A very close category this year but it was Teeling’s New Revival IV that triumphed! With the continual growth and renaissance of Irish whiskey, it seemed fitting that Teeling’s Revival should win. An outstanding winner nonetheless! The ex-Muscat barrels used to finish this Revival have added some citrus and floral notes, as well as a ripe fruits and spice towards the finish.

The Celtic Whiskey Bar’s very own Cill Airne Cask PX came out on top for the Best Irish Single Cask. This whiskey is bottled exclusively at the Celtic Whiskey Bar & Larder and has been finished in a Pedro Ximenez Sherry cask for one year. Very limited, only 70 bottles.

Part of this cask was then re-casked in a 50 litre Vin Santo Caratelli from Altesino for over 2 years. Altesino is one of the finest wineries in Italy.

Nose: Dried grapes, tropical fruits, white chocolate, beeswax, fresh apples and lanolin.Taste: Fresh & lively with tart, tropical fruit flavours, white chocolate, honey, wax, grapes, apples & melon. Finish: Juicy and fruity with great length and complexity.

Casked on: 8th December 1991 Bottled on: 18th September 2017Celtic Cask Fiche was double distilled & first matured in a 2nd fill bourbon cask for 23 years. Part of this cask was then re-casked in a specially commissioned 53 litre Oloroso sherry cask for over 2 years. Nose: Rich sherry notes. Oloroso, salted caramel, raisins, melted butter, orange peel and milk chocolate. Taste: Evolves nicely, going from pineapple, lemon and orchard fruits to cereal, salty and savoury flavours. Nose: Nicely balanced with spiced fruits, exotic wood notes, vanilla, ginger and chocolate.Taste: Soft & juicy with a smooth oakiness. Flavours of caramel toffees, apples, fruit bread, & white grapes. Finish: Exotic spices with dried fruits and roasted nuts.

Casked on: 10th July 2001 Bottled on: 18th September 2017Celtic Cask Fiche a Dó was double distilled & first matured in a 1st fill bourbon cask for 14 years. It was then re-casked in a red Burgundy cask from Domaine Mongeard-Mugneret for over 2 years. Domaine Mongea- Mugneret is one of France’s best estates.

Nose: A nice combination of toasty oak, salted caramel, malted barley, orange peel and red cherries.Taste: Juicy, oaky & well-balanced. Flavours of malted grains, ginger, vanilla, orange peel, cola & pineapple. Finish: Richly oaky and textured. Very good length with a nice mix of fruit and spice.

This is the second release in the Steamship Collection and has been fully matured in Ruby Port Casks. Prior to the whiskey maturation, each barrel was previously seasoned with the Ruby Port for 3 years, giving the whiskey some lovely red berry and chocolate flavours.

This is the second single malt cask strength to be released from Dingle and has also been matured in Pedro Ximenez, Oloroso and Bourbon casks. This triple distilled whiskey is expected to fly off our shelves this year as the last release was highly sought after.

From Great Northern Distillery, these are effectively the second round of releases albeit from existing stock from another distillery. It will be a year or two before we get to try a whiskey made at GND but fortunately they have good stocks of mature whiskey for us to enjoy in the meantime. These releases tick all the boxes for us: single casks, fifteen years old and are all bottled at natural cask strength.

A truly superb Bushmills sin-gle malt and the first release in the Bushmills Steamship range. This was initially intended for Travel Retail only, and has been exclusively matured in sherry casks. Very rich and complex, with notes of toffee, bitter chocolate and a sweet nuttiness.

Created by the marriage of meticulously selected casks, both Sherry (Pedro Ximenez and Oloroso) and Bourbon, this single malt Irish whiskey is a small piece of history, unique and rare. Delicate, dry, with citrus and subtle vanilla notes, it dances across the palate and finishes, long and slow, with elegant complexity.

This style is unique to Ireland and at one time most of Dublin’s famous whiskeys were Single Pot Stills. Redbreast, Midleton and Powers are some of the favourites!

Midleton Distillery

This whiskey has some fantastic robust pot still spices and cracked black pepper on the nose, which give way to soft vanilla balanced with charred oak. On the palate sweet cinnamon and clove with black pepper precede succulent crisp green apple for unique taste complexity bound with

American wood tones.

This whiskey has a lovely mix of wood, spice and dried fruit. Aromas and flavours of sultanas, singed oak, leather, dry spices, wood smoke, exotic fruits, dates and walnuts can be expected. A nuttier finish including walnuts and roasted hazelnuts which leads to some citrus peel notes.

This whiskey can be described as Christmas cake in a bottle because of it’s very pronounced sherry notes. Almost rum-like with aromas and flavours of banana fritters, rum baba, hot cross buns, marzipan, dates, pepper sauce and mesquite.

An amazing single cask, single pot still Midleton that has been entirely aged in a first fill Sherry Butt. This is packed to the brim with rich fruit cake, spice and dried fruit flavours. We feel incredibly fortunate to have sourced such a special whiskey, it will surely sell out very quickly!A great mix of hamonious fruits and nuts. Some light ester notes, boiled sweets, ripe banana, pineapple, apple pie, caramel toffees and marmalade. Super-sweet and mouth filling. Flavours of apricot jam, Christmas cake, rum and raisin, wood smoke, cinnamon and dark chocolate.

Dair Ghaelach simply means Irish oak. This whiskey has been matured in barrels made from virgin Irish oak grown in the Bluebell Forest on Castle Blunden Estate, Co. Kilkenny. The oak imparts this special whiskey with the true and unique flavour of Ireland.

The pot still content in Yellow Spot is medium weight, similar to Green Spot but aged for at least 12 years. Interestingly it is drawn from three types of casks; Ex-Bourbon, Sherry & some Malaga casks that previously held Pedro Ximenez wine. Lots of body and hints of tropical fruits can be expected.

This new release from Glendalough uses virgin Japanese Mizunara oak and the quality is outstanding. The use of these casks has created a mouth-feel that is velvety smooth. Vanilla, sandlewood and coconut are more pronounced with every taste.

This single cask has been matured in an Oloroso Sherry cask then additionally finished in red wine casks previously used for Rioja. The home of the vineyard is none other than Bodegas Faustino, renowned Rioja winemakers. Notes of marzipan, roasted nuts and dried fruits are powerful on the nose. The palate moves on to hints of dried figs, vanilla and toffee, a delightful sweet yet spicy finish.

A new Irish whiskey that has recreated the famous old brand once made at the old Jones' Road Distillery. DWD was one of the 'Six Great' Dublin distilleries of the early 20th century and was highly regarded for making superior quality whiskey. Sadly, like the other five it closed down when times got hard and never reopened. This blended whiskey is comprised of five to ten year old whiskeys and mostly aged in first-fill Bourbon casks.

Previous winner of the Best Irish Single Malt Whiskey (12 Years Old and Under) in 2016. A famous old brand that has been resurected by the Echlinville Distillery. This single malt was finished at their new site in specially sourced Pedro Ximenez Sherry barrels. Again, the barrels used here seem to have made all the difference and created a rich but well balanced single malt.

Produced by the Boann Distillery, the 7 year old ‘The Blue Note’ is the core expression of the Whistler range. All finished in quality Oloroso Sherry casks giving notes of dried fruits, dates, salted caramel and mocha.

The Ryan family has run the Beggars Bush Pub on Haddington Road Dublin since 1913. The selection and expert finishing of Jack Ryan 12 Year Old Single Malt Irish Whiskey, matured in ex-bourbon casks, has resulted in a distinctive malt. Flavours of fresh pineapple, lemon, oranges, marmalade and ginger snap with a malty and biscuity finish.

The fourth edition of Teeling Revival has used some ex-Muscat barrels for a finishing period of around 12 months. Limited to 10,000 bottles. The barrels have added some citrus and floral notes, as well as a ripe fruits and spice towards the finish.

The second edition of Teeling’s popular Brabazon Series. This time maturation is done in port casks and it is bottled at a satisfying 49.5%. We love the fruitiness of this second bottling.

A Celtic Whiskey Shop exclusive. This 28 year old was aged entirely aged in a single Rum barrel numbered #7128. It was distilled in 1989 and was bottled at natural cask strength of 50.1%. Silky and mouth-filling with some juicy, refreshing fruitiness. Flavours of lemon, lime, orange, malted grains, and vanilla. Great length with some honey and apple flavours persisting to the end.

Aged to perfection in both Bourbon and Sherry casks, this is smooth yet rich with great complexity.

With two distilleries and a heritage going back to 1757 the Kilbeggan Distillery Company could certainly claim to be one of Ireland’s great distilleries. Most of their whiskeys come from their distillery at Cooley but we should soon also see more from the small craft distillery in Kilbeggan.

Walsh Distillery

The Walsh family completed the building of their new distillery in Carlow in 2016 and are setting aside spirit for future whiskey releases. Writers Tears and the Irishman are hugely popular brands and this year saw a very well-received addition to the range in the form of the Irishman Marsala Cask Finish.

Scotland’s oldest independently owned distillery which is owned today by the 5th generation of the Mitchell family. Unlike any other distillery in Scotland, the entire process is carried out on site, ensuring the highest quality control for their single malts and the Springbank 18 year old is no exception. A rich, resinous and full-bodied flavour can be expected with lots of fruity, piney and briney undertones.

A strong whisky, not just because it’s bottled at 100 proof , but it is smokier than expected with a respectable and warming amount of peat coming through on both the nose and the palate. There are also plenty of sherry cask notes, which add a balancing sweet and fruity touch. We like this one a lot.

Blended from old single malts, many of which are from the Islands of Scotland. This is a fantastic whisky with components that have been partly matured in sherry casks, adding even more depth and richness. Some subtle peat smoke adds a touch of complexity.

Glengoyne has none of the peat smoke normally associated with the Scottish Highlands, instead their focus is on complex fruit and malt characteristics. This is a delicious 12 year old single malt that has flavours of juicy raisins, lemon zest, coconut and gingerbread.

Benromach is the smallest distillery in Speyside and was reborn in the late 1990’s after being closed and partly dismantled in the early 1980’s. This is a mind blowing 10 year old with way more flavour than you would normally expect.

Túath is the old Irish for people, tribe or nation as in Tuatha Dé Danann (“People of the godess Danu”, a supernatural race in Irish mythology). The Túath glass was created specifically for the enjoyment of Irish whiskey, a lot of thought, care and time has gone in to creating the Túath glass.

AppearanceThe Túath glass is larger, taller and has a wider opening than the norm. This offers the advantage of the whiskey having a greater area to swirl around in which give the aromas a better chance of being released. The slightly bigger opening also facilitates easier nosing.

FeelThis is where the Túath really comes into its own. The base is specially designed to be held between the thumb, forefinger and middle finger with the first two digits on the top and the middle finger resting under the base. As soon you pick it up, it feels very natural. The best thing about this design is that the glass feels very secure and it encourages the user to swirl the glass and release aromas. The pyramid-like angles of the stem where inspired by the island of Skellig Michael.

NosingThis glass is a pure joy to nose whiskey with. The flared rim tends to help soften the hot alcohol notes. This combined with the taller glass bowl reduces the chances of any burning sensations but really brings out fruit and ester aromas.

TastingThe most important part! This is where the flared rim reveals its other advantage by delivering the liquid straight onto the centre of the tongue. This means that you get the full taste of the whiskey and it is distributed evenly to all the areas of the tongue. A surprising bonus to this was that unlike other tasting glasses there is no need to tip your head back for a sip.

A fantastic straight Rye that you can drink straight, with a little ice or in classic Rye based cocktails such as a Manhattan. Knob Creek Rye is made in small batches, patiently aged in the deepest charred barrels and bottled at a full 100 proof to maintain big flavour. Only instead of corn as the master grain, it's rye.

First released in 1984, this is the Original Single Barrel Bourbon. This reserve was made using the same methods as the private bottling for Colonel Albert B Blanton, almost one hundred years ago. It undoubtedly sets the standard for single barrel Bourbons.

LBV is a very popular style of Port that was created by Noval in 1958. Grapes were sourced from vines up to 60 years in age and the wine was aged in French oak before being released. Noval’s “baby vintage”. Treated exactly like a Vintage Port with only noble grape varieties from the Quinta, trodden by foot and unfiltered. It is aged for four, sometimes five years in oak instead of the two years typical of Vintage Ports. An LBV with a difference.

An exception Oloroso from Montilla with an estimated average age of 30 years. This showcases the Pedro Ximenez in a wonderful dry form of Oloroso. The plumpness and body from this grape variety results in a rich and mouth-filling wine with great complexity.

This is a very fine sweet sherry from Emilio Hidalgo. Classic Pedro Ximenez with lots of residual sugar, an almost black colour and rich flavours of figs, dates, chocolate, mocha and treacle.

La Bota de Palo Cortado, Sanlucar No.75 75cl / 18% –The delightful Palo Cortado has been selected from youthful wines entirely aged in the town of Sanlucar which is more famously known for Manzanilla sherries. It shares many characteristics with a Manzanilla but is a little more oxidised in nature and has an incredibly long finish. Great when paired with sushi or Asian fusion dishes.

Made entirely from Pedro Ximenez grapes which are vinified and initially aged under flor (yeast) for around 10 years before oxidative ageing for a further 15 years. Off-dry with good acidity.
