Message from Electrolux Malaysia#myhappyplate is an initiative we started in 2016 to raise awareness on food wastage amongst Malaysians.
Did you know that up to 15,000 tonnes of food are thrown away daily while there are 1 million undernourished people in Malaysia?
We are raising awareness on this issue by creating an educational video online and tackling the problem at the grassroots level - by educating school children about the issue. We are also working with AIESEC to reach out to their community to further spread the message.
This year, we are extremely excited to collaborate with nutritionist, Indra Balaratnam, again to create wholesome and nutritious meals using leftovers for this recipe book.
We have also invited Malaysians to share their leftover recipes on our Facebook Page and we are impressed by the creative yet simple recipes we have received! We have selected some of the recipes to be included in this recipe book.
This recipe book featuring meals made with leftovers is a cooperative effort by Electrolux Malaysia, Indra Balaratnam, and the community. We hope these recipes will inspire you to be creative with your leftovers.

Ingredients
• 500g minced lean beef or lamb• 20g (1/4 cup) onions - chopped• 100g green zucchini – cubed• 100g potato – peeled and cubed• 100g carrots – peeled and cubed• 100g corn kernel • ½ cup celery – thinly sliced• 1 litre (4 cups) beef stock• 1 14.5 oz (411g) can tomatoes –
chopped• 1 teaspoon dried oregano herbs• 2 bay leaves• 2 teaspoons olive oil• Salt, crushed black pepper to taste• Chili flakes (optional)
Serves 6
Method
Heat the olive oil in a large non-stick pot.
Next sauté the chopped onions till fragrant and translucent
Add in the minced beef and cook for about 5 minutes till browned
Stir in the beef stock, all the vegetables, undrained canned tomatoes, oregano, and bay leaves. Bring to a boil.
Once boiled, turn down the heat to low
Cover the pot with a lid and simmer for 30 minutes or till vegetables are tender
Season with salt and pepper to taste.

Ingredients
• 4 cups left over brown rice• 300g small prawns – peeled and
cleaned• 2 eggs• 400g kangkung – remove the
leaves from the stem• 2 teaspoons fish sauce• Crushed black pepper to taste• 1 tablespoon cooking oil• 80g purple cabbage – finely sliced
Pound together• 50g ikan bilis – (removed head,
innards and soaked in hot water to soften)
• 4 cloves garlic -- peeled• 2 small red onions – peeled• 4 to 6 green chili padi
Serves 4
Method
Heat oil in a wok and gently sauté the pounded ingredients till fragrant
Add in the prawns and fry till pinkish
Stir in the left over brown rice and stir well until heated through
Crack in the 2 eggs and quickly stir in into the rice mixture
Season with the fish sauce and crushed black pepper to taste
Dish out onto a platter and top with the finely shredded purple cabbage

Method
Cook the pasta spirals in boiling water as per package instructions. Drain and set aside
Cut the cooked left over chicken into bite size chunks
In a large bowl, combine the cooked pasta spirals, cherry tomatoes, golden corn kernel, Japanese cucumber, feta cheese and sliced cooked chicken
Drizzle with 2 teaspoons extra virgin olive oil
Season with salt, cracked black pepper, and oregano
Stir well and serve

Ingredients
For the crumb crust base• 1 cup Digestive biscuit or graham
cracker crumbs• 4 tablespoons melted butter
For the quiche filling• 4 eggs• 2 cups (500ml) milk• 400g spinach (bayam) • ½ cup grated Cheddar or Swiss
cheese• 1 medium red onion -- chopped• 1/2 teaspoon cooking oil• Salt & ground black pepper to taste
One 9 inch round quiche makes 8 wedges
Method
To make the crumb crust base of the quiche:
Preheat the oven to 180ºC
Put the digestive biscuits into a Ziploc plastic bag and pound the digestive biscuits into fine crumbs
In a bowl, mix the crumbs together with the melted butter. Stir well.
Using your hands, press the biscuit crumbs into a 9 inch pie pan
Bake the biscuit crumb crust in the oven for 10 minutes
Remove and set aside to cool

To make the quiche filling:
Preheat the oven to 220ºC
Pluck the leaves of the spinach and discard the stem. Blanch for 30 seconds in a pot of boiling water. You should end up with about 1 cup cooked spinach. Press out the water from the spinach and set aside
Meanwhile, heat the cooking oil and sauté the minced onion for about 1 minute till translucent. Set aside.
In a large bowl, beat the eggs and low fat light cream till creamy. Gently stir in the cooked spinach, sautéed onion, grated cheddar cheese, salt and ground black pepper.
Stir well and pour the egg spinach mixture into the crumb pie crust
Bake at 180ºC for about 45 minutes
Cut into 8 triangular wedges to serve

Method
Lightly butter the 2 slices of whole meal bread
Spread the chili tuna mixture on the unbuttered side of one slice of bread. Top with the sliced cheese

• 3 red apples (peeled, cored and sliced into small pieces)

Method
Preheat oven to 180 degrees Celsius
Grease an 8–inch square baking pan
Whisk the vegetable oil, eggs, vanilla essence, and caster sugar until well combined and sugar has dissolved.
Then fold in the self-raising flour, baking soda, and fine salt. Stir the batter until well combined.
Lastly, gently stir in the cut apples.
Spread the batter into the greased baking pan
Bake for about 60 minutes, or the cake is set when a toothpick is inserted in the middle.
Lightly dust cake with icing sugar when cake has cooled (optional)

Method
To make salsa, combine onion, tomato, fish sauce, coriander leaves, and lemon juice in a small bowl and mix well. Set aside in the fridge to chill
To make the garlic cream sauce, combine mayo, garlic, salt, black pepper, and lemon juice in a small bowl. Mix well. Add more lemon juice if it’s too thick. The consistency should be thin.
Heat tortilla wrap on stove top or the oven or microwave.
Fill with the shredded lettuce. Top with fish and spoon salsa over top. Drizzle with Garlic Cream Sauce.

• 1 ½ cups strained dhal/lentil curry (leftover)
• ½ cups of soybean pulp (leftover)• 2 to 4 tbsp cornstarch• 1 tsp garlic powder• 1 tsp curry powder (optional)• Salt and pepper to taste• Burger buns (can use wholemeal for

Method
Strain lentil to remove excess liquid. Add okara, garlic powder, salt and pepper and simmer in a pan until mixture turns into a paste that can hold together. Add in cornstarch one tablespoon at a time until mixture can hold together well to form patty.
Shape mixture into patties and fry on an oiled heated pan until brown and fragrant. Turn the patties to cook the other side. Remove from fire.
Half burger buns, add in a handful vegetables and a couple of tomatoes. Add patties on top and drizzle with the sauce of your choice

Note: This recipe only can be done with leftover idlies. Not recommended for freshly made idlies. A very nutritious and easy to prepare Indian breakfast from leftovers. It’s low in calorie and good source of protein and fibre.
Method
Soak the idlies in water for a minute. Opt for this process if you’re using refrigerated idlies because it will be very dry thus can crumble easily. Just sprinkle a little water. Keep it aside.
Heat oil in a pan, add mustard seeds. When it splutters, add urad dal (ulunthu), dried red chillies, asafoetida, and curry leaves.
When dhal turns golden brown, add finely chopped onions, green chillies, ginger, turmeric powder, salt needed, and saute till onions turns transparent. Then add the crumbled idli and mix well. Check if you need to add more salt. Sugar is optional if you want to serve for kids, just sprinkle a small amount before serving.
Optional serving suggestion: Garnish with coriander leaves and serve with hot sambal or chutney. Otherwise, it’s good to be eaten just like that..

For vanilla sauce • 1 egg • 2 tablespoons butter, melted • 1 1/4 cups whole milk • 1 pinch salt • 1 tablespoon vanilla extract
Method
Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. Pour sauce over warm bread pudding, or serve on the side in a bowl.

A• 200 g low protein flour/bao flour• 110 ml warm water• 1 tsp yeast• 2 tbsp sugar
B• 50 g low protein flour/bao flour• 1/4 tsp salt• 1/2 tsp double-action baking
powder• ½ cup mashed pumpkin (leftover)• 35 g shortening
• 1 ½ cup yambeans filling (leftover)• A little oil for brushing• Flour for dusting
Method
Dissolve sugar with warm water and then mix in yeast. Set aside for 10 minutes.
Make a hole in the middle of the flour. Pour the yeast mixture in and knead until smooth. Cover and set aside for dough to ferment until it doubles in size.
When dough is ready, add in all ingredients in B. Knead until all are well combined. Divide into 12 equal portions.
Roll the portions into a ball and then flatten with a rolling pin. Add in leftover yambeans filling in the middle. Wrap the dough around the filling and make it into a ball. Cover loosely with clingwrap and proof for about 20-30 minutes or until the bao almost doubles.
Boil water in steamer and steam the bun for about 10-15 minutes in medium high heat. Remove and serve hot.

Method
3 cup of left over mashed potato being mix together with 2 tablespoons of flour, half an onion (finely chopped), and 2 pieces of left over bread (blended) and 1 eggs. Then, clip the mixture tightly on a celery stalk and grill it with oil on a hot pan. Make sure all sides are cooked evenly.
For Percik sauce: Mix 1 teaspoon of curry powder, 1 teaspoon of paprika powder, and 1 cup of yogurt with a pinch of salt.

Method
In a large bowl, crumble the leftover cake with your hands. Add 2 tbsp of frosting to the crumbled cake and mix with a spoon or your hands.
Shape the cake into balls and place them into the cake pop former. Make sure the cake ball is a little bit bigger than the size of the press. Once the cake ball is pressed tightly, remove extra cake from the sides and roll the ball with your hands to smooth any imperfections.

Once it’s melted well, add 1 1/2 tsp shortening and mix well with a whisk or fork. Then pour the melted candy into a tall narrow cup.
Once the cake pops have been in the freezer for 20 min, dip each into the cup and tilt to the sides slowly to make sure the entire cake pop is covered. Then slowly pull up the cake pop. (Don’t swirl the cake pop) Hold the cake pop in one hand and tap your wrist so that all the extra melted candy drips off.

A - For the stock• Scallion root - the bulb part of
scallion/green onions are usually thrown away and only the white and green leaves are used.
• Anchovies head - usually only the body are consumed as the head/innards are bitter
• Sweetcorn - Usually grilled sweetcorn are too dry to be cooked again thus I used the left over from a BBQ party, cut the corn away from the cob but keep the cob to boil.
B - Other ingredients• Corn from (A)• Leftover stir fried yee mee with
fishcake (from a family cook out)• Some miso paste (optional) or
soysauce. • Some minced chillie paste (optional)
Method
Boil (A) for 20 mins in 3-4 big bowls of water, simmer for 10 mins till all the flavours are out. Drain and remove all the anchovies head and corn cob (usually I let it cool down on a piece of newspaper, recycle as kitchen scraps for the garden since it does not contains any oil or salt). You can use this part as soup stock for any dishes and store in the fridge.
Since I always cook for just 1-2 person most days and when I get home late all tired from work, all I wanted is a simple heart warming food especially in the cold rainy days. Using this soup stock and adding it to (B) keeps me warm and full. Some days I like my soup a bit spicy and I would add the minced chillie paste and sometimes I add in miso paste and dried seaweeds or even an egg. It’s recipe that allows one to play around and add anything according to their mood and the weather.
Note: No need to add any salt/sugar or flavour enhancer.

Method

In a medium sauce pan, melt the butter and add the flour, salt, and pepper. While whisking, add in the milk gradually. Bring up to a simmer and cook whisking for two minutes.
Remove from heat and stir in the cheese until it melts. Add in the hot sauce.
Taste and adjust seasoning if needed. Add to the cauliflower/broccoli mix and stir.
