Quan sat hinh dang te bao ciia cac ddng nam men:

Qua qua trinh phan Igp cac ddng nam men tir trai tram tai huyen Thoai Son (An Giang), thanh phd Sa Dec va huyen Lai Vung (Ddng Thap), huydn Binh Tan (Vinh Long), quan Thdt Ndt va quan Cai Rang (tiianh phd Cdn Tha), da thu dugc 40 ddng nam men vdi 7 nhdm hinh dang td bao (cau ldn. cau nhd, oval ldn, oval nhd, elip ngan, elip dai va elip nhgn) (Hinh 2 va bang 1). Quan sat hinh thiic nay chdi dudi kinh hien vi, cho thaiy 40 ddng nam men ddu cd kha nang nay chdi, vdi 3 hinh thiic gdm don cue, luong cue va da cue. Nhdm te bao hinh cau ldn, cau nhd, oval ldn, oval nhd, elip ngdn va ebp dai la nay choi da cue hoae don cue, nhdm te bao hinh elip nhgn la nay choi ludng cue (Hinh 3). 3.2.1. Tuyen chon cac ddng nam men trong chudng Durham

Chi^u cao cdt khi CO2 trong dng nghiem chiia chudng Durham trinh bay d bang 4 cho thay cudng dg ldn men cua cac ddng nam men khac nhau d timg thdi di^m ldn men 6 gid, 8 gid, 12 gid, 24 gid va 36 gid. Ddng ddi chiing (DC) cd thdi gian day het khi CO3 trong dng Durham sdm nhat (8 gid), ke den la cac ddng SDS, CRI va CR2 day hdt cot khi CO, trong

12 gid. Ddng TN3, TN4 va SD2 day het cgt khi trong 24 gid. Ddng TSS va CR3 khdng xuat hien bgt khi CO, trong 36 gid quan sat.

Summary The recent study attempts to isolate and select yeast strains with high fermentation from S}7ygi"^ * From the selected yeast strains, the study then considers uUbsing those yeast strains in iemien produce Syzygium cummi wine - a nutntious and healthy drink for the consumers. The pnmary -from Syzygium cumw/collected in were from six different locations, namely Nmh Kieu. Thot Ni>' I city). Thoai Son (An Giang provmce), Lai Vung. Sa Dec (Dong Thap provmce) va Binli Tan O inh Long province) and there were 40 yeasts strains selected collected. After the process of yeast strains divi based on morphology, physiology and biochemistry. -10 yeasls strains were identified belonging W the s ii y obtamed three separate types of yeast stiams: Saccharomyces, Pichia and Hanseniaspora. The results o the fermentaUon experiment conducted in a Durham tube and an Erienmeyer flask revealed tha Saccharomyces strain TN4 yeast strain, isolated from Syzyinum cumini in Thot Not, (Can Tho city;, belonged to Saccharomyces strain and possessed the highest s|>eed of femienlaUon amongst those examined sU-ains. Besides, this strain also engendered wme with the highest alcohol level In the optimal fermentation parameters including pH 3.5. 20''Bnx and 10' ccIl/mL of yeast cell density. TN4 fermented Syzygium cumini producing wine with 7.53% alcohol after ten days of fermentation. Additionally, the result from the identificabon of yeast by Based on DN •\ sequencing indicated that the Saccharomyces strain TN4 yeast strain TN4 is belonged to Saccbaromyces t erevisiae.
