❖ A dried exudation produced by two types of acacia trees:
o Acacia senegal
o Acacia seyalJoint FAO-WHO Expert Committee
on Food Additives (JECFA)
❖ Oozes from trees as a sticky liquid
❖ After drying in the sun, forms glassy nodules
❖ Ultimately processed into powder
