldcome as no surprise as it'sclearly mentioned on thewebsite, but it sure doescatch people off guard.

If you have not beenrunning an up-to-dateantivirus program anddecide to download the freeedition, don't be surprisedif you find that yourmachine is infected.

If the program tells youthat you have a virus it can'tclean and you don't knowhow to clean (a hint: Googlethe virus name), then youare likely going to have topay someone to fix it. If youdownload a free virusscanner and put it on amachine that has been onthe Internet for monthswith no protection and itdiscovers a virus, don'texpect anyone to come bailyou out for free.

I hope that answers someof the emails I've gottenlately. If I haven't gotten toyour email yet, please bepatient; my inbox is a bitswamped right now.

Ceramic store allows creativity to shine

PORT ST. LUCIE — Fromthe moment customersstep into Brushing onBisque, they are only limit-ed by their imaginations.

Pottery pieces of everyshape, size and style linethe shelves. Tables waitingto be used are scatteredthroughout the store, andpaints and stains wait foreager brushes.

The husband-and-wifeteam of Robin and DerrickPeterson run the smallbusiness that opened inNovember 2011.

Mrs. Peterson, who ishearing impaired, used toteach American Sign Lan-guage at Indian River StateCollege. The pottery store istheir retirement dream.

“I took a leave of absencefrom the college to focus100 percent on the store,”she said.

“She’s always been intopottery,” said Mr. Peterson.“She’s a driving force withthe store, and always has apositive personality.”

What makes Brushing onBisque unique is they offeran all-inclusive pricing sys-tem.

“The price you see on thepottery piece includes thepaints, glaze, stenciling andfiring,” Mr. Peterson said.

The store has a variety ofitems to choose from, including figurines, Disneycharacters, dishware andwall hangings.

They also stock seasonalpottery as well, and are cur-rently featuring Easter-themed items such asbunny plates.

“Mugs are always a bigseller,” he said.

Customers also don’tneed to make appoint-ments. The store offers the

ability to just walk in,choose a piece and startcreating. Once they finishdecorating a piece, theyturn it over to the Peter-sons, who finish the pieceby firing it and return it toits owner in about sevendays.

“A fired piece looks com-pletely different than whenit was painted,” said Mrs.Peterson. “Customers beamwhen they come in to pickup their finished piece. Tothem, it’s like opening apresent, since each piece iswrapped and bagged forthem.”

The Petersons also onlyuse quality ceramics andpaints.

“Everything is dishwash-er and microwave safe,” hesaid. “All of our paints andglazes are food quality, soyou can eat and drink from

them.”Recently, the store added

a new product called glassfusion, a pottery piece thatis painted and thenreceives a glass inlay.

For those who have nevertried painting potterybefore, classes are offeredtwice a month, with oneclass focusing on paintingtechniques, and the otherclass working on a project.

“I truly enjoy workingwith my customers,” shesaid. “I help them create anamazing piece by teachingthem different techniquesand letting them choosewhich technique they pre-fer to use. It’s very reward-ing.”

The business is alsoavailable for birthday par-ties, summer camps and“diva nights,” which areladies-only events, date

nights, workshops andfundraisers.

For that special someonewho loves crafting, giftcards are also available.

“We’ve had nothing butpositive response from thecommunity since weopened,” Mr. Peterson said.“A lot of repeat customers. We’re glad we’re here.”

Jurors have becometechnology savvy andsome expect that “it isavailable in every case,” hesaid.

Although it’s unknownwhether the absence of avideo has affected a jury’sdecision, Judge Yacuccisaid he believes, in somecases, it could have been afactor.

He said he doesn’tbelieve, it affects a lot ofcases, though

But while it may notaffect a lot of cases, JudgeYacucci said at a PublicSafety Coordinating Coun-cil meeting last month hewishes every patrol car hadvideo camera equipment.

At least in St. LucieCounty, that will be a longtime coming.

The Port St. Lucie PoliceDepartment and the St.Lucie County Sheriff’sOffice each only have a fewcars that have video equip-ment.

A major reason is thecost, authorities say.

The Fort Pierce PoliceDepartment, which hasvideo equipment in mostof its patrol cars, has beengradually accomplishingthat during the past fouryears, Police Chief SeanBaldwin said.

It costs about $5,000 toequip each car, he said.

Chief Baldwin said heagrees the evidence pro-vided by the cameras canbe beneficial in jury trials.

He also said it benefits

law enforcement in otherways.

“When we receive a com-plaint about the officer’sperformance, we reviewthe video to see whetherit’s a violation of our poli-cy,” he said.

In most instances, thevideo clears the officer,Chief Baldwin said.

The video also can bereviewed to see areaswhere officers may needadditional training, hesaid.

But there’s also the reali-ty that the video cameradoesn’t necessarily captureeverything happening, hesaid.

“We have to be carefulwhen we review the video,”he said. “The video doesn’talways tell the wholestory.”

Canine distemper is adisease that affects dogs, especially puppies, causing amyriad of symptoms. Most casesoccur in rescue dogs or puppieswho have not received vaccinations, or the completeseries of vaccinations.

Early clinical signs are non-specific and can rangefrom fever, nasal discharge, inappetance, diarrhea, vomiting, coughing, progressing to pneumonia. One ofthe more common and classic signs of caninedistemper is a thickening of the foot pads, hence thename “hard pad disease”. The virus then advances tothe neurologic system causing muscle tremors, weakness, and an unstable gait. Seizures characterizedas “chewing gum fits” are another classic symptom ofadvance canine distemper infection.

Transmission is from exposure to body fluids froman affected dog. These include nasal secretions, coughdroplets, and urine. Newborn puppies get protectionfrom their mothers if the mothers have been vaccinatedand have antibodies in their system. These antibodiesare transferred in the dam’s colostrum (mother’s milkproduced up to 48 hours of giving birth, which is rich inmaternal antibodies). These maternal antibodiesdissipate by 16 weeks, so it is vital that puppies bevaccinated properly. The schedule we use at Kelly’sAnimal Hospital is 8, 12, and 16 weeks. Thesedistemper vaccines also include protection againstparvovirus, leptospirosis, and respiratory viruses. Theleptospirosis component cannot be given to puppiesless than 12 weeks of age so the first vaccine at 8weeks of age does not include leptospirosis.

Diagnosis is made by testing for distemperantibodies in the blood and sometimes the cerebralspinal fluid.

Prevention is the key to control. We rarely see thisterrible disease anymore because vaccinations havebeen implemented for many years and are safe, effective, and inexpensive.

Treatment is symptomatic and aimed at controllingthe secondary bacterial infections (pneumonia), seizurecontrol, fluid replenishment to control the dehydrationfrom the diarrhea and vomiting and good diet to try tomount and support the immune system..

There is plenty to lookat — and eat — at Bella

PORT ST. LUCIE — Fromthe moment I stepped intoBella Roma Italian Marketand Bakery, I knew I was infor the authentic flavors of aNew York deli.

Even though it was themiddle of a weekday, whichis normally a slow time foreateries, a steady stream ofpeople came in to look overthe many cases of food.

Staff greeted the majority ofcustomers by name.

This family owned andoperated store was pur-chased by Albert Brancac-cio last August. The Bran-caccio family has beenbaking for decades, andused to have a store on U.S.1 in Port St. Lucie. Whenthey purchased the Italianmarket, the bakery andmarket merged into onelocation on BayshoreBoulevard in Port St. Lucie.

“Port St. Lucie has treatedus so well,” said Mr. Bran-caccio. “It’s been very grati-fying.”

One of the main compli-ments the store receives ishow it reminds customersof the delis in New York.

And that’s exactly whatthe family was going forwhen they opened.

The store is divided intoareas that flow seamlesslyinto one another. One areaoffers a selection of wine.

Then you find yourselfstanding in front of caseafter case of fresh meatsand cheeses. In the middleof the store, dry productssuch as sauces, pastas, pep-pers and olives line theshelves.

In the prepared foodscase, homemade soup, meatballs, numerous sal-ads, chicken Parmesan andmore wait for the next hun-gry customers.

“We have a very authentic

eatery, and we use a lot offamily recipes,” Mr. Bran-caccio said. “We carry a lotof products that most gro-cery stores don’t, so we’redefinitely an Italian mar-ket.”

It was from preparedfoods that I made my selec-tions for lunch.

I started with Tuscanosoup, made with potatoesand sausage. I quickly dis-

Virgo-Aug. 23-Sept. 22It's better to just accept thanto overanalyze. Much lifeforce and energy is wasted byover-thinking. Stick to thebasics. Trust that life's con-cerns always work out indivine order for the highergood of all concerned when

you go with the flow. Yournew knowledge will keepyou moving forward andlower your stress levels con-siderably.

Libra-Sept. 23-Oct. 22A lighter touch goes a longway. Resolve to let pettyannoyances slide off youwithout attaching. You are awinner. Your strong, balancedperformance in life is Oscar-quality. The coming springwill continue to present youwith new ideas to plant, growand harvest. The futurebelongs to you because youbelieve in your dreams.

Scorpio-Oct. 23-Nov. 21Your natural rhythm and tim-ing is good now. Physicalactivities should be a highpriority. Your instincts are

Capricorn-Dec. 22-Jan. 19There is much reason for joyin your life. Just keep your toppriorities in line. First shouldbe to feed your inner spirit. Then, from this natural high, take care of earthly responsi-bilities. Let go of old habitsfrom the past that no longerserve you. This will be thebest year of your life if youmove these two ideas for-ward. Keep the faith andprosper.

Aquarius-Jan. 20-Feb. 18Let your actions speak for youmore than your words. Youdon't have to seek approvalfor your choices in life. Seek-ing advice from a trustedfriend is the exception to this.It is your time to shine. Thekey is to make wise choicesand be courageous whenneeded. Sometimes less ismore. It is never wrong to sayno to negativity.

“Little Smiles” is a non-profit 501(c)3 organization that provides toys, games, DVD’s,computers, VIP outings, celebrity meet and greets, concert, sporting event tickets, themepark tickets, fun food runs, nerf gun wars and much, much more…for children in localhospitals, hospices and shelters. We pride ourselves on being local, immediate, and handson; and our Board of Directors is comprised of all volunteers.

They work side by side with local nurses, child life staff, and medical personnel whodetermine the immediate needs for each child and family. Little Smiles views the staff whotreat the children not only as their partners but as the 'angels' who know the kids, the parentsand each special circumstance. They consult with them directly and therefore are able toprovide what is needed most. They also interact directly with the kids. Buying a game for achild is wonderful, but playing the game with that child is priceless!Their mission is to help children escape their everyday pain and allow them to be a kid again, even if it’s for a short period of time. We respond to the needs of the children and providewhatever we can to make their day a little brighter. We help put a smile back on the faces ofchildren who need it most.

covered the store actuallymakes four different kinds ofsausage. It arrived thick andhearty, with slices of potatoadding to the richness. Thespices in the sausage gavethe soup a flavor that hadme wanting more.

For lunch I had the stuffedred pepper, bowtie pastaand a mushroom cap. Whenit arrived I quickly realized, once again, that my eyes aremuch bigger than my stom-ach.

The red pepper held upwell to the filling and wasstill tender enough to be cutwith a fork. The rice andground beef were flavorfuland filling. The pasta wascooked perfectly and gracedwith pesto sauce. The addi-tion of red pepper slices andsome pine nuts to the dishbalanced well with thepesto. The mushroom capprovided a thick, wonderfulbase to the topping ofbruschetta and mozzarellacheese. A balsamic glazewas added, which gave it atangy bite without over-whelming the rest of theingredients.

The entire meal was deli-cious, and I enjoyed every

bite. Further down the store, a

selection of almost a dozendifferent kinds of olives sitsnext to the sandwich sta-tion, where customers canorder a freshly made sand-wich with a choice of top-pings. A number of tableswere available for those whowant to sit and enjoy thefriendly atmosphere.

“We try to help fulfillrequests,” he said. “If cus-tomers don’t see somethingthey want, they just ask, andwe try to get it for them.”

But for those with a sweettooth, the rest of the store isdevoted to the bakery side.Case after case is filled withcakes, cookies, pies, cheese-cakes, breads and more.

I had bites of a Napoleon, which had crunchy layers offlaky pastry with a creamysweet filling. I also tried theZeppoli, which looked like adonut with a cream toppingand surprised me with thesame creamy filling on theinside. I also tried a Sfinge, one of their special pastriesmade this time of year tocelebrate St. Joseph’s Day,which is April 19. The sweetcoating on the pastry had alittle spicy taste and wassprinkled with dried fruit. Icouldn’t decide whichdessert was my favorite.

“Everything on the bakeryside is made in the store,”Mr. Brancaccio said.

I could really taste thefreshness in ever bite.

What I think I liked best isthat everything in the storecan be packaged to be takenhome and enjoyed, as wellas in-store dining. I can seemyself stopping here after abusy day to pick up a deli-cious meal for the family.

For loyal customers, thestore offers a “fair rewards”program, which is a cardallowing customers toreceive up to 10 percent offon purchases. Gift cards arealso available.

“We’re a family store, andthat’s what we want the cus-tomer to feel when they visitus,” he said. “We want to bepart of the family atmos-phere.”

Even as much food as Iate, I still wanted to trymore. Customers will findthemselves coming to thisplace again and again.

Hello smart shoppers. In my column, I tryto ignore the terrible

economy. Forgive me, it'stime to smarten up.

According to the experts, people are getting heavieras they look for any way tofeed their families, especial-ly with fast (cheap) foods.

I've said before, let's startgetting smart again bysaving money in thesupermarket. Ground beefliterally flies off the shelf intough times. You can makethe least expensive mealswith ground beef, or canyou? You look for cheap andgrab those "fantastic" buys, ground beef at under $3 apound. That's nuts, it'salmost half fat! Stop!

After browning the meatand pouring off the fat, you're left with about 1/2pound. The cuts of beef thatcontain the least amount offat and cholesterol are: flank

steak, eye round, top round, bottom round, sirloin tip orsteak and lean chuck.

Some stores offer buy oneget one free frequently. Anyof these cuts can be used forground beef. I prefer bottomround roast for grinding. It'slean, good tasting andfrequently on sale. Pick alean one and bring it to thebutchers at the meatcounter. Tell them what youwant. They are the nicestand most accommodatingpeople in the store. Tellthem you want the meatground twice. You decide:Low fat? Grind as is. Verylow fat? Trim most of the fat.Virtually fat free? Trim allthe fat.

Do you want it portionedout? They will package it foryou. Ask them to packagethe trimmed fat separately, then you know it has beentrimmed and just howmuch fat you've kept out of

your diet. Now you're becoming a

smart shopper. You will endup, after cooking, with justabout what you startedwith; good, lean, freshground beef.

In most casserole dishes, you can use less meat thanyou usually would sincethere is no waste. Give backthe good fat by adding 1 or 2tablespoons olive or canolaoil to each pound of meat.

When you shop you mustpay attention to labels. Many additions, such asHamburger Helper, containfat, cholesterol and a greatdeal of salt, not to mentionfancy words for MSG. Not

only does it add things youdon't need in your diet, italso costs just about asmuch as the meat.

That bottom round roastalso makes a delicious roastbeef or pot roast and if youask the butcher, he will alsomake you cubed steaks.

I cringe when I see peoplebuying pork neck bones. Why are you paying moneyfor bones when you canbarely feed your familymeat?

Buy a pork shoulder, trimthe fat and cut it up. Wantpork chops? Buy a loin ofpork when it's on sale andhave the butcher cut it intochops. Take advantage ofbuy one get one free on aboneless pork loin. You cancut it into cutlets, chops, double chops, roasts andstew meat.

It makes me laugh whenwe constantly hear, "eat atleast five fresh fruits and

vegetables daily." Right nowthe prices are untouchablefor many. Remember, avegetable is fresh when it'ssold or eaten no more thantwo days after picking. Afterthat, you lose vitamins daily.

Frozen is cheaper andpackaged the same day it ispicked.

Canned veggies are stillmuch, much cheaper andpackaged the same daythey're picked; still loadedwith vitamins. Look for nosalt added. Try to buy storebrands. Who do you thinkmakes them? If you said thebig guys, you're right.

Drain and puree cannedveggies such as carrots, beans, green beans, any-thing you can think of andmix it with the ground meat. They'll never know thedifference, you’re stretchingthe meat and feeding themhealthy food.

Five fruits a day? On what

planet? I remember yearsago raising four kids saying,"I just want to be richenough to keep my family inbananas." Including me andmy husband, that's 49bananas a week. However,store-brand canned fruitsprepared in pear juice orlight syrup solve the prob-lem.

Oatmeal is great, but theold fashioned, not theinstant, has the mostnutrition. Forget the instantflavored ones; expensivejunk. You can add apple-sauce, cinnamon, maplesyrup, brown sugar, nuts orwhatever and a container ofstore-bought oatmeal canfeed an army. Pay attention, think, think, think.

Until next week, God'sblessings.

Improvements made to ballpark

ST. LUCIE COUNTY — Much like its name, Digi-

tal Domain Park, the springtraining home of the NewYork Mets, has seen a fewrenovations over the years.

The most recent con-struction began last Novem-ber and wrapped just intime for the Mets’ Grape-fruit League home openeron March 5 vs. the Washing-ton Nationals, a 3-1 loss.

The $2.5 million projectexpanded seating on theright-field line to mirror thatof seating on the left-fieldline.

“We just wanted to finishoff the stadium,” said PaulTaglieri, Mets director ofFlorida operations. “We didmajor renovations to thefacility in 2003 and we didn’tdo anything back then to

the bleacher area. We want-ed to complete our stadiumand allow our fans to havecomplete connectivity tothe entire complex.”

The construction added502 box seats to the sectionthat originally consisted ofbleacher seats. Behindthose box seats is 16,000square feet of open deck, which consists of a bar, con-cessions and restrooms.

“The fans now have theopportunity to enjoy theentire stadium when theyvisit here, where as in yearspast, if you bought a bleach-er ticket or berm ticket youwere isolated to thoseareas,” Taglieri said.

“Now it allows completeconnectivity and the oppor-tunity for fans to enjoy theentire complex.”

The Mets have aspirationsof bringing a second team tothe facility for spring train-ing in the future, but Taglieri

denies that was a main fac-tor in the renovations.

“That wasn’t eventhought about when westarted this process,” hesaid. “We’re interested inlooking at exploring theopportunity of havinganother team here, but theconstruction project hadnothing to do with theopportunity to explore hav-ing another team here at ourfacility.”

Taglieri is already hearingpraise of the renovationsfrom fans.

“It’s great for me to walkthe entire complex during agame and listen to the fanssay, ‘Wow, this is really nice.’They talked about it in yearspast and now they talkabout what they’re able todo when they’re here at thestadium now with the reno-vations. It’s really nice tohear.”

for any team, in any sport,at any college level.

The next closest schoolin the record books isKenyon College, who won31 consecutive men’s Divi-sion III national swimmingand diving champi-onships.

“This is one for thebooks,” said Indian Riverhead coach Ryan Mallam.“I’ve been telling every-body that it would be onefor the books. Now it’s onefor the record boards. I’mjust so proud of theseguys.”

The IRSC men’s programscored 1,704, nearly 500points ahead of their clos-est competition (Daytona

State 1,253) while thewomen’s program scored1,724 and had a margin ofvictory was more than 500points (Daytona State1,195).

Another staggering fig-ure is that of the 40 teamand individual events heldduring the four-day tour-nament, the Pioneers wona remarkable 32 events.

“It’s a privilege to behere,” said freshman OttoLehtonen, who wonnational championships in3-meter and 1-meter div-ing.

“You got to work hard tobe a part of this programand get that No. 1 spot. Itfeels great.”

A slew of national marksfell during Indian’s Riverfour-day march to the title.

NJCAA national records

were shattered on thewomen’s side in the 400-medley relay, 200-individ-ual medley, 100-breast-stroke, 200-yardbreaststroke and 200-yardbutterfly.

As for the men, NJCAAnational records were setin the 200-freestyle relay,200-medley relay, 400-freestyle relay and 50-yardfreestyle.

The record set by Pio-neer freshman BradleyTandy in the men’s 50-yardfreestyle is the fastestnational time at any colle-giate level this swimming

season.“That’s the standard,”

said Pioneer head divingCoach David Suba, as hestood looking at walltoward the back of theaquatic complex, recog-nizing the number ofnational swimming anddiving titles that IRSC hascaptured.

“Every time we bring in arecruit, we show them thewall and tell them ‘there’sthe bar.’ We did everythingwe could to hit that baragain and this year was agreat team effort,” he said.
