Since Baywest Exports was established in 1995, the company has focused on establishing markets in Mauritius, Taiwan, Malaysia and India. While all Australian grains are handled, the main items are chickpeas, lentils, yellow split peas and chana dhal.

In 2010 we were asked to produce a range of gluten-free products. At this stage we declined to undertake this project. In 2011 we were asked again and we made the same decision. In 2012 we thought there was something in this so we started to research what was involved and what similar products were available. After tasting some of the available products it was clear that there was massive room for improved products.

In 2013 we devised a plan with a simple philosophy — ‘to make gluten-free biscuits, that look like a biscuit, aroma of a biscuit, taste of a biscuit and the mouth feel of a biscuit’.

With these early biscuits we also noticed that many gluten-intolerant people were also allergic to nuts, so our motto became nut free and gluten free.

Since 2013 we have been producing high-quality cookies in Malaga, Western Australia. Proudly we are a 100% Australia-owned bakery. Our products are continuously enjoyed by cafes, caterers, hospitals, universities, schools and especially mums and kids. With over eight varieties and new creations all the time, there is something for everyone.

The Castro family grows farm fresh vegetables — carrots, potatoes and onions — from seed to table in the south-west of Western Australia.

Castro Farms started in Myalup in 1991 and has since both expanded the home property and acquired more property in Binningup, bringing the total to 180 hectares. This expansion allows for more crop rotation to enhance the fertility of our soil.

We oversee the whole process from seed to final packaging and supply, making sure every aspect of production adheres to the highest standards of quality and freshness.

We grow 2500 tonnes of potatoes annually, with the harvest starting in July and finishing around the end of the year. We also are able to export potatoes or onions should the demand arise.

Carrots continue to be our main product. We currently supply carrots to Middle Eastern markets to our customers’ specifications in 1 kg prepacks and 10 kg and 20 kg cartons.

We harvest, wash, polish, hydro cool and size (using our new Celox optical grade — the first of its kind in Western Australia — in a very short period before the carrots are put into cold storage to preserve the utmost freshness and increase shelf life.

Ivankovich farms has just completed a major upgrade of their washing and packing facility in Myalup, creating more sizes to get a more uniform product.

A 15-tonne per hour ‘in-line’ hydro-cooler, along with new container loading facilities, ensures that harvest to loading times can be shortened, with all produce loaded directly out of specially built cool rooms. Air locks seal the containers in and so no temperature is lost and the product remains between 1.5 degrees Celsius and 2 degrees Celsius while handling and loading. This stability is crucial to supplying the best product and shelf life possible.

Each year in November, Onions Australia offers a special award to recognise people who have made outstanding contributions to the Australian Onion Industry. Recently, the Reg Miller Award went to Western Australian grower, Peter Ivankovich of Myalup.

Margaret River Pickled Walnut Company produces pickled walnuts in four styles of spiced vinegars for both retail and service. Pickled walnuts are an artisan food made from green or immature walnuts using a traditional process.

Sumich Farms are the largest single carrot growing and packing enterprise in Australia.

Located some 150 km north of Perth in Western Australia, Sumich Farms (North East Equity Pty Ltd) are totally dedicated to producing over 60 000 tonnes per annum (soon to be expanded) under pristine climatic growing conditions.

Our crops are meticulously monitored through their growth under HAACP Safe Food Management regimes with a well-balanced fertiliser, irrigation and disease management program, right through to optimum maturity when they are machine harvested and processed ‘on-farm’ in a modern, highly mechanised packing facility.

The entire post-harvest, hydro-cooling, grading and packaging is completed within one to two hours of lifting the carrots from the field.

Excellent post-harvest handling manages any food safety risks and allows traceability right through to the market chain. Speedy chilling of the product as soon as possible after harvest and then careful maintenance of temperature and storage conditions ensures that the carrots are able to be shipped to distant destinations meeting consumer quality expectations every time.

Refrigerated Containers are loaded from the packing shed cool rooms and transported directly to the Fremantle Container Port.

For foodies worldwide, one of the most exciting gastronomic discoveries in recent times has been the Australian finger lime.

Finger limes are a natural wonder. They contain hundreds of tiny capsules of lime juice that explode and pop in the mouth, adding flavour and texture to a dish. They are often called ‘citrus caviar’ due to their resemblance to pink caviar. Finger limes are also visually exciting and are perfect as a garnish.

In 2006 retired physiotherapists Rob and Jill Baker saw the potential in this exquisite fruit, and decided to plant the pink ‘Rain Forest Pearl’ variety on their property in Pemberton, Western Australia.

The fruit thrived and, in 2011, Pemberton Finger Limes sold out their first harvest in just six glorious, zesty weeks. ‘We pick from late March to early May, so it’s a short 6‒7 week season,’ says grower and owner Jill Baker.

‘Due to the short season and increased demand, most clients now pre-order. We pick daily during the season, which ensures that the freshest fruit is delivered to clients. With chefs and the public now more aware of seasonal produce and provenance, our Pemberton finger limes have become an autumnal favourite.’

Now in their fourth season, the family business keeps on growing, with the company now deciding to venture into the export market. From 2015 Pemberton Finger Limes intends to deliver weekly to Singapore.

The Lewis family has consistently produced Extra Virgin Olive Oil in Chapman Valley, Western Australia, for the past 10 years. The first olive trees were planted in 1998 and have been cared for personally by the family ever since.

Grown in rich red valley soil, our plump healthy fruit produces some of the finest olive oil available. Chapman River Olives is situated 26 km north of Geraldton in the Mid West of Western Australia (about 450 km north of Perth). The olive grove is located adjacent to the Chapman River.

The olive trees have responded well to the Mediterranean climate and all varieties (mainly Queen of Spain, Kalamata, WA Mission, Frantoio, Picual, Picholine and Coratina) are laden with fruit in season. The olive oil produced is soft and delicate (due to region, soil type, quality water, plenty of sun and organic fertilisers), with a tropical bouquet, a mild peppery finish, and unique and outstanding flavours.

We have won national medals for our olive oil since production began in 2005, progressing consecutively from bronze to silver to gold.

The sweet chestnut farm was purchased by John and Linda Stanley in 2013 and is the largest sweet chestnut farm in Western Australia and the only sweet chestnut farm in Australia to pick, peel, pack and freeze the sweet chestnuts on the farm.

The fresh south west forest air, rich soil and pristine spring water combined with animals grazing the orchard to enrich the soil further, create the sweetest chestnuts. No chemicals or artificial fertilisers or sprays are used on the farm. The nuts are hand picked and hand graded to ensure the best quality nuts.

The jams, chutney and purees from Chestnut Brae are each handmade exclusively from fresh produce from recipes collected from around the world. No more than 5kg of fruit is worked at any one time, obtaining products of incomparable taste.

John and Linda Stanley travelled to Corsica to research chestnut products and returned with recipes for their

Based in Western Australia — a pristine environment due to its vast and relatively isolated position — the bees are able to feast on pure nectar from the vast array of bush and forest blossoms, including jarrah, red gum, wandoo, flooded gum, banksia, grevillea, hakea and the famed wildflowers.

Western Australia is one of the few places in the world never to have used antibiotics in beekeeping, giving an additional organic advantage. Elixir harvests the honey as simply as possible so it's all natural. We offer raw honey so you get all the goodness the bees bring back to the hive.

The painstaking process involves gravity filtering from one site, no blending and little or no heating — in the case of the raw honey, rather like cold-pressed olive oil. The precious liquid is gently tapped into glass jars. Raw honey contains all the live enzymes, vitamins and trace minerals plus a lower glycemic index: 38 compared with 65 for bulk processed honey. As a result Elixir raw honey can vary from liquid to set. Also available is Elixir Honey which has been gently warmed to stay liquid longer.

The bees are tended organically and hives are only painted on the outside, so the insides are natural untreated timber adding to the purity of the honey. The hives are rotated and placed under blossoming native trees in specially selected sites.

Seasonal tastes are on offer and, at Elixir, only small quantities are extracted at any one time. For example, the distinctively flavoured and highly sought-after jarrah honey with its high fructose and low glucose level can only be extracted every two years, since jarrah trees only flower every two years with buds appearing one year before blossom. In the winter season most of the tall trees blossom, including the eucalypts and karri. Elixir Honey does not believe in over-working our bees so unlike many other apiarists we do not allow our hives to be used by fruit and nut growers for cross-pollination.

Fewster’s Farm was first settled in 1900 after the original brothers, John and Robert, came to Western Australia in 1898 and worked in Kalgoorlie. John's wife, Sarah, and three children joined them soon after. They all moved to the Muchea farm, about 60 km north of Perth, and started a market garden.

Beekeeping was introduced in 1916 when Robert, a civil engineer, left several hives he had been given on the farm before going to South Australia to oversee the construction of drains and irrigation lines.

Beekeeping soon became a good source of income for four of the six Fewster sons — Vince, Nelson, Norman and my grandfather, Jim. They all worked together for many years before splitting up as they got older.

Honey was collected, as it is now, from the ancient forests and bushland that are close to the farm in Muchea. Then, as transport became better, we ventured to places like Pemberton for the much-prized karri honey and to Kalgoorlie in the season when the trees flower.

Fewster’s Farm Honey is still owned and operated by Kim Fewster. Our experienced beekeeping team hope to continue the tradition of gathering and selling only pure natural Western Australian honey, along with our fully accredited organic range of honey and other bee products. Organic jarrah honey is now available. This very special honey is prized for its taste and healing properties.

Our crops are meticulously monitored through their growth under HAACP Safe Food Management regimes with a well-balanced fertiliser, irrigation and disease management program, right through to optimum maturity when they are machine harvested and processed ‘on-farm’ in a modern, highly mechanised packing facility. A modern carrot juice concentrate processing facility adjoins the packing operations producing high quality single strength carrot juice as well as pure carrot juice concentrate which is frozen in bulk and shipped to overseas global markets

The entire post-harvest, hydro-cooling, grading and packaging process is completed within two hours of lifting the carrots from the field. Excellent post-harvest handling regimes manages any food safety risks and allows traceability right through to the market chain.

Speedy chilling of the product as soon as possible after harvest and then careful maintenance of temperature and storage conditions ensures that the carrots are able to be shipped to

distant destinations meeting consumer quality expectations every time.

Talbot Grove is a family-run business focusing on the production of high-quality extra virgin olive oil from our own grove of over 6000 trees at York in Western Australia. For foodies worldwide, one of the most exciting gastronomic discoveries in recent times has been the Australian finger lime.

Finger limes are a natural wonder. They contain hundreds of tiny capsules of lime juice that explode and pop in the mouth, adding flavour and texture to a dish. They are often called ‘citrus caviar’ due to their resemblance to pink caviar. Finger limes are also visually exciting and are perfect as a garnish.

In 2006 retired physiotherapists Rob and Jill Baker saw the potential in this exquisite fruit, and decided to plant the pink ‘Rain Forest Pearl’ variety on their property in Pemberton, Western Australia.

The fruit thrived and, in 2011, Pemberton Finger Limes sold out their first harvest in just six glorious, zesty weeks. ‘We pick from late March to early May, so it’s a short 6‒7 week season,’ says grower and owner Jill Baker.

‘Due to the short season and increased demand, most clients now pre-order. We pick daily during the season, which ensures that the freshest fruit is delivered to clients. With chefs and the public now more aware of seasonal produce and provenance, our Pemberton finger limes have become an autumnal favourite.’

Now in their fourth season, the family business keeps on growing, with the company now deciding to venture into the export market. From 2015 Pemberton Finger Limes intends to deliver weekly to Singapore.

For the past 16 years, Jon and Jill Atkinson have been manufacturing confectionery items that were originally known as JJs Old English Toffee. Sales on the wholesale market and through mail order have soared.

JJs handmade toffees and brittles have been so well received that we have since launched our first factory and retail shop in the Great Southern, known as the Toffee Factory, Denmark.

Here, our customers are able to watch the gooey goodies being made on premises and, of course, taste all the samples. The Toffee Factory has now become known far and wide as a great tourist attraction for Denmark.

Jon and Jill began retailing gourmet menu items, such as side sauces, dressings, jams, salsas and chutneys, at their last restaurant, the Observatory, in Denmark.

These lines and more are also produced and sold from the new location, marketed as A Bit on the Side sauces and preservatives.

A Bit on the Side sauces, as well as The Toffee Factory confectionery, are sold throughout Australia and have also been exported to Hong Kong.

Jon and Jill were keen to open the first cider factory in the area and the biggest news this year was the opening of the Elephants Rocks Cider Company. The factory has expanded again for production, tasting and sales.

The Great Southern Wine Producers Association represents 36 wineries from the Great Southern Region of Western Australia.

The membership comprises small boutique and family-based wine producers through to major processing wineries as well as a number of processing facilities run by small- to medium-sized companies that process their own wines as well as other producer’s wines on contract.

The wine region is a large, even by Australian standards, covering 150 km from north to south and 100 km from east to west. There are five sub-regions — Albany, Denmark, Mount Barker, Porongurup and Frankland River. Each subregion is characterised by unique geographic, geomorphic and climatic conditions that influence the grape varieties grown and the styles of wine produced.

The climate of the wine-producing area ranges from maritime to Mediterranean and produces outstanding cool climate, varietal styles of shiraz, cabernet sauvignon and merlot, with excellent pinot noir in selected areas.

Riesling, chardonnay and sauvignon blanc are the main white varieties produced. Frankland River, Mount Barker and the Porongurup produce exceptional rieslings, and excellent chardonnay is produced across the region. Beaufort River Meats (BRM) is a fully export accredited modern abattoir and meat

processing facility processing sheep, lambs, and goats. Based 3 hours south of

Perth and the port of Fremantle, BRM is situated in Western Australia’s Great
