What makes you prouder – the fact that you are the first female Indian
chef to get a Michelin star or that it’s for a restaurant that’s only been around for a year-and-a-half year?“Both are a good feeling, actually. On Twitter, I have seen that some sections of the media are really focusing on the point that I am the first Indian ‘female’ chef to receive a Michelin star, but I do not agree that it is a gender-based award. It’s a proud moment for us all at Gaa because we (and I have the most amazing team!) started this restaurant together a year-and-a-half ago with high dreams for it. We are happy.” From a full-time career at a newspaper to becoming a chef, from Mumbai to Bangkok – tell us about the journey…“It wasn’t a sudden move – even as a child, I wanted to become a chef. I began my career as a journalist in Mumbai, but then, I thought that if I aspired to become a chef, I must start young. I took advice from loved ones and, one day, I just picked up my bags and took off to Paris to hone my culinary skills at Le Cordon Bleu.” Any kitchen superstitions…“Oh God, superstitions! Well, I wouldn’t call it a superstition because it’s a must in the kitchen, but I believe if your mise en place isn’t right, the service will

Also, if you believe that you are under-prepared in the kitchen, the service would, definitely, be terrible. So, it’s better to be overprepared!” (Laughs)What does success mean to you?“Success doesn’t end with awards and accolades. It’s an honour to receive those, but also it’s important to keep moving in life. There are things I want from my life, my career and I am far from having achieved those. I have a lot to do. I don’t feel I am done yet.” What’s the best compliment you have ever received for your food…“That it’s intelligent cooking. I have been told this by two accomplished people – Vir Sanghvi and Chef René Redzepi (co-owner of the two-Michelin star restaurant Noma in Copenhagen, Denmark).” Your favourite ghar ka khaana and who makes it best…“Baingan ka bharta and daal. of diamonds and platinum with a detachable
brooch of ten brilliant diamonds at its centre,
the bandeau, made in 1932, was created for the
Queen’s grandmother Queen Mary in 1932 to
accommodate the dazzling brooch, which was
given to Mary as a wedding present in 1893.
Meghan paired the statement piece with a
bracelet and earrings by luxury jeweller Cartier.
BLOOMING BEAUTIFUL
In a lovely personal touch, some of the flowers
in the bridal bouquet, designed along with
the chapel displays by London florist Philippa
Craddock, had been handpicked by Prince
Harry from their private garden at Kensington
Palace. Among the spring blooms were forget-
me-nots, which were Diana, Princess of Wales’s
favourite flower. In a poignant tribute, they were
specially chosen to honour the memory of the
Princess on her youngest son’s special day.
Meghan had made the 15-minute car
journey from Cliveden House accompanied by
her mother, Doria Ragland, who had spent the
night before the wedding with her at the historic
Berkshire hotel. “Meghan was so happy after
her night at Cliveden, she loved it there,” said a
friend. “It was the first time she’d seen it and she
and her mum were thrilled.”
Doria – elegant in a bespoke dress and day
coat designed by Oscar de la Renta’s creative
directors Fernando Garcia and Laura Kim,
with shoes by Edgardo Osorio of Aquazzura,
and custom hat by Stephen Jones – left the
limousine and entered the chapel, taking her
seat in the quire opposite the royal family.
Meghan was then joined by two of her four
pageboys – seven-year-old Brian and John
Mulroney, the twin sons of her best friend
Jessica Mulroney and husband Benedict. After
bridal gown designer Clare quickly stepped in
to unravel her train and veil, the boys delicately
lifted it and followed her up the steps.
Waiting patiently at the arched entrance –
adorned by a beautiful display of white flowers
including locally sourced white peonies and
white roses – were her small companions, the six
bridesmaids, and two more pageboys, including
Prince George, who had all been given the
honour of accompanying her down the aisle.
They had arrived in three vintage Daimler
DS420s with their mothers, including the
Duchess of Cambridge, who ascended the
West Steps holding the hand of her daughter,
Princess Charlotte and three-year-old Florence
van Cutsem, Prince Harry’s goddaughter and
the daughter of longstanding family friend
Major Nicholas van Cutsem and his wife Alice.
The group of children, all under the age of
seven, were remarkably well behaved, keeping
their excitement and nerves under wraps as
they fell into place behind the bride with not
a grown-up in sight. Taking a lead role and
helping organise his friends was four-year-old
George – by now well versed in royal weddings
after being part of the bridal party for aunt
Pippa Middleton’s wedding last year – who
stood at the back, holding the hand of Prince
Harry’s godson Jasper, six, the son of Harry’s
mentor Mark Dyer and wife Amanda. Looking
grown-up in his outfit, the Prince appeared to
shepherd the others along.
CHILD’S PLAY
Dressed in miniature versions of the Blues
and Royals frockcoat – made by tailors Dege
& Skinner in Savile Row to complement those
worn by Prince Harry and Prince William –
the boys, their initials embroidered in gold on
their shoulder straps, looked charmingly smart.
Also among the six bridesmaids were Prince
Harry’s goddaughter Zalie, the daughter of
Jake Warren, son of the Queen’s bloodstock
and racing adviser and his wife Zoe. Meghan’s
two goddaughters were also part of the team:
Rylan and Remi Litt, aged seven and six
respectively, who are the daughters of her close
friend Benita and husband Darren. Finally, Ivy
Mulroney, four-year-old sister of Brian and
John – the pageboys in charge of the bridal
veil – completed the group.
The little girls looked adorable in dresses
designed by Clare Waight Keller – to match
the same timeless purity as the wedding
gown, the designer explained. Made from
ivory silk radzimir – a fine, lustrous fabric
with embedded cross-ribs – the high-waisted
frocks had puff sleeves and silk ribbons tied
in a bow at the back. Their white leather
Aquazzura shoes, a gift from the bride, were
monogrammed with their initials and the
wedding date as a keepsake.
Meghan was met halfway up the aisle by
her future father-in-law the Prince of Wales,
who gallantly stepped in to accompany her
in the bittersweet absence of her own father
Thomas Markle.
In the end, Meghan’s confident arrival
allayed any fears that the drama of the
preceding few days would dampen spirits.
Instead, it was a very serene and poised bride
who entered St George’s Chapel to meet
her future husband at the altar and enjoy a
ceremony that perfectly reflected the distinct
personalities of this very H special couple.
THE QUEEN’S GIFT TO HARRY
AND MEGHAN
The DUKE AND DUCHESS OF SUSSEX
It’s a unique gift and one that only the Queen
can bestow on her beloved grandson and his
bride: new royal titles for their big day.
On the morning of their wedding day,
Buckingham Palace announced that the
newlyweds would take the titles of the Duke
and Duchess of Sussex.
A TITLE REVIVED
There has only been one previous Duke of
Sussex: Prince Augustus Frederick (left), the
sixth son – and ninth child – of George III.
Like Harry and Meghan, the Duke lived in
Kensington Palace, where he died in 1843,
aged 70. Sir Nicholas Soames, MP for Mid
Sussex, tweeted: “Great news Prince Harry
created Duke of Sussex. Mid Sussex will be
delighted to welcome them on their first visit
#Sussexatitsbest.”
In accepting a dukedom, Harry follows in
the footsteps of other royal males, who are
traditionally given new titles on marriage.
His brother William was gifted the Duchy
of Cambridge when he married; Harry’s uncle
Prince Andrew became the Duke of York and
another uncle, Prince Edward, was given the
title Earl of Wessex – Edward will become
Duke of Edinburgh on his father’s death.
