• 1 1/2 cups cream, divided

• 1/4 cup sugar• pinch of salt• 1 1/2 tablespoon

cornstarch

• 1/2 teaspoon vanilla extract

• 1 tablespoon butter• 1 tablespoon

whipped cream, optional

1 Pour 1 1/4 cup of cream in a small saucepan on medium-low heat. Stir in the sugar and salt. Cook until mixture begins to steam, about 5 minutes.

2 Combine cornstarch and remaining 1/4 cup cream in a small bowl and whisk until well combined and smooth.

3 Add cornstarch mixture to the heated cream; cook, stirring occasionally, until mixture starts to thicken, about 5 minutes.

4 Reduce heat to low and stir for 5 minutes, until thick.

5 Remove from heat and stir in vanilla extract and butter. Continue to stir until butter has melted.

6 Pour mixture into a small ramekin or bowl. Put plastic wrap directly on the pudding to prevent formation of a skin. Refrigerate until chilled, at least 20 minutes.

Vanilla Pudding For One

Rich, creamy easy recipe for Homemade Vanilla Pudding For One, a wonderful dessert that takes minutes to make. This

pudding will take your taste buds by surprise! It’s thick, luscious and over-the-top delicious!

1 Preheat oven to 350 degrees F.2 Lightly butter baking dish and dust with sugar,

tapping out any excess.3 Combine chocolate chips, butter and oil in a

heatproof bowl. Set over a saucepan of simmering water and heat, stirring often, until chocolate is melted and the mixture is smooth. Remove the bowl from saucepan and set aside to cool.

4 In a small bowl, whisk together 1 large egg, cocoa powder, vanilla and salt. Gradually whisk into melted chocolate. Set aside.

5 In another small bowl beat the egg white and 2 tablespoons of the sugar together until stiff peaks form.

6 Fold egg whites into chocolate mixture. Pour batter into prepared pan and sprinkle top with 1/2 teaspoon sugar.

7 Bake for 25 to 30 minutes. Cake will begin to crack on top.

8 Transfer baking dish to a wire rack to cool completely.

A decadent, gluten-free Flourless Chocolate Cake For One! Rich and delicious, this “recipe for one” will

surely satisfy a chocolate craving.

1 Place the 2 sheets of graham crackers (or 5 cream filled cookies) in a zip-topped bag and roll with a rolling pin or heavy can to crush.

2 Pour crumbs into a small bowl and stir in melted butter.

3 Spoon crumbs into dessert dish and press down with the back of a spoon. Set aside. *(See notes)

4 In a separate bowl, mix together the cream cheese, sugar, lemon juice and lemon zest. Set aside.

5 Pour the heavy cream into another small bowl and whisk until stiff peaks form, about 4 minutes.

6 Fold the whipped cream into the cream cheese mixture.

7 Spoon over the cookie crust and refrigerate for at least 20 minutes.

Recipe NotesIf you are using a mini pie pan and wish to bake the crust, press butter-moistened crumbs into pie pan and bake in a 350 degree oven for 8 minutes. Remove and let cool. When cooled, spoon in the lemon cheesecake mousse filling and refrigerate for 20 minutes.

Lemon Cheesecake Mousse For One

Light and creamy Lemon Cheesecake Mousse For One, an easy no-bake dessert “recipe for one” with the

perfect balance of tart and sweet.

• 2 large sheets of graham crackers (or use 5 lemon cream filled cookies such as Lemon Oreos)

• 1 tablespoon butter , melted

• 2 ounces cream cheese

, softened• 3 tablespoons sugar• 1 tablespoon lemon

juice• 1/2 teaspoon lemon

zest• 4 ounces heavy cream

1 Preheat the oven to 350 degrees F and line a mini baking sheet with parchment paper or silpat. Set aside.

2 In the bowl of an electric mixer, beat egg white until foamy.

3 Add the cream of tartar and beat until fluffy.4 Add the sugar very slowly, about 1 tablespoon at a

time while still beating.5 Add the vanilla extract and continue beating until

the meringue is shiny.6 Meringues may be dropped by the tablespoonful

onto the lined baking sheets or piped onto the sheets using a pastry bag, leaving a 1-inch space between each cookie.

7 Place the baking sheet in the preheated oven and turn the oven off.

8 Leave the cookies undisturbed in the oven for 2 hours.

• 1/2 tablespoon cornstarch• 1/8 teaspoon salt• 3/4 cup whole milk• 1 egg yolk• 1 tablespoon butter

• 1/4 cup brown sugar• 1/4 cup heavy cream• 1/8 teaspoon vanilla extract• whipped cream , optional

1 Whisk the cornstarch with the salt in a small bowl. Slowly add the milk and whisk until the mixture is smooth. Make sure there are no lumps.

2 Whisk in the egg yolk and set the bowl aside.3 Melt the butter in a deep saucepan set over medium-high

heat. When the butter has melted, whisk in the brown sugar.4 The brown sugar will look grainy at first, but whisk vigorously

until the brown sugar completely melts and becomes a liquid.5 Remove the pan from the heat.6 Slowly whisk in the cream. (The sugar and cream will steam

but continue to whisk. The sugar will clump together, this is normal). Return the pan to the stove, reduce the heat to low and continue to whisk until the sugar has melted and is smooth.

7 Very slowly add most of the hot butterscotch liquid to the bowl with the cornstarch and milk and whisk. (You want to add the hot butterscotch slowly because you don't want the heat from the butterscotch to "cook" the eggs.)

8 Return the tempered cornstarch slurry to the pan and cook. Raise the heat to medium-high and whisk vigorously until it comes to a boil.

9 Continue whisking and cooking for an additional 2 minutes. Remove the pan from the heat and whisk in the vanilla.

10 Carefully spoon into a bowl or a glass and chill for at least an hour.

11 Top with whipped cream, if desired.

1 Place the butter and the marshmallows in a microwave safe bowl. Microwave for 30 seconds. Remove bowl from microwave.

2 Stir in the crispy rice cereal.3 Transfer to small lightly buttered dish.

Gently press down with the back of a spoon. Cool before eating.

• 1/8 teaspoon salt• 1/8 teaspoon baking

powder• pinch of granulated

sugar for topping

1 Preheat oven to 350 degrees F.2 In a small bowl, mix together the brown sugar and

the egg yolk with a fork.3 Add the peanut butter and mix well.4 Add the flour, salt and baking powder and stir until

ingredients are well incorporated.5 Pour into a greased ramekin.6 Sprinkle a pinch of sugar over top of cookie.7 Bake for 8 minutes

need to make this simple dessert recipe.

Deep Dish Peanut Butter Cookie

1 Preheat oven to 375 degrees F.2 Toss the blueberries with the sugar, flour, lemon

juice and salt. Transfer the berries to a small baking dish.

3 In a small bowl, stir together the flour, oats, brown sugar and vanilla. Blend in the butter using a fork and mix until well combined.

4 Scatter the topping over the berries.5 Bake the blueberry crumble until the filling is

powder• 1/8 teaspoon salt• 1/4 cup nuts, chopped

1 Preheat oven to 350 degrees F. Grease an 8 x 5 baking pan.

2 Combine sugar and butter in a large bowl.3 Stir in water, vanilla and egg.4 Combine flour, cocoa powder, baking powder and

salt in a small bowl and stir into butter/sugar mixture.

5 Stir in nuts.6 Pour into prepared baking pan and bake for 20-25

minutes.

Brownies For One

1 Line a small baking dish with aluminium foil, extending foil over edges of pan. Butter or spray with oil spray.

2 Combine chocolate chips and sweetened condensed milk in a medium, microwave-safe bowl. Microwave 30 seconds.

3 Remove bowl from microwave and stir until chocolate chips are completely melted.

4 Stir in chopped walnuts and vanilla.5 Spread into prepared pan. Cover;

refrigerate 1-1 1/2 hours or until firm.6 Lift fudge from pan using foil ends; cut into

squares.
