OUR HOME
The Adelaide Hills ´
HISTORY
Mount Lofty – the highest point in the Adelaide Hills – was named by Matthew Flinders when he circumnavigated the coastline of Australia in 1802. Settlers to the area soon followed from England,
Scotland, Wales, Ireland and Germany and many established villages such as Stirling, Crafers and Bridgewater. The cool, green park-like environment of the hills reminded them of home.
Arthur Hardy later planted the first vineyards in the Adelaide Hills right here at Mount Lofty House with Red Madeira. From there the Adelaide Hills Wine Region was born.
Jump forward to the 1970s and 1980s and enter a new group of pioneers including Brian Croser (Petaluma), Stephen George (Ashton Hills), Michael Hill Smith, Martin Shaw (Shaw & Smith) and Geoff
Weaver. Over the next 30 years the region became known for its premium, cool-climate wines.
More recently, it has become a mecca for small artisan winemakers keen to produce elegant, long lasting European style wines and push the boundaries to new heights.
The Basket Range kinfolk certainly pushes these frontiers with a range of styles offering elegant, fresh wines from organic provenance made with native yeasts and minimum sulphites. These are wines of
terroir reflecting the natural site of the vineyard and capturing the essence of the Hills.
Head south to Gumeracha, Ashton and into Piccadilly Valley and you’ll meet Chardonnay fanatics and pinot-philes alike. Nebbiolo from Gumeracha is not to be dismissed either, but leap to the opposite end at Macclesfield and you’ll not only discover this grape in abundance surrounded by brilliant Shiraz. Last
but not least, Méthode Traditionelle Sparkling and Pétillant Naturel (Petnat) are truly alive and well throughout these hills.
Quite simply, our wine-folk are a passionate breed that hone their skills to achieve the very best that the Adelaide Hills has to offer, and we are proud to call this place home.
PHILOSOPHY
The natural cellar underneath our restaurant is home to some cult wines from the great vintages of South Australia, Australia and the European classics. We also have an extensive selection of some of
the most interesting alternative varieties. Even if we live and breathe local, when it comes to wine, we strongly believe in diversity, therefore we
curate our list to support our growers, winemakers and suppliers from across Australia who work tirelessly to provide sommeliers with wines that are a narrative to the global landscape in which we are
evolving.
A winelist is, foremost, a story telling of all the various geographic viticultural regions; it reflects the Head Sommelier’s vision to capture the essence of her passion for the industry and an essential tool to pair with the fine South Australian cuisine thoughtfully crafted by our Head Chef, Jin Choi. It is home to a growing representation of some cellared and museum wines that we want to see age beautifully over
the years. The list is a book in progress of human stories, travels and experiences. We invite you to embark on a journey that will inspire you to explore deeper.

2021 Ngeringa Petillant Naturel Syrah, Adelaide Hills SA 18 This lightly bubbly Rosé has a delicious nose of exotic flowers and musk, pithy grapefruit, blood orange and citrus blossom. On the palate there is a mixed fruit salad experience that is light, refreshingly fruity, with a dry, textured finish.
NV Roger Pouillon Reserve Brut Pinot Noir Pinot Meunier Chardonnay, Mareuil-sur-Aÿ Champagne 46 50% from base 2016 with 50% reserve of which 35% is from vintage 2015 with the rest from a perpetual reserve blend that has begun in 1990. 65% Pinot Noir, 20% Pinot Meunier, 15% Chardonnay. RS3.5 The perfect introduction to Pouillon’s wines, yet, far from an entry level. This gives you an insight into just how much personality and vitality his wines have. Balancing a hint of oxidative character with delicious fruit with great length and depth, the Reserve Brut represents a little splash of fruit across most of Pouillon’s holdings. The blend of Pinot, Meunier and Chardonnay is expertly integrated. Fabrice truly gets élévage. This is an incredibly complex, layered and beautiful Champagne. Such length combined with a refined texture.

It instantly opens with vivid aromas of orange blossom, white peach, tangerine, white flowers, flint, and some hints of vanilla. It has a beautiful waxy texture, balanced by a flash of bright acidity which leads into the long delicious finish.

2021 Hochkirch Tarrington Vineyards Chardonnay, Henty VIC 32 A wine outperforming its price point with beautiful complexity and extraordinary quality. Textural and intricate, thjs Chardonnay has tension and detail, is medium bodied with layers of orchard fruits, subtle cream and hints of wood. Round in the mouth, with great amplitude, this shows how Chardonnay can really be the grape of the artist winemaker.

2011 Domaine Rolet Arbois Vin Jaune Savagnin, Jura France (62cl) 42 How can this wine taste so complex? It must be something else, it must be something to do with time. Time heals, time creates, time kills. You can feel all of these simultaneously as you sip this intriguing oxidative wine. Indeed, a Vin Jaune is a peculiar wine achieved with the help of time and oxygen. After being in barrels that are not topped up for 6 years and 3 months, there is a space created within the barrel where the wine becomes exposed to oxygen and develops a layer of yeast (sous voile) just like Fino sherry, but unlike Sherry, it is not fortified. The barrel loses 38% of its content during this time and the rest of the precious liquid develops this distinctive flavour of saffron, curry leaf, turmeric, roasted hazelnut, well developed walnut, dried white fruit, preserved lemon, dried figs, wild mushroom and a spicy ginger-y concoction. Savour this with 18 months (or more) aged Comte or any aged hard cheese with nutty flavours.

It's no surprise then that the result is a wine of impressive depth and complexity. Expect a super-mineral, earthy, rocky wine with waves of racy citrus and fresh nectarine fruit and lots of flinty, talc-like, salty complexity, then a delicious lick of smoky Pinot breadiness to close. SPARKLING Champagne France’s most celebrated and celebratory wine region - whose very name is a synonym for the good life is undergoing a renaissance. Once completely dominated by large houses - the Grandes Marques - it is enjoying an explosion in the number of independent grower producers who are challenging the status quo and re-defining what Champagne is. Rather than sell their fruit to the Grand Marques, they are electing to make their own distinctive and regionally expressive Champagne. Grower Champagne. A now established and flourishing idiom for the Old World – slick new labels and progressive minds. This means the wines are more approachable at an earlier stage than when Prévost used to only work single vintage single parcelle. This first release of La Closerie (not Les Beguines) is a blend of 80% from 2018 and 20% reserve wine from 2017, vinified à la Prévost—without any inoculation and in large format oak. Dosage is just two grams per litre. This will be a cuvée that will allow Prévost to experiment more than normal. 20% of the fruit comes from Les Béguines and 80% from other sites in Gueux. This makes for a layered, seductive palate throwing up baked apple, ripe nectarine, hay and loads of cardamom and nettle spice.

It offers a seductive nose characterised by ripe fruit. The palate is vinous and dynamic, positively bursting with fruit (apple, grape and small red berries).

Our Obsession
There is no other white grape variety that gives us as much excitement as Chenin Blanc does. The greatness of this grape comes from its versatility, its purity and its ability to express different terroirs with incisive
precision. It is also one of the most age worthy whites, with a flavour profile that will grow in complexity with time. Some of the most striking elements of this godsend grape is its natural acidity and intense minerality. We often think of
Chablis or Riesling from the Mosel when we talk of minerality, and Chenin Blanc sits amongst the same royalty when it is grown in some of the greatest terroirs.
When Chenin Blanc is grown on chalky and steep rocky soils such as silex, it makes a flinty wine with more vertical and mineral depth. The energy and purity of these wines are undoubtedly some of
their most unique qualities.

In the recent years, we are seeing more and more producers sourcing fruit from other regions than their own, experimenting with different styles altogether and creating new typicities and expectations, hence broadening people’s
apprecation of wine by pushing the limits of the AOC. If this was done a few decades ago, it would be frowned upon and considered a low quality wine like a simplistic Vin de
Table, but declassifying wines to Vin de France isn’t a sacrilege to quality anymore. In fact, Jean Francois Ganevat, famous vigneron from the Jura, was one of the first to start blending fruit from other
regions and make fine, elegant and complex wines that were sought out almost immediately. The idea is if the fruit is in good hands, then the resulting wine, irrespective of where the fruit is from, will be good. Any why should one hold back
from one’s creativity ? Following Ganevat’s steps, are a few producers now who are increasing their production by opening up to this idea and
creating surprising wines with a very New World appraoch. A pleasure for wine drinkers to discover and enjoy.

Domaine des Ardoisières is the reference when it comes to Savoie. Since founded in 1998, these wines have reached cult status. Terroir driven, these wines aren’t masked by new oak, they are a true expression of the place, the soils and the

BK WINES – the small artisan who has developed a cult following in the last three years. BK Wines is one of our favourite small wineries in the Basket Range sub region of the Adelaide Hills. They have no cellar door. And since about two years now, it has become quite hard to get good quantity of their wines as they sell out as soon as they release. BK Wines are wines hand made by husband-and-wife Brendon and Kirstyn and have developed a cult following in Australia and Japan. Brendon is one of the most talented winemakers I have met in my career. The precision in his Chardonnays has really raised the quality now expected from Adelaide Hills. In fact, I think his wines are world class. I have spent many hours tasting with Brendon. We have drunk many Burgundies and Jura together. He has a phenomenal palate and I am fascinated by how he is able to capture what he likes best in Burgundy and Jura into his own wines. Chardonnay isn’t an aromatic variety; it is a canvas to the creativity of the winemaker. TAPANAPPA – Adelaide Hills Classic Chardonnay Located in sight just below our perch here on Mount Lofty, in the postcard perfect Piccadilly Valley is the Tiers Chardonnay Vineyard. A living South Australian viticulture icon and treasure. First planted by Brian Croser in 1979 with further plantings in 1981 it remains one of the oldest and most favorably sited vineyards in the Adelaide Hills, consistently producing superb renditions of this, the premier white variety for the Hills, Chardonnay. Tapanappa 1.5m Tiers Vineyard In 2003, the 1979 planting was ripped up and replanted with different clones on a tight 1.5M₂ spacing between vines, then trained on a low fruiting wire, adopting Grand Cru Burgundy viticultural best practice. Vinification is identical to The Tiers. 2015 is the inaugural release of this separate bottling

Chablis is a region well known for its Kimmerigean soils across all vineyards, except with a bigger proportion of Portlandian soils in Petit Chablis. So what actually differentiates the taste of the wines from one vineyard to another in Chablis is the exposition and how steep the vines are sitting. First of all, vintage 2018 was a much warmer year than 2017 and even warmer than 2016. There wasn’t as much frost and hailstorm neither, quite a lot of rain during winter with a very warm summer. 2018 is a year of generosity, a vintage you probably want to drink before some 2016 and the much cooler 2014 vintage.
2019 Vaillons Premier Cru 185 This vineyard is more on the fruit than the mineral side. It is opulent and rich thanks to the good exposure of the vines to the sun, this taste more like a Burgundy than a Chablis.
2018 Vaulorent Premier Cru 275 Vaulorent is situated next to Les Preuses Grand Cru. It strikes the perfect balance between Mont de Milieu and Montée de Tonnerre. Even if Vaulorent is sitting next to where all the Grands Crus start, the vineyard isn’t facing south, it is instead facing slightly west, so it doesn’t have the same depth as the Grands Crus vineyards. That being said, for a premier cru, it is excellent and has great potential to age.
2018 Montée de Tonnerre Premier Cru 265 This is on the other side of Fourchaume from across the Grands Crus coteaux. More balance between fruit and minerality, showing both restraint and power but slightly lacking depth due to youthfulness.
2018 Valmur Grand Cru 395 Valmur seems to encompass both the richness of Vaudésir and the minerality of Bougros, therefore it is not as rich as Vaudésir.
2018 Vaudésir Grand Cru 395 Slightly bigger than Bougros, it is facing plain south. The wine is vinous, has more honeyed aromas and satin-like texture without the piercing minerality. The minerality comes across in a more expansive manner !
2018 Bougros Cote de Bouguerots Grand Cru 450 This is a vineyard owned by two producers only. William Fèvre owns half of it. It is a very steep vineyard which means that the water never stays in the soil as opposed to Bougros, which is why there is more iodine and saltiness in Bouguerots.

JURA The Smallest Wine District in France
Jura is a region squeezed between Burgundy and Switzerland. It is one of the lesser known regions but is becoming more popular for its distinct expression of nutty, saline and oxidative whites. Some say that it is almost a cross between Burgundy and Sherry. Jura is a somewhat idiosyncratic region but well known for producing the famous Comté cheese. Drinking a Vin Jaune with a piece of 24-months aged Comté is a must try for anyone who is into the finer things in life – the art de vivre as the French will say. The native grapes of the region are Savagnin for white and Trousseau and Poulsard for red, but there are also Chardonnay and Pinot Noir, although their expression differs much from Burgundy. Le Vin Jaune is really what made Jura known in the first place. Made from riper Savagnin grapes, the wine undergoes a long ageing of six and a half years in barrel without being topped up, before being bottled in the classic and unique-to-the-region 62cl bottles called Clavelin. The part of the wine that evaporates during this extensive ageing is never replaced (non ouillé). Whatever remains in the barrel is exposed to air, therefore developing a layer of flor(called voile, but thinner than in Jerez), similar to Sherry (but unlike Sherry, it is not fortified). The temperature of Jura is also much cooler than Jerez, ensuring a very slow oxidation. The resulting wine has complex flavours of walnuts, hazelnuts, almonds and spices. The dry wines (ouillé) of the region has recently been more exciting to work with for sommeliers around the world. Even though Jura is only an hour’s drive from Burgundy, the landscape, soils, climate and wines are markedly different. Our supplier Greg Murphy explains the wine as tropical, comte rind, musky and moody, with the signature ammonia funk and lift usually found in Celine’s wines. Lots of Jura meadow, dried pineapple with nuts drenched in lemon. It’s a little richer than normal with tamed acidity but still undeniably Jurassic. It finishes with flavours of raw almond, soy umami and ripe cheese.

MULTI REGIONAL BLENDS France
In the recent years, we are seeing more and more producers sourcing fruit from other regions than their own, experimenting with different styles altogether and creating new typicities and expectations, hence broadening people’s
apprecation of wine by pushing the limits of the AOC. If this was done a few decades ago, it would be frowned upon and considered a low quality wine like a simplistic Vin de
Table, but declassifying wines to Vin de France isn’t a sacrilege to quality anymore. In fact, Jean Francois Ganevat, famous vigneron from the Jura, was one of the first to start blending fruit from other
regions and make fine, elegant and complex wines that were sought out almost immediately. The idea is if the fruit is in good hands, then the resulting wine, irrespective of where the fruit is from, will be good. Any why should one hold back
from one’s creativity? Following Ganevat’s steps, are a few producers now who are increasing their production by opening up to this idea and
creating surprising wines with a very New World appraoch. A pleasure for wine drinkers to discover and enjoy.
2019 Anne & Jean François Ganevat J’en Veux Encore 195 A cross of Gamay from Beaujolais with a blend of native Jurassic varietals. This is a playful light red, almost like a dark rosé, but you will find more structure on the palate than expected.
2019 Patrice Beguet Les Vins de L’Âme Ours Fresh Impressions Rouge 105 Les Vins de L’Âme Ours literally means the wines of the bear’s soul but when you say this sentence in French without looking at the spelling, it sounds more like ‘the wine of love’ L’Âme Ours (soul of the bear) equals to L’Amour (love) and, as we might suspect, the romantic French producers have a thing for puns, and damn, they are good at that! Fresh Impressions is a blend of 60% Grenache from Mont Ventoux, 30% Gamay from the Loire, 10% Ploussard from Patrick’s own vineyards in the Jura. 80% direct pressed. 20% maceration in stainless.

JEAN FOILLARD BEAUJOLAIS – One Of The Leading Cult Producers in France. Early on, Jean began to follow the teachings of Jules Chauvet, a traditionalist who defied everything that the more commercial brands were touting in the region. Jean and three other local vignerons, Marcel Lapierre, Jean-Paul Thévenet, and Guy Breton, soon joined in on the movement. This Gang of Four, as Kermit Lynch christened them, called for a return to the old practices of viticulture and vinification: starting with old vines, never using synthetic herbicides or pesticides, harvesting late, rigorously sorting to remove all but the healthiest grapes, adding minimal doses of sulfur dioxide or none at all, and refusing both chaptalization and filtration. The end result allows Morgon to express itself naturally, as it should be without the bubblegum and banana aromas of so many other Beaujolais available today. Its rustic structure, spicy notes, and mineral-laden backbone are what real Morgon is all about.

PHILIPPE PACALET – one of the greatest! I believe Philippe Pacalet is to Burgundy what Jean Foillard is to Beaujolais. In fact, Philippe is the nephew of the great Marcel Lapierre, one of the godfathers of the natural wine movement in Beaujolais. Nobody else’s wines taste like Marcel. If you can grab a book about Jules Chauvet, who is the father of the natural wine movement in France, a lot will start making sense. Chauvet was a winemaker, a researcher, a chemist, and a viticultural prophet.

I know I just mentioned four names in a sentence but please, bear with me!
“It was he who, upon the advent of chemical fertilizers and pesticides in the 1950s, first spoke out for “natural wine,” harkening back to the traditional methods of the Beaujolais. Joined by local vignerons Guy Breton, Jean-Paul Thévenet, and Jean Foillard, Marcel spearheaded a group that soon took up the torch of this movement.” – Kermit Lynch Wine Merchant
There you go! No great movement is achieved by one person only. Pacalet is one of the prodigies of what Kermit Lynch coins as the Gang of Four. Four visionaries militating against a very industrial notion of winemaking; these influential producers were first and foremost environmentalists – and rose above the comfort and ignorance in which people were imbibing wine without necessarily thinking of provenance and organic practices. It was booze, it was liquor, it was wine, it was tasty and that was it!
I was very lucky to visit Mathieu, son of Marcel Lapierre in July 2019, before the madness of Covid-19. I must say, it was indeed one of the most unforgettable tasting experiences. To be around such heritage and intellectuality, but also, part of an inclusive environment with tons of humility, I remember it as being a very warm encounter. One of the special moments that remind me every day why I love doing what I do.
And Mathieu Lapierre and Philippe Pacalet are family and their philosophy isn’t about being dogmatic or dividing. I was due to visit Philippe in 2020 but that never happened (we all know why).

The first wine I tasted from him was an unsuspecting Semillon from Hunter Valley that gave me that eyebrow raising effect. I had never tasted that style of Hunter Sem. And when I got around the wines he was making in South Australia, I was especially intrigued by his Blewitt Springs Grenache. I saw that style again, Corbett’s style, which I would describe as wines with phenolic richness without the alcohol, a rendition that really challenges the notion of Australian Grenache as alcoholic and bonbon-like. Instead, the savouriness, the tannins and colour almost drove me towards a Barbaresco. A few years ago, I used to host groups of international sommeliers brought in to the country by Wine Australia. I was to only serve Australian wines and Vanguardist was always one of my picks to impress them on the quality and elegance of reds being produced in South Australia. Today, the Rende Grenache is the top tier of his range. Only 600 bottles produced.
Gary Walsh from The Winefront says it is the benchmark for Grenache. That is a big call.

« Alkina is a new story in an old place. It is a journey through ancient stones and soils, organic and biodynamic viticulture, small scale winemaking and the creation of unique micro-terroir wines, all grown and made on the estate in the Western
Barossa ranges. ‘ALKINA’ is an Indigenous Australian girl’s name meaning ‘Moon’ or ‘Moonlight’. This name embodies the respect for the
land and the many forces of nature that we work with to bring life, energy and authenticity to our wines.» When we went to visit Amelia and her crew in Greenock beginning of March 2021, the first thing that struck us was the
‘paysage’. Even if this is a new place, it had the character and authenticity of an old world. We could sense a strong identity. There was an energy there that set the mood. The pastel colours, the artwork, the stonewalls and timber, the beautiful cellar door where we could have comfortably spent hours savouring the pleasure of such cerebral wines, the
complex vineyards, and last but not least, the small but stellar winery filled with georgian and concrete eggs – all aspects of it communicated the beginning of a Barossan landmark.
Alkina is a story which you won’t hear every day. It is truly special. They have a concept called the Polygon. Essentially, they don’t necessarily pick the grapes from row to row but according to the soils in which the vine resides. They really do make wines that speak of the place. We hear the word ‘terroir’ being overused at times. It has even become a trend in an
attempt to promote sales but, the true concept of terroir is only understood by a few. Microbial health of the soils to promote life and let nature look after nature also means going beyond the sustainable approach towards regenerative farming. One key word is ‘biodiversity’. Another one is ‘rock’. There is much more in a rock than we can imagine. When
the vine root finds it and extracts from it the compounds that will then turn into fruit with the energy of the sun, with no intervention in between, except from man accompanying the process of fermentation, it becomes pretty fascinating to
witness nature’s elaborative work. Alkina celebrates that and we are honoured to share their story and wines with you.

2019 Alkina Polygon 1 Shiraz 475 This 0.4 hectare polygon is part of the Old Quarter of the vineyard and was split into four distinct parcels by our terroir specialist, Pedro Parra, during his second visit in 2018. Three parcels of vines sit on heavily fractured micaceous schist. One small area of 0.097 hectares in the middle lacks this schist content and is excluded from the ferment. NASAA certified organic and biodynamic.
A layered and extremely complex wine where pepper and Asian spice complement a vital core of cool red and black fruit and beautifully shaped tannin.

2018 Alkina Polygon 3 Grenache 550 Polygon No. 3 is just 0.274 hectares in size and contains approximately 200 vines. Working with terroir specialist, Pedro Parra, we identified this polygon to be unique in its limestone content. There is shallow red brown earth over deep chalky sedimentary limestone which contains fractured schist and the limited presence of iron. NASAA certified organic and biodynamic. An ethereal, lifted style with complex red fruit and spice overlaid on a rocky foundation and a great sense of energy on the palate

2018 Alkina Polygon 5 Grenache 550 No. 5 consists of two very similar nearby parcels making up 0.37 hectares in size. Working with terroir specialist, Pedro Parra, we identified this polygon to be uniquely significant because of its heavily fractured schist composition. There are deeper soils sitting above a thick band of micaceous schist that contains veins of iron-rich clay within the fractures. NASAA certified organic and biodynamic. Wild in nature and darker in fruit complexion, this is a structured and intense wine with great tension and svelte, mouth-coating tannins.

When Kieron received us at this beautiful small cellar door, we were immediately charmed by the rustic cottage house setup they have as a tasting room. The wines were befitting of the place. Luscious with tons of fruits – very much typical of the Barossa – ripe with spice. The tannins were seamless on all the wines we tasted. These wines are simply gorgeous and Kieron’s jaw-dropping knowledge of the history of the settlement of the Barossan wine community heightened our experience as well as gave a true dimension to the individual wines. They are all different but all had something in common too; you could tell there is a style true to Greenock Creek with these notes of liquorice, baked cherries, cassis, blackberries and stewed rhubarb.

The release of the new vintage of the Henschke’s iconic Hill of Grace is something I always look forward to. This is a wine of world-class sophistication and to think that this vineyard is in our own backyard, it’s virtually like living close by
Hermitage and Côte Rôtie – some of the world’s best vineyards for Shiraz. As a matter of fact, if I had to take any Australian wines with me to Europe to show them our savoir-faire, the Hill of Grace would be one of them.
After five years of working as a sommelier in Adelaide, I am honoured to have befriended the Henschke family.
Let’s step back a bit. I remember very well when I used to work with their wines in luxury resorts in Mauritius and the Seychelles almost a decade ago, we used to refer to their wines as the Petrus of Australia (the Cyril cuvée in particular).
The elegance in the wines was always the driving force behind my enthusiasm for showcasing these wines to my clientele. The balance between the power of the fruit, the structure of the wine and the tannins were what really impressed me, especially when working mostly with European wines. It didn’t carry the huge ripeness we often
encountered with some of the warmer climate new world wines. Instead, the reds were always so- generous but with restraint. The best of both worlds.

EDEN VALLEY, SOUTH AUSTRALIA
I often found that my guests would revel in the fruit-driven style of Henschke which satisfied the thirst for a great red, rather than the uncertainty of a moody European red that could possibly never really open. Fast forward many years later, I am now working in South Australia’s top luxury destination, only 45 minutes’ drive from the home of Henschke. If you had asked me a few years ago, I couldn’t have told you that I would find myself living in one of the Great Wine Capitals of the World. When I flew from Mauritius and came over in 2015, I was thrilled to be able to visit all the great Australian wines I had the opportunity to work with, including Grosset, Torbreck, d’Arenberg and Penfolds amongst a few.
What was also really exciting was that I came at a point when there was a big movement in smaller artisan wineries, younger generation making wines differently from what I have experienced Australian wines to be, pushing the
boundaries a little further and creating some of the most interesting expressions I was yet to discover coming from Australia.
That being said, even after more than 150 years of winemaking history, Henschke was also at the forefront of this movement highlighting the importance of viticulture and organic farming thanks to Prue Henschke. My first visit to the
Hill of Grace vineyard with Justine and Prue was in 2018.
I am always fascinated by what I learn in the vineyard as a lot of things start to make sense when you think of the process it takes from vine to wine.
When you stand atop a hill where the vines grow, you can understand the geographic importance of its location – to see whether the vineyard benefits from the morning or the afternoon sun, to feel the direction of the wind, to observe
the surrounding flora and fauna that comprise of the natural environment and influence in which it evolves. Prue helped me understand why it was important to observe the surrounding. Great wines aren’t possible if it doesn’t start
at the cradle – the soils, the agriculture of it all. For too long, people have been consuming wine without thinking of provenance. People like Prue have been a major force in bringing that awareness to us.
She elaborated her meticulous work with experimenting with new fruiting wire systems along with the use of
biodynamic preparations and mulching under vine. She says she wants to create a natural environment so that nature can look after nature. When human intervenes with nature, it is also our duty to restore that balance, and that takes
time. A long time. Sadly, not everyone has the same dedication to pursing sustainable practices. This is where you draw the line between viticulture and the quality of the wine.
My visit confirmed that this was indeed a hallowed ground as mysterious as some of the top vineyards in Burgundy.

After bracing quite a chilly spring morning, we headed back into the cellars to taste the wines. The cellars were loaded with history. You could sense that this was an important place that has shaped a big part of the evolution of the
Australian wine industry. There is context, old soils, old vines and more than 150 years of winemaking experience. That much history is rare in the new world – and the Henschke family will keep passing on to successive generations the
wisdom of their fathers and mothers.

This release marked the 150th anniversary of Henschke. The top wine of the estate needs time in the decanter, especially at the tender age of five years. I enjoy tasting wines in their youth to see the potential and see how they
evolve with time. Also, when you are about to taste a wine that comes from the best shiraz vineyard in the country, it is bound to make you stop everything and really take your time to be in its presence entirely.
One of the things I enjoy the most with being in charge of Arthur’s cellar at Hardy’s Verandah is to be the guardian of a prestigious wine collection and see them over time with both the team and our guests.
The first release of HoG was in 1958. The wine has since been made every year with some truly exceptional vintages like the 1959, 1972, 1978, 2002, 2015, 2016 with some excellent ones being 2008, 2009 and 2004. The 2013 has
concentration, power and generosity. Brown spices, florals like violets, roasted coffee, vanilla, cherries and cassis notes woven around a supple texture with superb length.

The context in which I had the chance to taste this 100-point wine was one I am not ready to forget about. I was also lucky to be one of the very first people to taste this truly exceptional wine. We were confined during the Covid-19 but
still able to serve in-room fine dining to our guests at the Sequoia lodges. Justine came in as one of our guests and brought the 2015 with her. I have only just heard that it scored 100 points by James Suckling.
The fruit was handpicked from the 17-26 of March 2015 with the final pick taking place a week before the harvest moon of Easter. According to 5th generation winemaker Stephen Henschke, harvesting close to the full moon is
optimum for fruit ripeness and quality.
This reminds me of the conversations I usually have during my visits to France, with winegrowers who work around the calendar of the moon, like Thierry Germain from Saumur Champigny. There is a certain mystery about how this
symbiosis between the moon and the vines takes place. When you think that the moon can displace entire oceans between high and low tides and the influence it has on living things, it doesn’t come as a shock that it would be a
contributing factor to the decisions farmers and winegrowers make along the growth cycle of the vines from pruning to picking. But only a few really take the time to understand the intricacies of biodynamic farming – the teachings of
Rudolf Steiner (1861-1925), founder of the biodynamic approach to agriculture – which saved us from the very mechanistic view of nature which started taking hold in agriculture in the early 1900s.
I was surprised to see the colour of the wine. It wasn’t as dark and brooding as I had expected. The glass was luminous and the wine so vivacious – looking more like a red Burgundy than a dark Shiraz. I could definitely taste the gentleness of the hand of the winemaker. There is this purity of fruit. It is a wine that glows in transparency and elegance showing a sense of place; it is a wine of terroir. As the wine unwinds across the palate, there is a growing momentum, an added
layer that comes with every sip. Eden Valley allows Shiraz to ripen slowly, therefore the grapes become mature and have phenolic richness without the big alcohol factor. The natural acidity is highlighted brilliantly, and the fragrance is
quite intoxicatingly sensual. Texture of velvet comes to mind, the touch of suede…
To think these vines have been planted in 1860 does make you tremble a little at the greatness of this enchanting work of art.

Encompassing everything the Samuel & Sons family stands for and the perfect representation of their history and ethos, The Signature is a sentimental favourite. A classic Australian blend of Cabernet Sauvignon and Shiraz, the
first vintage release of The Signature was in 1962. Since then, this outstanding wine has acknowledged more than 57 Signatories; people who have enhanced the
traditions and culture of Yalumba. The majority of the Cabernet Sauvignon components were sourced from four vineyards in the Barossa Valley. The diversity of their vineyard selection provides the rich, lifted Cabernet Sauvignon aromatics and palate structure for
which The Signature is renowned. The Shiraz components include plantings of varying vine age, the oldest were planted in 1925.

The result was the Bordeaux Wine Official Classification of 1855 when Brokers from the wine industry ranked the wines according to a château's reputation and trading price, which at that time was directly related to quality. 2009 Château Bellevue-Mondotte St Emilion Grand Cru 995 This is a tiny jewel in the empire of entrepreneur and quality conscious Bordeaux visionary, Gerard Perse. It is a 5-acre parcel of nearly 50-year old vines planted on pure limestone at an elevation above that of his neighbouring property, Pavie-Decesse, not far from Pavie-Macquin. Bellevue Mondotte is generally a blend of approximately 90% Merlot and 10% Cabernet Franc and Cabernet Sauvignon. Since Perse got control of this estate and renovated the cellars, he has been draconian in reducing yields, which were a mere 22 hectoliters per hectare in 2009. The fruit was picked very ripe and the wine was fermented in oak tanks with malolactic in barrel, aged on its lees (a la Burgundy), and bottled unfined and unfiltered. At all the Perse properties the wine stays in oak about six months longer than at other Bordeaux estates.

Only about 500 cases of this 100% Merlot are made. With notes of blueberry and blackberry liqueur intermixed with graphite and spring flowers, this wine is absolutely massive and not for everybody, but it is an example of what a conscientious and driven producer pushing the envelope can do in a satellite appellation such as Lalande de Pomerol.

2013 Akishika Shuzō Kobo #7 Osaka 20 38 76 This is a special limited edition of the Kobo #7, that has been specially aged at the brewery for 7 years before its release in 2018. Made with Yamada Nishiki often given the moniker ‘King of Sake Rice’, polished to 70%. This shows a rich, complex character. Kobo #7 has a honeyed aroma and a complex palate with initial sweetness that is followed by a spicy, savoury mid palate and a long dry finish. 2000 Mukai Shuzo ‘Natsu no Omoide’ Kyoto 28 56 112 Imagine a dry Oloroso Sherry but in a Sake dress. This exceptional oxidative style of sake is one of the most complex rice wine you could possibly taste. Complex nose, umami rich palate of sweet and sour apricot, prune and vanilla. The finish is long, dry and complex with bitter caramel and woody nuances.

Grappa Levi Serafino "Grappa Levi" is created from the vinaccia of great Piemontese DOC and DOCG wines. Once the grapes have been pressed for their juices, the skins, seeds and pulp (the vinaccia) are transported from the hillsides to the, where they are collected and fermented. The vinaccia is then distilled in the historic direct-fire copper alembic still––the only grappa still produced using this ancient method of heating. The fully-extracted vinaccia is then pressed and sun-dried. The following year, these bricks are used to fire the still, thus completing the energy-neutral system. Meanwhile the grappa is rolled out of the distillery in-barrel, to be aged for up to 12 years before bottling. These grappas are full of character, robust yet aromatic, the Grappa di Romano Levi is best enjoyed neat, from a wine glass, and usually after midday.
2019 Levi Serafino Barolo 20 2018 Levi Serafino Barbaresco 20 From the appellation of Barbaresco in Italy, this grappa is distilled once from the must of Nebbiolo grapes. It is then aged for four years in old oak barrels. When you let this grappa open up in your glass it truly makes you think of the red fruits of Nebbiolo! It truly evolves constantly in the glass and has such a luscious, rich mouthfeel. 2018 Levi Serafino Moscato 20 Produced primarily from vinacce sourced from Dante Rivetti, sweet florals of roses and orange blossom are tempered by a cardamom spice and red and orange citrus with a savoury edge.
2018 Levi Serafino Bianca 18 2018 Levi Serafino Camomilla 20 Named in honour of Romano’s sister, Lidia who invented this recipe. Heads of chamomile flowers are macerated in the grappa producing rich and delightful notes with a gentle softness on the palate.
