Thanks for Being Our Customer ! Ordering Our office is open from 8:00 am to 5:00 pm Monday through Friday. You may place your orders by phone or fax, 24 hours a day. You may also email us at [email protected]. Orders placed by 3:00 pm will be delivered the next day. We have a $100 minimum. A fuel surcharge of $7.00 will be added to delivered orders that are under the minimum amount. We can do Sat-urday deliveries with 24 hours notice. Outstate Customers For our outstate Minnesota and Wisconsin customers we use UPS and SPEE DEE Delivery. Prices are F.O.B. our warehouse. We also have drop ship programs available with our vendor partners. Order Integrity Mirabella Specialty Foods guarantees the quality of our products. Please examine your order when it arrives for quality. Returns and Credits Requests to return an item must be made within 48 hours of receipt of product. Please call us immediately if there is an issue with the quality of an item you’ve ordered. Payment Terms All new accounts are C.O.D. until we receive and approve a credit application; after which credit terms are NET 14 days. We accept Mastercard and Visa as well. Special Orders We have vast vendor resources and can find special products for you, in addition to our regu-larly stocked inventory. Please allow at least one week lead time. Unless there is an issue with quality, returns are not accepted on special order items. Call for Samples Samples are available upon request. The best idea since whipped cream. Fond Royal is two great things in one package. A special gelatin based stabilizing agent for cold preparation combined with sweetening and flavor. This all inclusive cream preparation lets you create great recipes from whipped cream as easy as one-two-three. The sweetening is all natural and well balanced for whipped cream, the flavors contain no artificial agents.
Ingredients: Dextrose, Glucose Syrup, Sugar, Gelatin, Natural Flavor Usage: 7 oz (200 grams) Fond Royal; 8.5 ounces (250 ml) water; 35 oz (1000 grams) whipped cream; add flavor paste recommended dosage - see following 3 pages.

A gelatin like product made from algae and red seaweeds. It is proc-essed by cooking and pressing the algae, freeze drying the residue into bars, and then grinding into powder. It has stronger setting properties than
gelatin.

A salt that results from the action of lactic acid on calcium carbonate. Commonly added to fresh cut fruits to keep them firm and prolong shelf life. Can also be used to set
Sodium Alginate “caviar”. Often preferred over calcium chloride because it is
not as bitter.
A carbohydrate naturally occurring in seaweed. Alginates are soluble in both cold and hot water. In the pres-ence of calcium they can form resil-ient gels. Used as a thickener in fill-
ings glazes and ice creams.
Similar to Ultratex 3 but reacts better to acidic solutions. Less is re-
quired and it produces a thinner liquid finished product. Can be dehydrated to
produce a thinner film as well.
Used to inhibit the improper growth of sugar crystals.
Antioxidant naturally found in citrus fruits
Made from soy protein. Used to replace egg albumen or gelatin. Produces a
stable foam especially when used with Xanthan Gum.
Modified food starch derived from tapioca. Cold water swelling without the use of heat. Bland flavor with
good mouth feel. Used for thickening and also great for films.
96 droppers with tubing and syringe. Used to make fruit “caviar” with
Sodium Alginate solutions. Directions included, Sodium Alginate and Cal-

A gelling agent derived from red algae. This carageenan forms a firm brittle gel. Due to its
quick setting time, it is great for coating items in a thin, translucent layer. Usage: 1 gram per 100 grams liquid. Mix with cold
liquid and bring to a boil to dissolve.
