As well as complying with regulations in force for food colorants, we take things that extra step further.

We have been 100% azo-free from day one and we have always refused to include any controversial ingredients in our recipes. In 2017, as research into suspected carcinogen titanium dioxide* (E171) was underway, we took a lead by designing all our new products to ensure they are titanium dioxide-free and only use natural colorants for our printed creations.

We have continued to factor our ethical responsibilities into our decision-making, which is why we are now proud to present a 100% responsible range of printed decorations.

All the chocolate decorations and transfers in our standard range are now printed with colorants of 100% natural origins, as well as being 100% azo-free and 100% nanoparticle-free.

Our graphic designers now offer you the best alternative for your customized decorations, meaning they are 100% natural, 100% azo-free, 100% nanoparticle-free, and 100% titanium dioxide-free.

Because we are determined to provide you with a complete range of 100% responsible decorations, we are now able to offer you new cocoa butter-based colored powders and preparations. We are actively researching natural alternatives for our other complementary products such as sprays and colored crunchy pearls.

Food coloring is used to give a food product a particular color. There are three families of food colorants: Studies are currently being carried out into some synthetic and artificial colorants that may have harmful effects on human health.

Natural Colorant

Artificial colors are colorants created via a chemical reaction that has no equivalent in nature.

Illustration: Banana/kiwi flavor, for example, will be entirely artificial as this flavor does not naturally occur.

Azo dyes are artificial colorants used to achieve bright, vibrant colors.

Azo dyes can cause hyperactivity in children if they are consumed in large quantities.

A synthetic colorant is a colorant that exists in nature, but can be recreated industrially using a chemical reaction.

Illustration: Synthetic banana flavor is recreated in a lab using chemical ingredients.

E171 – or titanium dioxide – exists as a natural mineral, but it can also be created synthetically and can be used to provide an opaque white color.

E 172 – or iron oxide – is a yellow, red, black or sparkling color additive, which is created synthetically by combining iron with an oxide.

These two synthetic colorants are currently being researched in-depth as they can contain ultra-fine particles (known as nanoparticles) that are believed to potentially be carcinogenic.

At Valrhona Signature, a team of designers pours all its artistic flair and expertise into

bringing ideas to life.

Our designers all have their own unique yet complementary artistic sensibilities and skills,

and are on hand whatever your needs.

HER ROLE:As a product designer, her job is to help customers to create their molds. Using 3D design, models and even prototypes, she comes up with physical solutions that solve her clients’ issues or achieve their aims.

HER KEY STRENGTH: She boasts some truly specialist expertise and can easily explain the best, most evocative form for her clients’ projects to take.

HER ROLE: Sandra is a graphic designer. Covering everything from drawing up creative briefs to creating films for printing designs onto chocolate, she turns clients’ hopes into a reality, taking care to replicate their expectations as accurately as she can while factoring in all the relevant technical concerns.

HER KEY STRENGTH: Her great experience has given her the skills she needs to manage a project from A to Z, but her appetite for new challenges is what drives her to find new ways of giving clients what they want.

The more moisture it absorbs, the more it loses its shine and crunch, and the whiter it gets. Jérémie Runel is an idiosyncratic young kitchen maestro who is using his bold creative flair to turn up the heat in the world of ice cream-making. Having worked as a pastry chef for 15 years before donning his ice cream maker’s jacket, Jérémie has just one aim when designing his creations: Capturing great flavor.

At La Fabrique Givrée, he capitalizes on traditional, rural know-how in his quest for fine flavors, selecting his supplies from small local producers and working in step with the seasons.

During the festive season, this young chef reconnects with his luxury pastry-making ways to design products that diners can share as a family and that showcase his mastery of flavor and texture. Valrhona Signature has worked with La Fabrique Givrée’s graphic designer, Aurelien Bailly, to create an original Yule log in the modern and inspired form of an origami-style Christmas tree that comes in five flavors – And with its own map!

Upholding a long-standing family tradition of chocolate expertise, Jean-Charles Lafitau’s creative craftsmanship is put to use in creating contemporary, indulgent delicacies that beautifully showcase the raw materials used.

As well as using local, seasonal produce in his creations, he wanted to take his responsible pastry-making methodology a step further by only using printed decorations made with 100% natural colorants.

Having already customized some of his day-to-day products, Jean-Charles placed his trust in Valrhona Signature once again to help him dream up a custom festive design. He worked on some ideas with our designers and, together, they created a white chocolate star decked out in traditional motifs to add some sparkle to his Christmas range.

Kevin Lacote is an independent pastry chef with his own tearoom and patisserie right in the heart of Paris. Kevin has worked alongside industry greats such as Fabrice Lecleir, Yannick Tranchant, Nicolas Sale and the famous Yannick Alleno to create pastries bursting with character, audacity and creativity.

He has made sure his pastry kitchen is visible from the takeout and tearoom sections of his store, as this gives him a simple, elegant way of sharing his passion for luxury pastries.

He selected Valrhona Signature to work with him on a customized bar project. “I wanted to make some homemade-style chocolate bars using the pastry kitchen’s glasswork and logo.” His new bar range features two classic luxury chocolates and two original creations.
