We start 2021 with a renewed sense of purpose and ready to recognise and celebrate the wonderful Cater Care people, and our community.

There is so much in this edition; career goals achieved, service milestones reached, an exciting result with our Caring In The Community program, a site team’s five-year fundraising success, and recognising our part in a win for the environment.

We are celebrating new sites, people, customers, and Cater Care’s innovation for continued growth – meet the business development team on page 9!

The Food Team has developed a delicious Taste of Autumn recipe with a difference and a twist on a classic - the ANZAC biscuit.

As we embark on 2021, there is optimism in the air that we will progressively be enjoying greater freedoms to travel and socialise as the COVID vaccine roll out gets underway. As service providers, the most important thing for us to be thinking about is our customers’ future expectations and how we will be delivering consistent quality services, safely.

Cater Care aspire to a culture of Enabling Safety. This means that we will continually provide knowledge and information to enable us to demonstrate great safety behaviours in everything that we do throughout our working day. Commencing in January, our Safety Team launched our online Electronic Safety Board. This Initiative enables us to display new and critical information to our teams in real-time across our Remote operations. As 2021 progresses, we will continue to expand this project to progressively include all remote sites.

Quality of Service is at the core of what we do. Delivering outstanding service is about us listening to our customers and adapting our approach to reflect the important things to them and the community.

Consistency in services represents a large part of perceived quality. To support consistency, Cater Care operates a program called Community Topics, designed to enable open discussions and alignment within our teams about key elements of our service.

Community Topics has been operating within the Cater Care Urban operation for some time, and with significant effort and the technical expertise of David Rogers, Community Topics started rolling out to our remote Village Operation in September 2020. Initially including topics such as Customer Service, Home Away from Home Experience, and Colleague Interaction, these discussions are undertaken by way of short catch-ups between teams to help shape our service delivery; to reflect the local community and its expectations of us.

With the growth that we experienced through 2020, we have employed a few hundred new staff. Working together using our Enabling Safety Program and Community Topics we can ensure that everyone plays their part in creating a positive safety environment and you have a voice in how we tailor our service at each Village.

PERSEVERANCE PAYS OFF!Congratulations to newly qualified Chef Nina Burnett from Dale Cottages in Western Australia. While last year was quieter on many fronts, there was plenty of cooking competence being gained, with Nina completing her Certificate in Commercial Cookery with Cater Care.

Nina, who has been working with us since 2013, saw the opportunity three years ago to take the next step in her career and develop her cooking skills into Chef qualifications. With the support of Joe Camilleri (WA State Manager) Nina enrolled in an apprenticeship course with TAFE and started classes as part of her development schedule.

Nina persevered with TAFE and has brought her new skills into Cater Care, providing valuable input into site menu development. Geoff Howell, Chef Manager at Dale Cottages and Tony Quigley, Operations Manager, noticed the positive changes in Nina

and how her studies helped at Dale Cottages. Finally in January 2021 Nina received her qualification and thanked our client and the talented team at Dale Cottages for their support and motivation.

Joe Camilleri said, “When you get a staff member like Nina who comes in every day, does her job and helps others do theirs you see something that just tells you there is more that we can do for this person. I can really say the payback we gain from what Nina does in the kitchen for our clients and staff is ten-fold as she never stops sharing her skills and adding value to our site. Congratulations Nina!”

Staff continually develop and grow with Cater Care over the years, and Nina is another great example of the right spirit, attitude and determination. Cater Care is always seeking apprentices, so contact your Manager!

LEADING THE WAY IN 2021

NSW Operations Manager - Urban, Penny Moran recently completed her Diploma of Leadership and Management. The course focused on a range of areas for applying leadership and management principles in the daily role of managing our team members, through topics such as Emotional Intelligence, Workplace Relations, Communications, Building Service Excellence, Operational Planning, and much more.

Penny said the program was challenging, leading her to think about new ways of doing things in the workplace, “The course was constantly making me reflect on how I manage people and the types of people I manage. I realise that I must alter my approach according to the situation. No two people are the same, and no two situations are exactly the same, so I need to change my management and leadership style according to the need and person.”

NSW General Manager - Urban, Michelle Massey (Penny’s Manager) appreciates the work put in by Penny, and particularly because the situation

in 2020 made coursework and study just that little bit harder. Michelle said: “Many of our Managers have gone through this course with other classmates in a face to face session. With 2020 being a year of virtual classrooms for all training, it was a harder road Penny had to take, but she persevered and succeeded, which is a credit to Penny and her great attitude of never giving up!”

Ensuring our staff have the leadership and management they deserve is not a one-off task that ends when we assign a manager. Courses like the Diploma of Leadership and Management not only demonstrate that development

is an ongoing continuum, but that we need to keep ‘topping up’ our leaders' knowledge to support our people, which is a key ingredient in our Cater Care Way. Congratulations Penny on a great achievement!

THE VALUE OF WORK

A friend recently made the decision to return to the workforce after an absence of eight years. She had some anxiety in returning, so she started with voluntary work as a way to ‘break back’ into the working world.

So this made me ask, “What are the tangible and intangible benefits of working?”

For the vast majority of us work is necessary to pay our bills, but 2020 has highlighted benefits of working that may not have been evident until they were removed.

Think of the daily interactions with colleagues that no longer occur when working remotely, or when you have so much PPE gear that natural communication (non-verbal) is obscured.

So what are some of the benefits of work that are non-financial?

A Sense of Identity

When you meet people the first thing that you’re asked is usually your name. Next is, “What do you do?”

Although your job is not an indication of everything about you, it is typically what people are interested to know about you first. It serves as a starting point of conversation, but you shouldn’t let your sense of identity and self-worth revolve solely on your career.

Intellectual Challenge

Learning is one of the most fun and enriching parts of life, and a healthy dose of intellectual challenge is usually good for you. However, not everyone is hard-wired this way, and a challenge is not the main thing that everyone wants to get out of a job.

You will be surprised by how much you learn by being around people with diverse experience, backgrounds, and skills, who are willing to share what they know. You may learn wisdom from a seasoned professional, and at the same time, creative approaches and fresh perspectives from a younger peer.

Hone Your Skills and Learn New Ones

Work helps you upgrade your skills and continuously learn new ones. Not everything you need to succeed is taught in school.

A job helps you gain practical knowledge and skills in your particular field of interest, and helps you grow as an individual. If your longer-term ambition is to establish your own business, working for various companies can serve as a good training ground.

Meet New People

You will meet more people, with different personalities, backgrounds, and skill sets, if you have a job, fostering new relationships with people you otherwise would not have met. Unless forced to get out and meet new people, we often don’t have the motivation to do it.

Understand Yourself and the World Better

When you move through different roles, you learn more about yourself. Unless challenged to step up in a new role, you may not realise how much you enjoy it. A new role allows you to experience situations that can help you understand the business and yourself better.

Meaning and Purpose

Although this might sound odd, having a job can increase your sense of meaning and purpose. It may seem like other jobs are more meaningful than yours, but remember, no matter what your job is, it has purpose, will contribute to the public good, and keep the economy moving.

Health Benefits

Employment is good for your mental health as it allows you to meet people, boosts your self-esteem, and gives you a sense of purpose and identity. The thought of contributing to something bigger than yourself can keep you happy and fulfilled with your life.

A steady paycheck will help save you from the stress of trying to make ends meet. High stress has major health implications, and people who have satisfying jobs in a healthy work environment are less likely to develop such stress-related illnesses.

In November 2020, we launched Cater Care's official Corporate Social Responsibility (CSR) program across all of our sites - CARING IN THE COMMUNITY.

Our Caring in the Community program sees us partnering with two respected national charities – Lifeline and Foodbank.

Lifeline is a long-established national charity that provides 24-hour crisis support and suicide prevention services to all Australians. Foodbank is Australia’s largest hunger relief organisation, providing food for 77 million meals a year to over 2,600 charities nationally.

Our fundraising campaign commenced in the first week of December, inviting employees to participate in activities to raise awareness, donate goods and funds for our charity partners. As a result, we are very excited to announce that more than $15k has been raised since our launch.

“I’m proud of how quickly the Cater Care community has embraced the program; it's exciting to see that we've already surpassed our initial target and we look forward to building on this result." said CEO, Colin Redman.

Our CSR commitment isn't just an event; it's a journey. Embedded in Cater Care's values of Care, Pride, and Community is our commitment to making a difference with our program.

CATABY TRONOX DONATE TO MAKE A WISH FOUNDATIONStarting in 2016, Steve Pople - Cataby Village Manager, and Charmaine Flinn - Minesite Cleaner, at CCS site Catably Tronox in WA have been the driving force behind significant site fundraising activities.

Motivating the client, residents, and staff, Steve and Charmaine have raised more than $9k through goods, donations and raffles for Autism WA, Motor Neuron Australia and St John Ambulance Service.

Christmas 2020 saw the Cataby community come together once again to support one of their long time charity favourites, 'Make A Wish Foundation'.

Steve said, "The residents are always eager to purchase a ticket or two to raise as much as possible and hopefully more than previous years, and this year we did - we raised $1,770.30."

"We wouldn't be able to do this without the support of everyone on site. it's a great result."

On raffle night Chef Craig Hammond delivered a delicious Christmas feast, and the dining room was full of raffle ticket holders eager to win one of 20 prizes.

“What Steve, Charmaine and the Cataby Tronox team have achieved is a great example of Community and one to be very proud of.” said General Manager Western Region Operations, John Mooney.

Supporting our common objectives for sustainability, we implemented BioPak Packaging at our IGO Nova site in WA.

BioPak produces sustainable, environmentally friendly packaging, focusing on reducing tree-based paper and fossil fuel-based plastic, offering an eco-friendly alternative.

Cater Care Services purchasing from BioPak has culminated in the following values for 2020:

OFFSET 28,914 KG OF CARBON That's equivalent to driving 101,477 km in a new car. Reducing carbon emissions mitigates climate change.

WELCOME TO OUR NEW SITE – ST PATRICK'S COLLEGE!Positioned on Townsville's Strand beachfront, St Patrick's College is in an idyllic location overlooking the sea – hence the cafe name ‘Cafe by the Sea’.

This is a new site for Cater Care in Queensland, and it was a joint effort from the team to ensure the 2021 opening was successful. State Manager Leigh Churchill, Operations Managers Bob Clarke and Lisa Masters, Union College Site Manager, Susan Nielsen, and Robbie Parle relief Chef were all on deck to help out.

We provide tuckshop services for 400 day students and 120 boarding students; with breakfast, morning and afternoon tea, lunch, and dinner, seven days a week, and theme days of course!

So, kicking 2021 off in style, students enjoyed a Greek-style menu and many really embraced the theme, having some fun and dancing to the Greek music play-list.

Leigh said, “I'm proud of the team's work and their expertise in catering to students and the diverse culture this school enjoys. This is an exciting opportunity for Cater Care."

CATER CARE STARTS AT LINCOLN COLLEGEFounded in 1952, Lincoln College in SA had an initial intake of approximately 23 residents, today Lincoln is home to 200 residents and has become a well-known and respected college. Students from across Australia and the world come to Lincoln to enjoy a multicultural community of inclusion.

Cater Care won this contract recently and began service in January 2021, which coincided with the opening of the (COVID-19 revamped SANTOS Tour Down Under) Festival of Cycling.

To mark the catering services' commencement, and the prestigious cycling event, the catering team held a paella themed night. First impressions do count, and the students are more than impressed with the service thus far, and not just with the paella!

This year signals an exciting new catering experience for the students. An automatic pancake machine, fresh orange juicer, popcorn machine, new counter equipment, and updated service options are just the beginning.

In addition to an improved service, and much to the students' delight, Lincoln College’s 36 year veteran Karen Reichelt will continue to be a part of the catering services. A valuable member of our new team, Karen will work closely with newly appointed Chef Manager, Danny Miller. Danny brings an impressive amount of experience, having recently spent almost four years as Head Chef at the exclusive restaurant and wedding venue – Mount Lofty House.

This is also an exciting new chapter for Cater Care and gives us the opportunity to reconnect with a previous client at a new facility.

CATER CARE’S BUSINESS DEVELOPMENT TEAMTwo sectors - one team, charged with developing new business growth across the Remote and Urban business units.

‘It was the best of times; it was the worst of times, it was the age of COVID-19…’

Not quite the words used by Charles Dickens but undoubtedly reflective of where we find ourselves today. COVID-19 has driven many changes, some good, some more challenging and for many, it has made us reassess and find new ways of working.

The Urban and Remote Business Development teams are no different. Our responsibility is to develop new business opportunities for Cater Care and assist with retaining existing contracts within these sectors, and being the ‘voice of the client’ within the business. Ultimately we ensure that Cater Care has a sustainable business and growth.

COVID-19 meant that we had to find new ways of working, to continue to build relationships and develop opportunities without our ‘normal’ processes. Limited travel, working from home and not being able to attend conferences or engage in face to face meetings or presentations meant that we needed to rethink our way of working.

This is a tale of two teams coming together with a focus to draw on the strengths and knowledge of both teams, to better align our processes and achieve best practice across our sectors. By adapting our ways of working, the Urban and Remote Business Development teams are jointly delivering better outcomes for Cater Care.

There has been a heightened period of learnings with some trial and error regarding how we connect with the market, research, build relationships and even present our tender proposals. The benefit of working together means that we have shared our experiences and adjusted our approach.

We have attended virtual conferences, both as presenters and exhibitors, engaged in webinars, and even virtual networking. The early days were hit and miss as businesses learned to use systems such as Zoom, Hangout, and Microsoft Teams. Fortunately, the quality of these has improved, and we are now developing our own webinars and virtual events.

The interaction between the two teams has given us a better appreciation and understanding of each other’s sectors and has identified key strategic partners with whom we can engage to provide opportunities for both Urban and Remote.

There was an expectation that COVID-19 could disrupt our future opportunities, but this has not been the case. We have had to find new ways of working, but we are even more optimistic about both sector's future outlook.

Jonathan Storer leads our Urban Development Team and has a particular focus on Aged Care. He is supported by David O’Brien, who is our Education sector specialist. Within the Remote Team, Christine Charlton provides oversight and is responsible for developing national contract and strategic partnerships, and is supported by Hayley Steyn for new business and Shelly Sidell for our contract retention.

Our business development team members have an average length of service with Cater Care above ten years. Our success in delivering depends on the team’s knowledge, experience and quality of the information and leads that we receive. Quite often the best leads for new business come from our existing sites and employees. Customer Care AwardWinner: Mark White, Key Account Manager, CCA Westminster

Throughout the COVID-19 outbreak, Mark has worked diligently to minimise the impact on the entire school. With consistent communication and listening to all stakeholders, he successfully reorganised a reduced service in five key areas - modifying each in varying degrees to comply with Government mandates. Mark used a similar approach to relaunch all services without a glitch.

Mark has a solution-focused and proactive approach to managing the whole process with clear and accurate communication. Mark takes great pride in his team and their accomplishments and continually demonstrates his commitment to customer service for Westminster School.

Community Excellence AwardWinner: Bernadette Mallaghan, Utility Supervisor CCS Ernest Henry

Bernadette has been instrumental in shaping the Mount Isa Indigenous recruitment program. She always welcomes her colleagues to the village, securing lockers for their belongings and ensuring they receive training.

Bernadette checks upon them throughout the day to ensure they are engaged and productive. It has been such a success that Cater Care is in the process of recruiting additional team members. Well done Bernadette for being proactive in the interest of the community.

Culinary Excellence AwardWinners: Paul Santa Maria, Chef Manager, CCA Adventcare

Paul is a committed cook-fresh Chef for all the residents' meals at Adventcare in Victoria. Taste and presentation are extremely important to Paul, and he takes great pride in serving the best meal possible. As many residents follow a vegetarian lifestyle, Paul is acutely aware of the care, innovation, and support required to deliver on quality and expectation.

Paul's approach to the residents' food choice is open and supportive, and he is proud of the positive feedback received in acknowledgement, which has had a flow-on effect to his staff.

Teamwork Excellence AwardWinner: PAC Newcastle Team, CCA NSW

When the PAC Newcastle kitchen roof became damaged through a storm, the Cater Care team worked in some very challenging conditions. There were days with significant power interruptions - at times no power, hourly coolroom and freezer inspections to reduce stock loss and continual personal safety checks.

Through all this, Allen, a new Manager to Cater Care, has led the team with a smile and can-do attitude, a positive outlook that flowed onto the whole team. Perseverance prevailed; employing great teamwork and ingenuity, for instance using headlamps and portable lights to ensure minimal disruption to the residents.

Excellence in Leadership AwardWinner: Attila Balla, Head Chef, CCA Westminster

Attila always shows excellent leadership. He supports and motivates every team member to achieve their best, whether it be food preparation, presentation or workplace practices. He provides constructive feedback where needed. Attila also has a great rapport with the students, teachers and the wider school community and encourages the team to follow his example.

Attila always has a smile on his face no matter how stressful situations can get. If a colleague struggles with their workload, he is not afraid to jump in and help them achieve results. His positivity is infectious - after all, teamwork makes the dream work!

Safety Champion AwardWinner: Simon Wilkinson, Site Manager, CCA Wesley Gardens

In the past year, Simon has focused on ensuring his site more than meets the safety standard. Following an incident, Simon searched for the cause to develop a plan to ensure the catering team could mitigate future risk.

The patty is made with mushrooms, black beans and white quinoa and along with a number of other ingredients, flavoured with the sauce found in Chipotle in Adobo, a staple Mexican ingredient made with smoked and dried Jalapeño chillies.

These chillies are rehydrated and canned in a sweet and tangy sauce made with tomato, vinegar and garlic and found in most supermarkets. The chillies can be offered as an accompaniment, but be warned they are hot!

INGREDIENTS

150gm Whole Egg Mayonnaise

3 tsp Chipotle in Adobo — sauce only

100gm Red Onion — top, tail, peel, halve and roughly chop

60gm Field Mushrooms — roughly chop

50gm Button Mushrooms — roughly chop

1 tsp Chipotle in Adobo — sauce only

½ tsp Sweet Paprika

1 tsp Ground Cumin

1 tsp Ground Coriander

200gm Tinned Black Beans — drain

55gm White Quinoa — cook as per manufacturer’s instructions

70gm Fine Breadcrumbs

Whether you're concerned for health, the environment or animal welfare, it is estimated that 12% of Australia’s population now regularly eat a vegetarian diet. In recognition of the growing popularity of this diet, we have created a vegetarian burger recipe, that we think will be enjoyed just as much by meat eaters!

METHOD

1. In a mixing bowl, add the mayonnaise and 3 teaspoons of sauce from the chipotle in adobo, then whisk to combine. Cover with cling wrap and refrigerate until required.

2. In the bowl of a food processor, add the onions, mushrooms and 1 teaspoon of sauce from the chipotle in adobo, blend until the ingredients are finely chopped.

3. Add the paprika, cumin and coriander to the mushroom mixture and continue to blend for a further 30 seconds.

4. Add the black beans to the mushroom mixture and continue

to blend for a further 10 seconds or until the black beans have been roughly chopped.

5. Remove the mushroom mixture and place in a mixing bowl. Add white quinoa and breadcrumbs, mix to combine and season to taste.

6. Shape the mixture into 4 evenly sized burger patties, place on a clean plate, cover with cling wrap and refrigerate for 1 hour to allow the burger patties to chill and firm up.

7. Lightly spray oil a saute pan and place over a moderate/low heat, once warm, in batches, add the burgers, cook for 2 minutes on each side or until they are heated

through and lightly browned on each side. Remove from the heat and keep warm.

TO SERVE

Lightly toast the burger buns, then place each bun base cut side up on a clean work surface. Lightly spread the bun bases with a portion of the chipotle in adobo mayonnaise, then top each with three lettuce leaves, two slices of tomato, one slice of Swiss cheese and one burger patty, then lightly top with a little more chipotle in adobo mayonnaise. Gently place the bun lids on top. Serve accompanied by an optional side of thick cut potato or sweet potato fries.

TASTE OF AUTUMN RECIPE DELIVERS!Dietary fibre is a plant based nutrient that can be found in a variety of foods such as fruit, vegetables, nuts, legumes/lentils, breads, cereals, rice and pasta. Fibre is one of the only nutrients that does not get completely broken down in the process of digestion. Getting enough dietary fibre from your diet is important for overall health and disease prevention.

There are two main types of fibre which both play different roles in the body. These are:

Soluble fibre - This fibre attracts water to form a thick gel, and is completely broken down by the bacteria in the colon. This helps to keep the colon wall healthy. Good sources of soluble fibre include fruits, vegetables, oats, barley and legumes.

Insoluble fibre - This fibre helps to increase the weight and volume of faeces and produce softer stools, helping to keep your bowels regular. Insoluble fibre is found in whole grain breads and cereals, nuts, seeds, wheat bran and the skin of fruit and vegetables.

It is important to be eating a variety of high fibre foods each day.

Our Taste of Autumn recipe delivers on being a great source of both soluble and insoluble fibre from the addition of black beans, mushrooms and quinoa. This recipe makes a tasty balanced vegetarian alternative for a weeknight dinner.

Nothing much beats the flavour of a homemade Anzac biscuit! So to commemorate this year’s Anzac Day and inspired by the classic Devonshire tea, we have developed a recipe perfect for an indulgent morning or afternoon tea that incorporates homemade Anzac biscuits topped with Chantilly cream and passionfruit.

Anzac biscuits were made by mothers, wives and girlfriends as a long shelf life, high energy supplement for bread. The biscuits had to keep fresh for months of un-refrigerated travel by ship to Turkey to help feed Australian and New Zealand soldiers fighting together as the legendary Anzacs in World War 1, 1915 Gallipoli Campaign.

ANZAC BISCUITPASSIONFRUIT CREAM BITESSERVES: 4

INGREDIENTS

As Required — Extra Virgin Olive Oil Spray

As Required — Baking Paper

1 ¼ cups Plain Flour

1 cup Rolled Oats

½ cup Caster Sugar

¾ cup Desiccated Coconut

1 ½ tbsp Boiling Water

½ tsp Bicarbonate of Soda

150gm Unsalted Butter — warm to room temperature and cut into 2cm dice

2 tbsp Golden Syrup

300ml Thickened Cream

5 tsp Caster Sugar

½ tsp Vanilla Essence

120gm Passionfruit Pulp in Syrup

METHOD

1. Pre-heat an oven to a moderate temperature - 160°C. Lightly spray oil and line with baking paper the required number of baking trays.

2. In a mixing bowl, add the flour, oats, the first quantity of caster sugar and desiccated coconut, then mix to combine.

3. In a second mixing bowl, add and mix the boiling water with the bicarbonate of soda until it has completely dissolved.

4. Over a moderate heat, in a saucepan, add the butter and golden syrup, stir until the butter has melted and completely combined with the golden syrup.

5. Add the bicarbonate of soda mixture to the butter and golden syrup mixture, stir until they are combined, then remove the saucepan from the heat.

6. Add the butter and golden syrup mixture to the flour mixture. Mix until combined.

7. With clean, lightly oiled hands, take a whole walnut-sized piece of the mixture and shape into a ball, place on a tray and gently press to slightly flatten.

Repeat the process, allowing sufficient room (2cm) between each biscuit for the mixture to spread whilst baking. Place the tray/s into the oven and bake for 15 minutes or until the biscuits are a light golden brown colour and firm to touch, then remove from the oven and allow to cool in the tray/s for 5 minutes.

8. Remove the biscuits from the baking tray/s and place onto a cooling rack to finish cooling and crisping.

9. In a mixing bowl, add the cream, the second quantity of caster sugar and vanilla essence. Using a balloon whisk, whisk until the cream forms soft peaks. Add the passionfruit pulp and gently fold through, then cover with cling wrap and refrigerate.

TO SERVE

Place the Anzac biscuits flat side up and top each with a small dollop of the passionfruit cream, then arrange on a serving board or platter before serving.

GRADUATIONWITH A PERSONAL TOUCHAmongst the uncertainty surrounding COVID-19, it is essential to remain focused on the positives and to help others where we can.

For schools in Australia, like many across the globe, 2020 was a challenging year for educators and students. However, the extent of closures were varied, and most experienced significant interruptions, which caused a great deal of anxiety and concern.

Australian schools and universities quickly transitioned teaching activities to online formats. For many Indigenous students, this meant leaving cities where they had been boarding and returning to their families and communities.

Cater Care operates in Indigenous boarding schools and education centres across Australia. One of the campuses severely affected by the school closures was Wiltja Anangu Secondary College, and the adjacent Wiltja Boarding for Indigenous students from remote communities in South Australia, Northern Territory and Western Australia.

With student numbers greatly reduced, the Year 12 graduation for boarding students consisted of two students - Tremain Strangways and Nan Walkabout from Indulkana Community on the Anangu Pitjantjatjara Yankunytjatjara (APY Lands), so a graduation ceremony seemed unlikely.

For Wiltja Boarding’s staff and Manager, Anthony Bennett, this was not the end to secondary education they had imagined for the students. Knowing this, Cater Care Operations Manager Richard Gibson, and State Manager SA/NT, Mike Adams worked with the school, and organised a graduation event to celebrate Tremain and Nan's successes.

The personalised ceremony, held at a city restaurant, included Tremain and Nan's families, friends and the Wiltja staff who have been a part of their education journey for many years, making this occasion very special.

Mike and Cater Care’s Indigenous Participation Manager, Kevin Alley also attended the event, grateful for the opportunity to participate in the celebration, and on behalf of Cater Care pledged $1,000 toward future Wiltja scholars.

Kevin Alley said, “The graduation was an experience I will fondly remember. Knowing Cater Care helped give Tremaine, Nan and their families (some of whom had travelled from the APY Lands to attend) a night to remember is very special.

"The teachers told stories about the students' educational achievements as they handed out awards, which demonstrated their level of care and passion for Indigenous student learning, which is commendable."

Cater Care’s staff build strong positive relationships with the faculty and the students at all the schools we operate within. These relationships result in positive, healthy outcomes for the students and for Indigenous students this can be life-changing, and Cater Care is proud to be in a position that contributes, albeit in a small way, to their success.

As with previous graduate students, Tremain and Nan will encourage others to emulate their success by returning to help future students - how wonderful!

SUPPORTING MOORA YOUTH CENTRELate last year, Moora Youth Centre Youth Worker - Hayley Jorissen organised her site NAIDOC event. The young people at the centre were invited to create an art piece interpreting past NAIDOC themes.

While Cater Care donated the food for the event, Iluka staff did the hard-yards and helped with the BBQ preparation and cooking. A collaborative, community event - well done to all, especially the budding young artists!

SOUPEDUP HLAC HERO 2020!Congratulations to our Chef Manager Hoshi Panthaki at Baptcare Westhaven, Victoria for being awarded 2020 SoupedUp HLAC (Hospitality, Lifestyle & Aged Care) Hero.

The staff at Baptcare Westhaven receive compliments from residents every week and want Hoshi to be recognised for his dedication, catering to over 127 residents of many different cultures.

Hoshi puts a smile on residents' faces every day. Even during the lockdown, Hoshi placed personalised tray mats daily on trays to make residents feel unique and make them smile. Additionally, Hoshi continues to work with lifestyle staff to incorporate wonderful food for all events.

COMMUNITY SHINES AT DALE COTTAGESDespite the challenges of 2020, Chef Geoff Howells and his team continued to deliver service excellence and support the staff and residents at Dale Cottages and Greendale Centre in WA.

An important date in Dale Cottages calendar is recognising their volunteers' outstanding commitment at a Christmas breakfast. As with all things 2020, many last minute adjustments were made for this event to go ahead, and the catering team met the challenge!

A week later and the WA team delivered a memorable Christmas lunch. With Cater Care once again generously donating the main lucky door prize (Christmas Hamper), there was a little extra cheer – everybody loves the opportunity to win a prize!

Also during the recent shutdown, the Cater Care team once more showed their commitment to the local community by providing an extended Meals on Wheels service to the Greendale regulars and the village residents.

POSITIVE OPPORTUNITYSite Manager at St Sergius Aged Care in NSW, Olive Valencia (and team), invited St Sergius staff to join them at their planned NAIDOC Week Toolbox Talk.

The group examined this year's NAIDOC Week theme (Always Was, Always Will Be), Cater Care's RAP document, and the rich and diverse Australian Indigenous culture, followed by a delicious and beautifully presented afternoon tea.

For many of the 15 attendees, particularly the St Sergius Staff, Director and Deputies, it was the first time they had the opportunity to learn about Cater Care’s commitment to reconciliation and participate in a NAIDOC celebration.

Q. Where do you work, and who do you work with?

I work in the Sydney Office, in the Human Resources department. Our team supports and works alongside Operations and we also assist the whole business with any Human Resource related inquiries.

Q. What does your job involve?

As a Human Resources Advisor, I complete a variety of tasks which include assisting with the onboarding of new employees and ensuring staff have the proper clearances to work on site. Audit Reports for the business, fielding general enquiries from the business, and am currently administering the 2019-2020 Performance Reviews.

Q. What do you love about the job?

I love working with a collaborative team, I also love how no two days are the same, so my job is both challenging and rewarding.

Q. Who inspires you?

My family, friends and colleagues help me to grow and support me when I’m having a hard day so I can keep moving and to focus on the positive. I am lucky to be surrounded by positive people.

Q. Name three people you’d invite for dinner?

I’d love to have a dinner made in Pop Punk Music Heaven with: Patrick Stump, Brendan Urie and Hayley Williams.

Q. What’s the best meal you’ve ever had?

There’s been a few, but Holy Basil in Parramatta makes the most amazing Pork Belly dish!

HARD WORK PAYS OFFWe often start the year off with goals in mind; however, when you manage to start the year with a new chef qualification, then you know you’ve kicked a goal already, so it’s a great start to 2021!

Brett Lockhart works at our NSW CCA site, Pacifica Aged Care. Over the years he has been developing his skills in Commercial Cookery with the aspiration to one day become a Qualified Chef. In January 2021, Brett completed his course and qualifications, making his goal a reality. With support from the talented team at Pacifica, Operations Manager and client, Brett has worked hard over the years to achieve this success.

Brett is one of the many great staff members who complete their qualifications and feature in this magazine. But what exactly do chefs like Brett study? OK...here’s just a few of their learnings: all white and red meats, all seafood, vegetables, salads, desserts, sauces, soups, cakes, costings, menus, hygiene, safety, equipment… this list goes on!. Not to mention areas like Farinaceous dishes (yes grab the dictionary for that one!).

So it’s pretty clear that the years required to become a Chef are well spent, and congratulations well deserved. We asked Brett how he felt, “I really enjoyed the learning and variety of foods I was able to gain competence with, and now use in my role.”

Q. Where do you work, and who do you work with?

I work at the Parramatta office in NSW, and have the pleasure of working with our support teams, operations team and executives.

Q. What does your job involve?

Everything related to the Urban operations - each day is never the same - it can be pitching Cater Care to a prospective new client or getting hands-on and serving lunch in the dining room at one of our 70 locations in NSW.

Q. What do you love about the job?

There are two things I love most about my job, one is coaching and developing the team. When my team is successful, so am I and the business benefits. Second is the residents - I love nothing more than getting on a microphone at a residents meeting and talking about food, which triggers beautiful memories for our residents.

Q. Who inspires you?

Whilst I am not into politics, Jacinda Ardern leads New Zealand with her down to earth leadership style of communication, empathy, honesty and leading by example - four things I strive for every day.

Q. Name three people you’d invite for dinner?

Celeste Barber - not only is she incredibly funny but went on to raise more than $51million in donations following the devastating bushfires when the target was only $15,000.

Robbie Williams - the first concert I went to was Take That with founding member Robbie Williams, with his cheeky chappy banter he has certainly lived a colourful life and would have some great stories to tell.

Jackie Gillies - I would invite Jackie to dinner for her Psychic medium abilities and her sassy and adventurous personality. She devours life with style and a smile - and lives it to the shiny brim.

Q. What’s the best meal you’ve ever had?

A few years ago I discovered The Zin House in Mudgee, utilising local produce at a kitchen table right before your eyes. The set menu showcases authenticity, generosity and quality – regional dining at its very best and as a self confessed carnivore I even devoured the vegan dish!

Q. Where do you work, and who do you work with?

I am currently working as Retail Business Manager at Brisbane Domestic Airport. I have worked at the airport for the last twelve years, and with Cater Care since October 2017. I am about to move to the Herston Quarter to mobilise and run our new contract there.

Q. What does your job involve?

I am responsible for the overall management of the contract, including financial and operational. In February, I will move into a new role as a Senior Contract Manager at the new Stars Herston Quarter. This will involve managing three new retail contracts for Cater Care – The Botanist Bar and Cafe, Herbert and Bramston Cafe, and a Boost Juice.

Q. What do you love about the job?

The most exciting part of my job is that there are always new and challenging situations so I have learned a lot from my current role. My job involves good food, and a high vibe workplace which keeps me going. It's always a joy to see happy and satisfied customers who have a smile on their face.

Q. Who inspires you?

I have a lot of people who inspire me and keep me going. On a professional level it is the dedication, work ethics, honesty, and motivating management I am under that inspire me to do better every time.

Q. Name three people you’d invite for dinner?

Q. What’s the best meal you’ve ever had?

I am always inclined to have steak, but the one I remember was in New Zealand while on holiday which was garnished with a mouth-watering garlic butter and herb dressing.

Q. Where do you work, and who do you work with?

I work at Beverley Mine Site in the North East Flinders Ranges of SA. I work alongside an incredible leadership team of Hamish McLean as Relief Manager and Greg Muir as Head Chef, and supportive, motivated colleagues who have a huge positive impact on our operation.

Q. What does your job involve?

My regular duties include administration, staff performance, camp presentation, and ensuring Cater Care safety and standards are all in place. I like to engage residents in conversations and have an approachable attitude, which I have found to be extremely helpful in getting feedback.

Q. What do you love about the job?

I love everything about my job. Coming from a 5-star hotel/resort background, I never thought I’d find myself in the middle of the desert, but I thoroughly enjoy every minute. The diversity in the role initially attracted me to mine site catering; no day is the same. Our staff and residents are extremely friendly, and there is a genuine sense of community within the camp.

Q. Who inspires you?

My inspiration is my mother. She is a single mother, a successful businesswoman, extremely loving and has a positive attitude so you can’t help but smile when you’re around her.

Q. Name three people you’d invite for dinner?

Justin Herald – Director and founder of Attitude clothing, his rags to riches story, is very motivating.

Michael Jordan – I’m a huge basketball fan so why not grab a bite with the Greatest Of All Time.

My partner Juliana’s parents who live in Brazil – I’m counting them as one!

SAFETY & WELLBEING ASSESSMENT TOOL (SWAT)In our remote sector we’ve introduced the Safety & Wellbeing Assessment Toolkit (SWAT).

This new tool will provide resources to help our staff understand and manage health and safety risks in their workplace.

Staff will have their own personal booklet to complete, and booklets at their work stations to complete as a team (eg: in the kitchen, on the housekeeping trolley).

The SWAT Booklet will be integrated to the remaining business sectors in the near future. Stay safe and well!

2021 RENEWED SAFETY AWARENESSOn January 4, we ushered in a new era at Cater Care with the implementation of our first electronic safety board at one of our newest sites, Savage River Mine in Tasmania.

The idea for an electronic live-streamed safety board resulted from an Opportunity for Improvement (OFI) raised within the business.

The initiative enjoyed strong business support from its inception as it was immediately recognised for its improved communication method and education to our teams.

As the safety board is live-streamed, our safety team will update centrally and deliver in real time to sites.

The ever-changing and challenging environments in which we work demand a high level of situational awareness. It is crucial to have the ability to tailor consistent and efficient communications to support our safety performance whilst enhancing value for our teams, guests and customers.

The solution and platform are positioned for continuous development. Many other applications in our business can

utilise the platform, adding opportunities for greater real-time interactivity, not just in safety messaging.

It took a fantastic collaborative approach to develop this technology – Innovations don't just happen. Thank you to everybody involved in developing this solution, with special mention to Jordan Conti - Group Safety & Wellbeing Manager and Blair Logan – IT Manager. Jordan and Blair led this project from the onset, spending many hours sourcing the right hardware, developing software and refining our Safety Messaging Program to live-stream 'Enabling Safety'.

COOKING UP A STORM AT FRANCISCAN FRIARS

Janelle Ostrowski, Chef Manager at Franciscan Friars in NSW, had a great time setting up the Christmas party.

Janelle (with 14 years Cater Care expertise!) has been at the site for about 12 months and takes great care to listen to the Friars' food likes (and occasional dislikes) to ensure they tuck into her menus.

CC4U’S 25 DAYS OF GIVINGWith the CC4U ‘25 Days of Giving’ Christmas Competition running over December, we were more than pleased to see members engaging, liking, reacting and commenting throughout the month!

With six major competitions and many prize-winners, the competition's ultimate success was our newly-launched Corporate Social Responsibility (CSR) program, Caring In The Community and supporting our nominated partners - Lifeline and Foodbank.

As per the competition’s name – ‘25 Days of Giving’ - we wanted to ensure we were consistently giving back to the community, whether it’s to our nominated partners, or those who have made meaningful impacts within the Cater Care community.

Pictured, Lynley Falconer was the winner of our CSR quiz competition and won a Series 6 Apple Watch – congratulations again, Lynley!

However, our highlight of the competition was the CC4U Facebook page members who helped us raise more than $345, by simply liking our ‘like-for-like’ post, where every ‘like’ equalled $1 donated to each of our nominated charities.

LOOK OUT FOR YOUR WAISTLINE – THE PLC SYDNEY TEAM ARE BACK!

In an excellent start to the year, our PLC Sydney team absolutely smashed it with a fantastic cocktail party for 230 guests.

The menu was an irresistible selection of delectable nibbles that included – Mexican Crumbed Prawns, Mini Beef Sliders, Assorted Mini Vegetarian Quiche, and Grilled Halloumi Wrapped with Basil and Prosciutto – yum!

Congratulations PLC Sydney – we can’t wait to see what you have planned for 2021.
